    Went out with my buddy Adam from ‪@MovinWeightFishing‬ in search of fall fish species down here in South Florida. We ran the beach, looking for mackerel, bluefish, pompano, jacks and ladyfish. Ladyfish are often regarded as a trash fish, but in this catch clean cook, I show you how to turn this fish into a delicious meal. Ladyfish just need a little more preparation than other traditional fish, but the end result is amazing. Flounder is a fairly expensive fish at the market which can usually go anywhere from $10-$30 per pound. Mackerel, ladyfish, blue runners and jack crevalle range anywhere from $.25 to $4 per pound on average.

      I am Chinese Jamaican and my mother would use ice water on her hands so she could handle lady fish meat so it wouldn't stick to her hands. Just one more trick in your arsenal.

    Come to Hawaii, trust we know how to make “trash” fish taste bomb af. Even the big jacks,gt’s aka “uluas” the big 100+ pounders we typically smoke. As for the ladyfish (awa awa) we scrape the meat with a spoon like we do oio (bonefish) & make fish patties. Try search up “life of a shore caster” even Penn made a Hawaii edition video

      this is so true. I spearfish in Hawaii and have been noticing some of the best tasting fish here are known as trash fish on the mainland. as a result, I'm starting a trash fish catch and cook series on my RUclips channel to prove that only trash cooks make trash fish. any fish taste good if you know how to cook it. papio's are so good

    In hawaii, with bony fish, we freeze it, then cut off the tail. Then we use a rolling pin to toothpaste the meat out the tail opening. Then, fish cakes :)

    I've yet to find a good pair of gloves that I like, but I will definitely give those a try. Also, thanks for doing a lady fish tutorial, for years I have been telling my family we can eat these, perhaps you're video might convince them. Great video, tight lines and God bless 🙌

    You have a great way of looking at fish and their value as food, I really like your saying no trash fish just bad cooks. Spanish mackerel and king mackerel for that matter is some of my favorite fish. I made a fantastic fish soup with some king mackerel a few years back and great fish tacos with the same fish and I had always heard the only thing you can do with a king fish is smoke it. Anyways great vid and great cooking.

    "I'll ask her" you get it, right? Thanks for turning me onto these gloves. I've been looking for something like this for,,, since '94 and here they are. Took a trip up to kenai peninsula and that was a boy's dream. 2 hours twilight, 1 hour dark, 2 hours twilight, and GAME ON! Always rained at exactly 4 o'clock, so at 3 we'd set up for it. Great people. If I were me, I'd get married on a boat in front of some orcas jumping around behind and film it!! Ask a native First Nations Shaman to conduct the ceremony. This would be epic, but I do understand you're in Florida so maybe local and Seminol? Do your thing, I'll keep watching. It would def be "COOLER" in Alaska this time of year that's for sure.

    There are only a handful that I trust to catch, clean and cook the right way and Vic you sure check all the boxes at the top level. Thbaks for the video! Its great to see "under utilized" fish not just big game fish or prized sport fish.
    A little fry oil on the spoon before you make fritters slide right off. If you double spoon it..its way easier and if you wanna go famcy you can make quenelles or "footballs".

    Thank you for the information and the tutorial. Around my neck of the woods (Ohio near Lake Erie) sport fishermen seem to be the ones who apply the "trash" label to fish. For example, bowfin compete with and prey on "game fish", so the idiot locals will pull out a bowfin and leave it to rot. Yet bowfin are amazing fish to catch, and benefit from the same preparation methods. (They're not especially bony, but big filets tend to have poor texture unless you cook them straight away.)

    In Australia we have a fish called Australian Salmon (they call them Kahwai in NZ) and people turn their nose up at them... but it but if bled on capture and looked after they make amazing fish cakes. That recipe looks terrific.

    Ladyfish fishcakes is great eating! In Hawaii they prepare bonefish in a simular way to make fishcake.

    I've fish out of Boca Grande Southwest FL and after 20 years I only keep Mangrove snapper & Sail Cats. I leave the other fish for the guides.

    Ladyfish fritters (Tortas de manana) what we call in cuba i grew up eating that and snook fritters also eat lots of blue runners and cubera barracuda and mackarel

    Used to live in Homasassa ... I've eatin tarpon burgers with same spoon technique. 1974 though 😂😂 smoked mullet too.

    I love your channel. Just an fyi on the jack crevalle.. Love them fried and I had a big one 25lb cut the head and tail off and cooked it in the oven (it was the only way it would fit) just covered it in sliced onion and tomato sauce and it was excellent.

    I really like the no trash fish, only trash cooks idea but I can't go as far as a ladyfish. I tried. I went with your technique, and it did work cleaning the fish. However, it was basically inedible in fish cakes. I made it for my family and we ended up ordering pizza. Maybe I did something wrong but it was as fresh as fresh gets and it looked and smelled fine. Unfortunately, it tasted like a combination of very fishy and mud. Much respect if you can make ladyfish edible. .

      From the way they smell ......you'd have to hold a gun to my head to make me eat a ladyfish.....I've used them as bait and other fish wouldn't touch them.

      I had a friend who used to make fish cakes from lady fish a lot, I would say the most important thing is you have to season pretty heavily. Otherwise if its too much fish it can get kind funky and not so good.

