I tried this recipe, but change the banana to mango. Once done, I did toothpick test and it came out clean, and flip it to cool down. However, after cooled down, it sink and little wet inside when cut. What could go wrong? Maybe the mango puree not room temperature? or white egg overbeaten? How long to reach firm peak?

Apron thanks! I just tried making it. It rose beautifully in the oven, but once i took it out it just shrank down. I’ve put it upside down straight away just like yours. What should I do next time to avoid this problem?

Hi, chiffon cake no need greasing the inner pan,will affect the cake rises. When the cake is baked taken out immediately and cool the cake upside down
