  • It was American red snapper opening day here in the keys so I go down to the Yankee Capts to see how their trip to pulley ridge went. I collect a head and collars and make pierogies using a dough recipe from my grandma.

      When I put food in front of my wife I make eye contact and say slowly and emphatically, "This just came off the oven. HOT". She even jokes that I'm going and say it, and at least 50% of the time she still just slams it and burns her mouth.

    Hey buddy got my hat and stickers!! Can’t thank you enough. No idea what kind of scent you have but my cat immediately laid on it and refused to let me have it. Have to keep it hung up while not wearing it now 😂

    Thanks for the trip down memory lane. My Polish mom made her pierogi dough from scratch and stuffed them with saurekrat and salt pork. Could never duplicate them after many tries. Thanks again for your creative cooking!

    Great video Will! I really appreciate your extra effort in making sure that items don’t go to waste. I just can’t believe that they chuck all that meat out. Can you imagine what a good cook could do at a food shelter?
    Those pirogies looked the bomb, especially on the hot side. Lol

    Aloha. Awesome recipe from nothing to something. Reminded me of my childhood. Grandparents lived in Daly City when I was growing up. My nana would sit in front of the tv watching some crap show, a TV tray in front of her, a More cigarette dangling from her mouth, and knock out hundreds of pelmeni without even looking. Her piroshki and chicken kiev also ruined me. Man, I miss her and her cooking.

    Love your videos. I’m not far from NYC so I’m dying to head up and check out your restaurant. I made quite a few of your recipes and watch weekly along with Aaron’s. Had one of my close buddy’s dive with Aaron years ago and it was on my bucket list to get down there and dive with him before he moved on to bigger and better things from chartering. Either way man you ever want to come dive barnegat inlet, or do some mahi pot hopping offshore or canyon diving or fishing you’re welcome aboard my boat. Big fan. Keep up the great work brother 🤙

    The dough is shrinking because it wasn’t rested enough I got a pierogie recipe from my ex mother in law it’s easy equal parts sour cream and flour with a little salt knead with more flour is too wet. It’s amazing

      Up here in West Virginia, there is essentially no variety when it comes to fishing, but some fish are better than no fish.

    Nice to see you showing others about the useful meat that is usually tossed. Why aren't they allowed to throw the heads and bones (carcass) in the water after fish is cleaned?

    I don't know why people would freak out over you properly calling the fish an ARS lol. Walmart sells red snapper year round. It definitely isnt American red though! Dish looked delicious as usual, but I do wish we got to see some fishing from ya aswell!!

Any chance you might be open to a bit of traveling now that you took a step back from the restaurant? Head out West and showcase some of their different fishing and cuisines, etc? Either way, I'll be here every video, and I can't wait until I can get myself to the Keys, Sarasota fishing just doesn't compare in the slightest!!

    Lobster heads have a lot of meat too n the claws n feets…😕 but no one eats them that have money just tosss I get that it takes time n effort to get the meat but if you don’t then u rich if you do them your poorz… it’s life 💙💙💙💙🔥🍻💪🍺🎣💪💣🫡🫡🫡

    Creative recipe. Do different types of Salt have different properties, or affects in cooking.
    such as Rock salt, Sea salt, iodized table salt, or even garlic salt etc. Like is one better for baking or sweating vegetables than another?

      They do! I’m not well versed enough to say which is best for which but I do think sea salt hits the pallet softer than kosher salt
