  • My buddy chef Yames and I went out looking for checkered pufferfish in South florida. All pufferfish species contain tetrodotoxin a potent neurotoxin found in many marine animals! You have to exercise extreme caution when cleaning this fish, or you could accidentally ingest this neurotoxin!

    I grew up at this spot on Northlake in Hollywood. Used to catch pufferfish all day every day. Really nostalgic seeing this

    Umami (the japanese word for savoury) is one of the 5 basic tastes and is characterised by the presence of glutamate.
    It is by definition certainly NOT "sweet, sour, salty, bitter, everything" those are the other 4 basic tastes and completely separate from umami.

    Two fun facts about puffers: They make great tuna bait under the kite, and there are freshwater puffers in Egypt's :are Nasser. They were trapped when the Nile was dammed to make Lake Nasser and have survived in freshwater.

    When I was a kid in the 60s, we used to catch puffers up here in Virginia. We called them the chicken of the sea. Easy to clean and great to eat.

    Walmart shrimp comes from overseas. In Texas what you did is illegal and should be in all gulf states. "Shrimp from a non-Gulf state or different country is considered imported and can not be used as bait. While not harmful to humans when eaten, imported shrimp may carry several known viruses or diseases that can be transmitted to native Gulf shrimp species (and other shellfish such as crabs and crawfish)."

    We don't have the checkered puffer up here,, we have the Atlantic brown puffer.
    They're making a strong come-back. What I mean by that is...
    In the 50s Russian trollers came over here and just about wiped them out! They sold them to restaurants which sold them on the menu as "sea squab".
    Ours can grow to a good size, a 2 or 3 pounder is not uncommon. I actually don't keep them if they are less than 7" long,,, that's usually about 4" of meat once you clean them. I also fillet them off the center bone,, that leaves you with 2 fillets of just meat that, once you dredge them in House Autry seafood breader and deep fry them, look just like chicken tenders.
    I think the taste is a cross between chicken tenders and porkchops, and you can fix them in multiple ways,,, Asian sauces (General Tso is amazing!), fish tacos, or Carribean Jerk, to name a few.
    They also freeze really well!

    I enjoy the content on both this channel and Mrs Brook's channel. I must say that I like the educational aspects of that both provide.
    I did notice that Yames has an IG, but as an aspiring to improve as a home chef, would be cool if Chef would make an educational cooking channel here on RUclips.

    I have been eating the northern puffer fish, commonly called blowfish for over 75 years, om the waters of the Great South Bay of Long Island ,NY to the inlets of Floridas east coast. An extremely easy fih to clean, 12 to 20 weconds/fish to clean . In all those 75 years I have never heard of anyone getting sick, much less dying, from eating one. Commonly sold in seafood stores as chicken of the sea ( not tuna ), because the cleaned ,skinless fish resembled a chicken leg

    I remember catching those off the back seawall of the canal we lived on c.1971 when I lived in Pompano and went to McNab Elementary (which was only a few blocks away)... The liver, gonads (ovaries and testes), intestines and skin of puffer fish typically contain the toxin. They are little piggies, the would often steal the bait out of each other's mouth and fight to be caught. Robert, Ancient Heritage Foundation

    We caught them a lot as kids in the Indian River. Never ate them because folks said don't. Didn't know about the poison aspect. I would eat them now in a NY minute.

    I think puffers/blowfish are illegal to harvest in some parts of Florida. For sure in Volusia, Brevard, Indian River, St. Lucie, and Martin Counties. ( Rule: 68B-3.007) We used to eat them growing up in Ormond Beach but like you demonstrated, you have to know how to clean them properly. They are delicious though!

    Unless I'm mistaken, you can only fish these in certain south Florida areas, which makes me sad. I've seen them at home, but was told it wouldn't be a cheap dinner by FWC.

    Wish we could safely keep these up in brevard but they are still illegal and not safe to eat! There are so many of them around here now I catch them on artificials meant for redfish and trout! Can't keep redfish anymore either and at this rate everything will be catch and release. They look really tasty but I'll have to wait till I visit another part of florida to try them.
