I'm a Missouri boy, the way you clean your saltwater cats is the same way I clean freshwater ones. It's neat to see it because apparently it's a strange way to do it around here, lol. In my experience, the off putting flavors come from the meat that touches the skin (and the bloodline, obviously). I usually trim just above the skin, leaving that little bit of meat behind. I'm not a fan of skinned catfish, but once I started doing that, I really came to appreciate them. I can't wait to try with saltwater cats next time I'm in Florida.
When I was in my teens, I brought a bucket full of these for mom to cook. She never cooked it, but used them as compost. I was so heartbroken that I never kept them again. But all that is going to change now!!!
Bro, you are one of the few guys that actually knows what to do with those hardheads! And you pointed out the most important key in trimming away the bloodline....I've done it many a times and I'll put that saltwater catfish up against any freshwater catfish and in my opinion, it's just as good if not a little bit better depending on where its caught and how its prepared. I enjoy catching, cooking, and eating those catfish despite their reputation. I'd say let's petition to have the hardhead catfish upgraded to at least good table fare provided proper preparation....i.e. bleeding and most importantly, shaving off the bloodline. Great video buddy, appreciate the helpful tips!👍👍
Here in tn there are alot of catfish being ate. I always put them in yellow mustard like you do with buttermilk, then dredge in cornmeal with 1/3 as much flour. Then they are great no fishy bloodline taste. Brookes father seems a great guy. Hes like me, he simply enjoys to eat.
Right? Lol. Only time cats ever made it to the fishouse. Was if one of us commercial guys had our nets tore up by em. N they were 5 cent a pound crab bait. And destroyed nets. Luckily in years of gill netting. Never happened to us. I'd eat palmetto bugs first hahah
You're right about the tartar sauce, stuff off the shelves often have vinegar in it, and some places that make their own use lemons juice to add a little acidity without the vinegar twinge. I personally use no acid, a very similar recipe to yours, except I add about a tablespoon of chopped up capers.
Always surprised people are shocked about how good these guys are , about one of best eats down there and that includes black fin , black grouper and African pompano
Enjoyed this video. Especially since the kids always catch these. Lol, growing up in the 70s, I don't ever remember anyone having to explain that fishing techniques were not inhumane.
Thanks for letting the native Floridians in Naples know how good the catfish are. I go down there for three weeks around Xmas and fish the beach and they all say that you can’t eat that fish. Well now you showed them there good to eat. Just don’t let them know how good big pinfish are. Thanks Christian
Thanks for posting this. Everyone around me says hardheads are a trash fish, but I could never find anything wrong with them. I took one home to eat one time and couldn't figure what everyone's problem was afterwards. Thanks for making me know that I'm not crazy.
People are lazy. Channel cat is slimy. So people think it's a trash fish like the Florida Spotted Gar. Wash them off with some soap water, skin them and you have meat. I like gar meat it's like one big loin when you get the shell off.
You guys add so many dimensions to fishing, cleaning and cooking! Thanks for yet another great idea and the sauces looked excellent, thanks for the recipes!

I'm 63 years old...and ever since I remember....my Grandma ...my Mom...Everyone, soaked catfish in buttermilk for a minimum of 30 minutes...it pulls out the muddy, fishy flavor and leaves all the yummmm. LOL we went shrimping a few weeks ago. I threw my cast net on some bait and ended up with 50ish catfish. They were so heavy it was hard to get in the boat. Buy the time we got them out of the net they were mostly dead. So we filleted them with an electric fillet knife. Had about 8 people over for a fish fry. Everyone liked the catfish. Porgy was the favorite with Lane snapper a close second. I'll be honest I grew up in Florida and have always thought the catfish were trash. Fooled me it was actually pretty good. In Oklahoma I was raised eating catfish dredged in an egg wash mixed with plain yellow mustard breaded with Louisiana lemon fish fry. It is a different flavor the mustard you dont taste but the lemon makes the catfish awesome