    A year ago my son, like 12 year old grandson and
    I got to go on an airboat for the first time and Cedar Key a man nice took us out and he let us do some fishing because several catfish and then we my grandson caught one of those ladyfish that's why I mentioning this. The man helped us with our fishing rods cuz we weren't really fishing we didn't do much fishing in our lifetime. And the airboat ride was wonderful. For the first time he was a good driver , took this to one of those little sand dunes where there were trees and seashells awesome. By the way one of the fish that I had a my rod was so strong I gave it the fishing rod back to the man he gave it to my grandson cuz I was too scared and break his fishing pole. Nice fun time. He took us in a calm water area. Your new fan.🧛‍♀️🙂🎣❤👍✌👋

    Keep your spoon in ice water and cold and it will help it role off the spoon putting it in the grease with hush puppies. It may help with the fish balls.

    You need to try Lady Fish dumplings. Green onions, cilantro, garlic, and fresh ginger, then steamed and served with some ponzu sauce. Makes a wonderful addition to sushi and other Asian inspired fish dishes. After steaming you can the lightly fry for a crisper texture.

      Don't. Use the toothpaste method. Freeze the fish, then cut off the tail. Then get a rolling pin and you can roll the fish meat right out the tail end. Works with bonefish; we do it in Hawaii.

    If you steamed the formed fish puree rather than deep fried it we Japanese folks would call it kamaboko. Of course kamaboko seasonings would be very different but the basic concept of taking "trash" fish and/or fish carcass meat to make a puree is the same and it's delicious.

      or dry aging it. I heard dry aging fish is very underrated.

    I take mackerel and break it up in a skillet over medium heat. Stir and dry it out a bit. Add some olive oil, favorite seasonings and sauce. Keep stirring and driving off some moisture, and concentrating the flavor.
    Then mix in cooked rice for fried rice, or mix into other dishes, or on top of vegetables, or make a mackerel version of Joe's Special (recipe from Original Joe's online).

    My favorite fish cake fish. People here in Hawaii use bonefish (oio) and lady fish (awaawa). Lady fish taste cleaner than bonefish. Meat is sweeter. We eat it raw when fresh and pan fry or boil to make fish cake.

      Love me some conch fritters! Reminds me of growing up on Cape Cod and how much bomb ass food I took for granted. Do yourself a favor and look up the recipe for Rocky Point clam cakes. Like fr the ones they used to sell at Rocky Point amusement park in Rhode Island.

    My grandfather ate mud fish(bowfin) fish cakes never seen it prepared and they were good thanks for sharing. Here in Tennessee no one eats the gar and when asked I laugh. It reminds me of smoked mullet when prepared right I just don't want to spend thirty minutes cleaning one I swear my grandfather could fool you with gar lobster

    I appreciate that he said that there's no such thing as a "trash fish", just trash cooks. That's a 100% true statement. Any fish can be enjoyed if you know what you're doing.

    Lol we tried some blue runners last weekend. You hardly get a fish stick sized filet of light colored meat off a 1 pound blue and even fried crispy it tasted kinda iffy.

    I don't see why jacks get a bad rep. I have cooked them in fish soup and fried. and freah jacks are actually good to eat. However, I haven't tried a giant size jack.yet.

    I just cut the gead off and clean the guts out of a flounder fry it up in butter and serve with a squeeze of lemon... very tasty.

    In the Yucatan people eat bonefish meatballs. I haven’t seen personally but they use the spoon method tu scrub the clean meat leaving the bones. They say they are absolutely delicious. I must confess that I had tarpon empanadas (due to an accident). Not bad at all.

    In Hawaii, many people prefer jack (called "papio" when young and "ulua" when adult) to mahimahi (dorado). Ulua are FAR from trash fish, here.

    Try just slice in 2 or 3 pieces than cook in a pressure coocker with onion, tomatos, garlic and lemon juice. About 30 minuts.

    Ive caught tons of spanish and if i dont cook them the same day i freeze them and theyre still totally fine. Trash fish do exist lol theyre called whiting

    A long time ago, the common Snook was considered a trash fish in Florida. Why? Because they fried them with the skin on like they did with every other fish. They called the snook a "soapfish" because frying it like that gave it an awful soapy taste. 😝

    Flounder? Here in the pnw all I ever catch is flounder. One morning I caught 15 of them in 30 minutes. I don't think people eat them. They don't work all that well as shrimp/crab bait either. Maybe I'm not cooking them right?

    Just gonna chime in on the support of no trash fish, just trash cooks. I'm In a fresh water only part of the country and have recently decided to start testing the "common knowledge" on which fish are good and which are bad. Everyone will tell you fresh water drum (sheep head) are trash, but they're delicious.

    So at first when you were making the fritters, the wat you explained it it sounded like you were making it a batter to batter the other fish lol I'm just saying that actually sounds like a cool idea.     I have tried frying ladyfish in the past. The flesh was not bad flavor-wise, but it was mushy and unappealing. I throw them back (after I get all the slime off my line!).

    The one thing I could not get around were the white grub looking things crawling around IN the fish meat as he was filleting them, I know they are the larva of some mussel or clam but I don't want to eat seafood IN my fish thank you!!!

    Pretty sure you could but shoe fillet in the fritter and it would be good
