Hi, is pastry flour same with cake flour? Can it be substitute with all purpose flour? And is it alright if I just use normal smasher to manually smash the banana instead of using blender?

Castella cake use water bath to bake, the meringue is soft peaks, Chiffon cake don't need to use water bath to bake, the meringue is stiff peaks. I think you beat the meringue over time(over stiff peaks), so the bottom like pudding, right? Next time when you make it , you need to check the meringue like my meringue and the meringue must be smooth and delicate. If it is rough and not shiny, it is inflated too much. Thanks! 🙏❤️👍

這些蛋糕都是靠蛋白打發來起到膨脹效果的,如果沒有蛋白,只能加泡打粉和蘇打粉,蛋糕才能發起來,那變成了磅蛋糕了,口感就完全不同了。如果你要做沒蛋白的蛋糕,可以參考我的視頻“胡蘿蔔蛋糕”,把裏面的鷄蛋去掉也可以。謝謝您!🙏❤️👍

What’s the difference between chiffon cake and Costella cake? My chiffon cake always shrinks and dense at the bottom, any clue why?
