Banana Chiffon Cake 香蕉戚风蛋糕

Ingredients:
50ml milk (牛奶水)
50g corn oil(玉米油)
150g banana paste (香蕉泥)
40g caster sugar (细砂糖)
120g plain flour(普通面粉或低筋面粉)
1/4 tsp salt (盐)
5 egg yolks (蛋黄)
5 egg whites (蛋白)
1 tsp lemon juice (柠檬汁)
80g g sugar (细砂糖)
22cm (9”) chiffon cake pan
22cm (9寸)戚风烤模,
以130°C烤45分钟,再改160°C 烤15分钟
或以150°C烤45分钟,再改180°C 烤10分钟
Bake in a preheated oven at 130°C for 45 minuets. Then bake at 160°C for 15 minuets.
or bake in a preheated oven at 150°C for 45 minuets. Then bake at 180°C for 10 minuets.

Thank you so much for the recipe! Here's a note for myself :
1. seperate 5 eggs
2. 50ml milk mix with 50g corn oil
3. add banana paste to 2
4. sieve 1 cup of flour to 3
5. add egg yolk to 4
6. whisk egg white
7. add 1tsp lemon juice/vinegar at first stage whisking
8. whisk to stiff peak
9. fold 5 into 8 (preheat oven)
10. into the oven (check description)

May I know,teacher, y firstly bake for 45 mins, then later 15 mins? How does this help in d cake. Some teachers will bake straight with no changing temperature n timing. What's d purpose for your method.tq

40 g corn oil 2.94 Tablespoons
70 g cake flour 1/2 cup
1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
140 g egg whites 3 med. eggs
1/16 tsp cream of tartar
50 g castor sugar 3.56 tablespoons (tbsp / caster sugar)
15 g. caster sugar = 1 tbsp. and a bit ( 1.17)

Why does your cake doesnt crack even if you didnt water bath it? I also baked it in low temp still it cracked. :( If i water bath how many mins should i bake it?
