Banana Cotton Sponge Cake 香蕉棉花蛋糕

    Ingredients :
    6 egg yolks (蛋黄)
    70ml (1/4 cup) corn oil(玉米油)
    50ml milk (鲜奶)
    160g banana paste (香蕉泥)
    110g (3/4 cup) plain flour(普通面粉)
    6 egg whites (蛋白)
    1/4 tsp salt (盐)
    1tsp lemon juice (柠檬汁)
    75g (1/3 cup) caster sugar (细砂糖)

    I made this today, it was sooo good! Really light and soft, like a Japanese cheesecake!
    Here are some tips and things you may find helpful:
    • I was kind of sceptical of how it would turn out, mainly because when I had made the oil flour paste, it turned into a dough like a choux pastry. I then added the milk and banana and it was still very dough like. However, when I added the egg yolks, it came into a paste just like the video!
    • Don’t overwhip your egg whites, this is one thing I have learned whilst making these cotton style cakes. Making them too stiff can result in it being too hard to incorporate into the egg yolk mixture, resulting in over mixing the batter.
    • This was my very first time using the water bath method! And it went pretty well... I used room temperature water and filled it to about half way. I didn’t have two square tins, so I just put the one tin with the cake batter in, which I don’t think made a big difference. If you have a lose bottom cake tin, you definitely want to put it inside a bigger tin though as the water can leak through.
    I definitely recommend you make this cake, it is so soft and fluffy and a change from normal banana cakes!

    Thanks for the recipe. Baked this days ago and turned out just perfect! It was cotton soft and spongy, highly recommended this to your cake baking list! Love this especially no baking powder or baking soda needed in the recipe.

    我做了几次,因为温度不一样,所以不停尝试可是几次到最后里面还有点湿,每次都要离开水再烤,如果说不用水浴法直接烤,行吗?或者说里面原来就是会有点湿的,是我以为它像其他蛋糕里面会是干的,就一直加时间再烤。

    This recipe is god sent!!! I made it yesterday and it was the best cake i've tasted. Delicate, soft, with the right balance of banana flavour.     This recipe is the best. It yields soft and fluffy cake with the artificial taste of baking soda. I had tried baking with this recipe 3 times... every time with great success.

    Hi, is there a gram measurement for the oil and milk? There seems to be 2 different measuring cups for liquid and for flour. Do you use the same measuring cup to measure the liquid in cups and to measure the flour in cups?

    Hello Katherine. Sad to say that the cake i made today turned out to be a disaster!!! The cake has risen slightly in the center and it was so moist and soft. Hardly can cut into shape. I already followed step by step carefully as in your vid but somehow the final batter's consistency was quite soft compared to yours. I used a non stick baking tin and pre heated the oven. Where do u think i went wrong??? Tq...

    Hello, I used a 7 inches round pan. And set for 150c and 80mins. But till 45mins the top of the cake already cracked! Can u pls let me know why? And what did I make wrong? Also the cake not raised really high, but not bad. Can u pls let me know what should I do to make the cake raise higher too?

    Hi...i followed all the instructions but the value is not cooked even i cooked 1h40min..then i take d cake out frm waterbath n cook..still need around 20min to cook...may i know what might gone wrong ya?

      Hot oil scald the flour so that it absorbs more moisture. Your cake will taste softer and more moist

      To let the cake texture more soft. That’s why when u see the oil after heated right away add in the flour