I’m from Louisiana and I’ve always eaten fresh water cats and I’ve heard the stories about saltwater cats not be good but I tried them and I think they’re very tasty
I had no idea there _were_ saltwater catfish! Apart from the forked tail they look just like our Bullheads here in Michigan. (Bullheads have a "square" tail.) Bullheads are considered a "rough" fish (or "junk" fish), but are actually _excellent_ eating, and quite easy to catch (particularly if you're nocturnal :) Years (and years) ago I had a friend whose parents owned an orchard (apples and cherries), and way back behind the orchard was a small farm pond (I now have two of my own!) When he was younger, he and his father stocked it with bullheads (it being too small a pond, and with only an occasional/"seasonal" creek feeding into it) to sustain anything less "robust" than bullheads). We'd go down there late at night with a pail, some worms, and a Coleman lantern, and go back with a bucket full of Bullheads. His father had put together a sort of "disassembly line" in their basement. The key component was a huge nail sticking out of a 4x4 post sticking up from floor to ceiling. We'd cut the skin around the "neck" and then hang the fish on the nail, then pull the skin off with a pliers. Then we'd cut out the vertical "prong", cut away the gut section, cut off the head, tail, and fins, and be left with meat, spine, and ribs. Before cooking, we'd cut through the ribs on one side and then "butterfly" the fish. Finally, roll in flour, and fry. The ribs would usually cook to a crisp, but if not, they were super easy to disregard when eating the fish -- just one "unitary" piece not much larger than a thumbnail and not really any thicker. The meat easily came off the spine. NO bones to pick out of your teeth -- and if you wanted to put it into a sandwich it would have taken less than thirty seconds to remove the meat from ALL of the bones (spine/ribs). The fish were absolutely delicious, and I've no idea where they got the bad rap for being something no one would _want_ to eat. The ones you fried looked about the same as Bullheads (if the Bullheads had been fileted). One thing you might want to try some time would be a good Baguette (either "store bought" or home baked -- they're really easy to make). A good Baguette will be _very_ "airy" inside -- very big bubbles, NOT a firm/solid loaf -- and the crust will be _very_ crisp. Instead of slicking open, I'd suggest using a fork, just as is done with an English muffin. Then, butter both sides, and put the fried fish into it. (Even just buttered _without_ fish they're amazing!) Use any condiments you prefer (I'm partial to cocktail sauce, usually just made ad hoc from ketchup and horse radish), but even with nothing more than a buttered Baguette and crisp fried fish you will have people asking for seconds (and thirds!)

I've caught a lot of those hard heads before, but have never eaten them before. Do they taste similar to the freshwater variety? I'm definitely going to have to try it now. They really did look delicious. Thanks for the upload Vic.
They look almost identical to the freshwater Bullheads we catch in Michigan, apart from the shape of the tail (square, rather than forked like the ones in the ocean). They looked pretty much the same inside as well as outside, and when cooked, could have easily passed for Bullheads. Bullheads are delicious, BTW, but, since they're considered a "rough" fish there are no size or bag limits.
Raised on Mississippi channel cat, and to me there is nothing better to eat. You did a good job of preparing the fillets for cooking, it is the way we do ours. One important tip I've noticed while fishing southern Florida canals for those is to decrease your drag almost to the point of losing your spool, if you're using a spinning reel. The less resistance they feel, the better. FISH ON!!
I know this is an old vid but if you get this message it was a great video. I've caught tons of freshwater catfish but am coming to the florida coast and this time I'll keep some of those catfish and cook them up. Then I use that skin for bait and catch more catfish. tight lines.

No kidding! The common carp! I have watched a bunch of guys from Russia keeping a ton of carp before and they told me where they came from carp are delicacies! They said we Americans are stupid because we don’t even know what’s good eatin’!
@@LandsharkOutdoors you gotta do carp. They are so plentiful all over the southeast and Texas, I've never even heard of anyone eating it!
I see the effort in making those fish fillets and fish dinner. It was awesome sharing them with family members. I’d love to do this with my family
There actually a better way to clean catfish first u chop there head of cut down the middle of its stomach and take out the guts and then all u have to do is peal of the skin
Best to skin them with the head on
Now I want catfish. I grew up in west Texas and caught them as a kid. You made all the right moves preparing them. Over the top Victor and Brooke👍
Thank you Terry!!

