Ive noticed that once it first swells - in the beginning - that’s usually as big as it’s gonna get; and the rest of the time is just allowing it to crystallize and harden, I have taken them out too soon before and they deflate, but when I let them go 4 hours I’ve had good success and haven’t needed longer time - when I’m using candy mode at 145-150 degrees. At least with the candies I’ve tried so far that I know freeze dry well.

I know without O2 absorbers they last a good 6 months or so - but with the absorbers I think you would get a much longer shelf life. If you were doing long term storage maybe would be best to do a freeze cycle, then dry cycle and let it go the full amount of time just to be safe!
For the Extra Dry Time that you selected 4hrs for. Would i need to take them out once its done at the 4hr mark? Or like if it finishes while im at work will it be okay for them to sit there until i get home from work to take them out or would i need to add extra dry time before going tk work to make sure it continues drying until i get back home to be able to take them out? And is there a thing as drying to much? Like setting extra dry time to dry all night and then my whole 8hr shift? Or would it just be okay for it to finish the 4hr extra dry time over night and just sit there for like maybe 10-14hrs until i get home from my 8hr shift. Thanks in advance for helping me
My preference is if I am not gonna be home to get the candy out when it’s done is to set the dry time to as long as I’m going to be away. So if I was working all day I would have it drying the entire time. Extra dry time won’t hurt it and it ensures that it will be completely done when you get back. You also can leave it just for 4 hours, after the 4 hours it will cool down the freeze dryer and essentially keep the candy frozen until you take it out. I just don’t like taking out cold try’s and I’m not sure if it messes up the candy being frozen after the drying time. Hopefully that makes sense! But yeah my preference is to leave it drying until I can take it out of the dryer 👍🏻
If you let the temp drop too far, the candy gets cold and moisture in the air will stick. It's condensation just like you get on the inside of a window when it's cold. That will defeat the purpose of the drying because it will start to reconstitute and go bad faster. So always take it out while the trays are hot. Actually, that's the thing you should do with anything you freeze dry. Dry. You should not let it stay cold in the freezer dryer, take it out and bag it up because moisture will condense on the food and it will spoil. I know too much about that and don't want to tell you how. Just trust me please. Also, why do you take it off of fast dry mode. The video from harvest Right that shows how to use candy mode leaves it on fast dry mode. Do you know what the difference is and how it works either way? I've done a lot of freeze drying but only downloaded the software update to allow me to put my freezer on candy mode a few days ago and have only done one batch so far. Jeez im just starting this alm out and is it ever annoying trying and failing with brands that dont work, and figuring out warming, times etc etc, i noticed at the beginning u said u skip the 1st 2 freeze parts but didn't see u click them off i was wondering do u actually put those both 2 zero? Or no
You don’t need to put to zero - I found out when you engage candy mode it skips the freezing part all together so no need to zero it out. I increase dry temp to 145, dry time 4 hours! It will ask to warm the trays once you hit start and I usually add 5 min there. Good luck! Hope it works for you.

I have heard you can skip warming trays when you are doing candy that has chocolate - otherwise I usually do. I haven’t compared doing regular candy and skipping warming trays so I should try and see if it there’s a difference 🧐

I have only tried candy and marshmallows which is also sort of a candy. I think most other things need the full cycle 😁

3 - 5 min usually - I dont warm them if I have candy that has chocolate in it
