Every year bluefis by the millions migrate down Florida's coast and on average they are 1-3lbs. Every once in a while we get a huge of run gator blues which are 10+ pounds. These Giant bluefish don't always migrate down, but when they do it is abosulte mayhem on the beach. Bluefish are also considered trash fish by many people, due to their oily flesh, soft texture and poor shelf life. However when eaten fresh, bled and properly iced these fish make amazing table fare!

Listen to me and listen NOW. I first bought a bluefish at a fish market many years ago. I researched the best way to cook them on the Internet and almost exclusively saw that they were considered a trash fish because they're a very bloody fish and taste was considered very gamey. BUT....I also noticed a recipe that said to marinade the bluefish in milk/buttermilk for 24-48 hours before preparing. OMG, after baking with tomatoes, onion, and lemon slices, IT WAS DELICIOUS!

It's a baymen's truth that bluefish that eat bunker or menhaden do take on a stronger, oily and fishier taste. Here in Brooklyn, they aren't sought for the table, because of their primary diet. Out in Montauk, where bunker are much less common as a food source, they tend to taste better from eating less oily food fish.

I’m 66, been eating blues my whole life, love them. The grey meat and big blood line is almost the same as red drum. Fry them side by side there’s almost no difference in taste. I’ve fooled many a blue fish haters telling them it’s a red fish , they always love them. Reminds me of my late mother, grew up kinda country, she loved yellow creamed corn, hated white corn, so I made some creamed white corn and added a bit if yellow food coloring, she loved it. Up in Rhode Island they're "snapper blues" at 1 - 3 lbs, and the big ones are just blues. Tons of big guys. Catch all you want (and often when you dont want).
I love these fish. Great fighters, crazy acting, crazy eaters. You catch them off the bottom, the top and anywhere in between.
I grew up eating them and never got their bad reputation. A bit oily, kinda soft, but unique. Not crazy fishy. Some folks dont mind fish that tastes like fish. Great smoked, great chowder fish, good in a lot of ways. They sell for cheap here, but they'll sell fresh

KEY IS THE BIG ONES! Born in Spain, and we caught giant Blues off the pier. My mom made them with a light wine and butter, and it was great. With any Fish, Better to gut and bleed them immediately. The little ones are not great, because the bloodline taints the fillet almost immediately, but the bigger ones have a good white meat fillet.

  • @gungadinn
    @gungadinn 4 месяца назад +3

Blues ARE trash fish. They are extremely oily and VERY fishy tasting.
We in the mid-Atlantic also get large runs of them, early spring and late fall, mixed in with striped bass aka Rockfish. Blues on top, striped bass below.
The only way they are palatable is by soaking in milk over night or smothering them in Italian dressing and broiling on the grill. They will stink up your house when cooked.
Small runs of Blues on the surface, we call Snapper blues. They'll hit anything shiny, so a spoon is a great lure for them. Heavy leader required as the teeth are as bad or worse than barracuda.
    Bon appetite.

I grew up in Jacksonville FL, and we used to routinely catch Blues and Jack's in the mouth of the St. John's River....even little ones fought so hard and were so aggressive. My dad never let us bring 'em home for dinner though.

They are an increasingly rare sight in the north nowadays. Unfortunately, the last time the FL run was goodthe following year in the NE was poor. Hopefully, that was just a one-time coincidence.

Viktor, another great vid. I fish mostly Cape Cod and Islands. Fresh bluefish is staple of many restaurants in the area. I would just add that they are toothy critters for sure. Grilled fish sandwich is best but they are wicked good when smoked too. OK Best keep up good work.

Yeah, I used to go party boat on Miss Barnegat Light and Golden Eagle and Miss Belmar, did alot of night blues. Once hurricane Sandy hit it really screwed up the blue fish migration patterns. It hasn't recovered because the go further offshore and deeper water. Miss those days.

In australia we call Bluefish Tailor, thry dont get as big as the ones in the us usually but there are the occasional ones that get to around 4 ft and 20-25 pounds

Biggest Tailor ever caught in Australia didn't even make 4ft

    • @cozab5487

@@ebisu8824 Yes it did, Australia has some of the largest specimens ever caught, including multiple fish around the 25lb mark, infact for a long time a fish caught in Western Australia held the line caught record at 29lbs, and specimens of over 30lbs have been caught in set nets in estuaries along the south coast. To put their size potential into perspective, a captive fish in WA that was once a juvenile simply caught from the beach nearby and put on display, grew to 130cms long and 38lbs in weight... They aren't nearly as common at a good size in Australia true, but that doesn't mean they can't grow, they still get VERY BIG in Aus🤷🏽‍♂️.

yeah ive kept small bluefish before, 14 inches here in tx, the next day they definetely got mushier then the first, probably also because they were in fresh water ice as well as i never knew you werent suppose to keep salt fish in fresh water because it draws the salts out of the fish making it softer and mushier

I was on a party boat in the gulf and caught a striped rudder. Crew and captain said it was trash. So I threw it back. Caught 2 more but really thought about trying one. So on the third one I had the rudder bled. The crew filleted all our fish. When I took it home I trimmed all the dark red and dark pink off the fillets and rinsed in a bath of salty ice water. We blackend the rudder fish and had for dinner. Was wonderful. I'll never throw a rudder fish back.

Sometimes the bloodline is the best part and brings a new journey in fishing and cooking. The bonita in Hawaii they take the bloodline and smoke, dry or grill it. Its very damn good and if marinated or seasoned or unseasoned it all has different tastes that to me personally are all amazing.

Back in VA, used to run a homeless house. State gave us Taylor's Blues a lot!
    Horrid fish. Lol😂
I thawed enough to feed 40, plus samples... I filleted them all, grabbed some frying pans and started searing chunks in various spices.
Once several guys agreed on a spice blend, I went to town. Nobody knew it wasn't some kind of white fish.
    Treat it right.
    Now to watch the video.