Hello Victor I'm a big supporter of you and Brooks youtube channel and you guys are awesome with the clean catch and cook, everytime you cook something I wined up drooling. Keep up the good job and God bless you both!
When are you going to do a collaboration with deer meat for dinner??
I think it would be great to see both of your channels together.
Really like the videos with the families, especially Mr. Crist.
Tell me you guys heard that at 4:31
This is the first episode I've ever seen of this channel and all I can say is WOW! That looked so delicious my mouth started watering. And to have a catch and cook with family is priceless. I liked everything about this video. I'm so glad it popped up in my feed. Subscribed!
I'd love to see a ladyfish or a lizardfish catch and cook
I've got a friend with a wife from the Philippines and lady fish are really commonly used to make SE Asian Fish balls/ Cakes. I haven't tried it yet, but it looks amazing.
I already have the recipe in my head, just waiting on the ladyfish!
@@LandsharkOutdoors hop just south of the south jetty in stuart. was catching 5+lb bluefish and 3-4 lb ladyfish at the same time throwing a clarke spoon. Could throw a goofy jig and teaser and pick up a bonus pomp.
@@LandsharkOutdoors I second the Fish cakes. My wife is Thai and we live over in Bradenton when the Ladies are thick we make Fish Cakes
Lizardfish is delicious! Caught a pretty big one last year and the captain recommended it, was not disappointed.
I like fishing and I watch all the fishing channels victor is the best cook 👩🍳 by far he doesn’t even make a mess!! Brook is the bomb 💣 keep it up 👍.
Catfish are not venomous people say that they hurt so bad I’ve been spine so many times it is not that bad
yeah he's fos, not venomous at all, but can be like needles, still hurts
One important tip I've noticed while fishing southern Florida canals for those is to decrease your drag almost to the point of losing your spool, if you're using a spinning reel. The less resistance they feel, the better. FISH ON!!
I gagged when I saw that thumbnail I can’t believe you ate those. What’s next, Chernobyl catch and cook
hater
Dont act like you eat anything you catch ever
Chernobyl catfish get huge! LOL
I know this is an old vid but if you get this message it was a great video. I've caught tons of freshwater catfish but am coming to the florida coast and this time I'll keep some of those catfish and cook them up. One thing I do with freshwater catfish is to leave 1/4" of the meat on the skin when I fillet the fish and that way all that red meat stays with the skin. Then I use that skin for bait and catch more catfish. tight lines.
Stop with the venomous overkill already 🤫
Didn't know catfish are venomous
If you get stuck by one you will think they are venomous.
Chris Henicke been stuck many times I used to help a pro catfish long liner got stuckk
danthebeeman Been finned bunch of times myself... It sucks. Scrape a little slime off the fish and smear it on the wound, stops the pain immediately. 🤷♂️ Also, seen a guy get blood poisoning from catfish fin. ✌️
Congratulations Vic I love that you and Brook have RUclips Chanel because both of you are amercing on your videos
God bless you and your family
First like !!!
Never ate them before, people always told me they was the worst tasting fish out of catfish. Might try this next time I go saltwater fishing
Phil Jackson chef
"It sounds like the things you get in packaging."
Has this guy never heard of bubble wrap?
The Fishing Nomad maybe he just didnt remember what it was called? Not a big deal. You never forget a word before? He’s human
I have eaten plenty of hardhead catfish. I do the same thing i bleed them out by cutting off the tail. Only thing different i use an electric knife to Filet them out. They very good if prepared right and far as i see you did an amazing job.
Using a cast net to catch catfish isn't a good idea. Ever.
Salt water catfish is also good in ceviche cooked in lime juice try that out Victor awesome content always hitting out of the park 👍💯
You have to have saved the tails so you could fry them. They're like fish chips.
Interesting
On second thought..it would be like shark fin soup...then we would have a problem..
@@cag1763 That was literally the only part of catfish my grandfather would eat. All he wanted was the tails deep fried.
You guys are AMAZING...you have a good life. Continue to enjoy...
LoL I can't help but complement you guys on the music combo during the cooking! Sooo good, makes me want to eat these on vacation!
I gotta admit I'm a bit jealous you've got a good life Vic May you and your wife have a long happy marriage and life together take care brother
Next time your food shopping try the Mt. Olive pickles with sea salt, It has a blue label instead of the red. Its also a little healthier!
