Back in 84 when I was living in southern California, caught a 150 pound ray off the Oceanside pier. Used a rope gaff to land it, and four soldiers from Camp Pendelton, too haul it up. Very tasty, the wings are all good meat. First thing my fishing partner did was step on the stinger and cut it off. I still have it too this day. It was good eating.
In a little village on Mallorca I've watched an old fisherman clean a bunch of these. What he did was use a pair of claw pliers (the ones carpenters use to pull nails out) to pull the skin off from the hard-soft transition line towards the outside. There was a huge lot of slime but there was absolutely no meat attached so very efficient.
Man every time I caught a stingray I would throw a back and be like “that’s trash stuff” but never thought that it would look so good and looks like it taste great! Good job Vic👍
I’ve heard the scallop thing too but really you can’t confuse the two. However if you brine ray wings in 7up and salt you can make a decent “poor mans scallop” and kinda sorta give the meat that sweet scallop taste.

I don't believe skates have a venomous barb like stingrays do. I got stung by a stingray in the palm of my hand a few years back. The barb severed a tendon, very painful, hot water was the only relief. Later, surgery fixed the issue in my hand. I now respect the ray!!!!!!

I've had Stingray and it's stringy like beef in my opinion, it's not like the typical fish meat. I caught one when I was young and left it in the kitchen sink without telling my mom. Left it for her to find 🤣🤣🤣 her reaction was hilarious, but she did cook it for me. She cooked it the way we would cook salt fish Caribbean style. I love it.

Also i myself enjoy and love deep sea fishing, and am very adventurous when it comes to eating food. However living in the Midwest of the USA... it’s difficult to get to try something like this... so thanks for doing it for me!
A pain to clean but man do they taste good. One of the ways I liked to make the smaller ones is to leave the wingtips and part of the cartilage on and use meat scissors to cut out the middle cartilage. You make a singray taco/pita shape that is primed for stuffing with the same things you stuff crab with, or even better dice up that crab and shrimp with some Italian seasons and bread crumbs to make a nice seafood stuffing. Stuffed ray wings baked to perfecting are to die for. You just leave the wingtip areas behind at the end. Stingray carcasses are also perfect to give to your shark fishing buddies or in trade to a crab trapper for a few blue crabs. Crabbers are always hunting for fresh bait.
Thanks for showing me how to cook stingray. I catch plenty of them in North Carolina, and now I will try to cook them. I am curious if the meat on the larger ones (60 lb. class) would be too touch. I would love some feed back if anyone has that answer. Thanks again.

I caught a smooth skin ray at an estimated 270-300 kg, (660 pounds) it was a monster and much wider than my boat, I let her go. I judged the size based on one I saw in an aquarium and the handlers said that one was 250kg and mine was a lot larger. I had no idea how they use their sting and when I found out they arch over kind of like a scorpion I realized I was lucky it didn’t have a go at me when I was removing the hook. when I was little swimming in Nelson Bay in NC I used to step into those holes that the stingrays dug..I called them pot holes because that was what they where like..underwater potholes that come up out of know where.

Suggestion the scraps that you are throwing into the water, chop them up so that the smaller fish around that station can consume them better.

The skin comes off easily with a quick fry. Instead of skinning it, just put it on the pan, skin down, for 20 sec, then flip it and peel off the skin.

Stingray tip: wipe them all over with a lemon cut in half, the acid cuts through the slime making them easy to clean
