I will say that you're half wrong and half right when you said Star Platinum couldn't break Sheer Heart Attack Star Platinum cracked Sheer Heart Attack, but couldn't fully break it.
I think he meant that he couldn't defeat Sheer Heart Attack. He roughed him up a little bit, but Koichi pointed out that he didn't lose any of his power plus Kira's right hand wasn't hurt in the slightest until Act 3 Jotaro ended up hurting himself more than he hurt Kira.
I suppose though, in all fairness, Jotaro didn't exactly have too much time to dedicate towards trying to break Sheer Heart Attack, due to how dangerous it was to get close enough to hit it. Judging by how he was able to crack it, I'd say that if Sheer Heart Attack were to not pose the risk of blowing up and given enough time, Jotaro could probably destroy it. Of course, that's not what happened, or would ever happen realistically. It's just not feasible to get that much time so close to it.
