    I run any scraps from root veggies through my food processor to chop them finely, I save them in my freezer and use them to add into soups, pasta sauces, and fillings for dumplings. It works well, especially if you don't have enough leftover for a whole recipe from one meal. I love the broccoli cheese sauce idea. Normally I use the stalks for broccoli soup.

    I love those things for green smoothies. And in our supermarkets they collect leaves of veggies for others to pick up for animals or smoothies.

    All the scraps I trim from vegetables get thrown into a bag in the freezer. When the bag is full, the scraps get dumped into a pressure cooker with enough water to cover and turned into veggie broth for soup. The remaining pulp goes to compost. Also, I make the same cheese sauce, but I use the core from cauliflower. Broccoli stems get peeled and the green center eaten raw - it’s delicious 😋

      Same with me. I never have enough of the stock. I use it for everything. I cook my rice in it. I also use them when roasting meat for Christmas to give the gravy extra flavor. Why would I use edible food to throw away when I could roast the carrot and onion ends in the turkey drippings? I've made vegetable gravy from it too, using mushrooms or soy sauce to give it that unami flavour that is missing when you don't use meat.

    I have a (french) family recipe made from chard leaves:
    Most of the time we cook the white part of the chard, but my grandmother also cooked the leaves.
    While the whites steamed, she put the leaves with them. She made a "grattin" with the white part and reserved the leaves for later.
    She mixed the cooked leaves and incorporated them into a crepes batter.
    She cooked them the same way as crepes without adding anything to them and this is super cool and delicious.
    Voila!! this is my grandma's green pancakes recipe.

    Broccoli sauce- my gosh, what a bomb idea! I usually used the stems in stir-fries and I have actually never though about making a sauce out of them, not even mentioning a cheesy one! I knew I was going to learn sth and you did not disappoint me :D

      I did something similar with zucchini recently. On the first go I actually made a salad dressing, and after eating that I realized it'd be really tasty cooked a bit and used as a pasta sauce! It needed cooking because I put in a couple garlic cloves and when raw they're kind of... a lot

    Carrot top pesto is my go to when I have a real big bunch of the greens and it is always super delicious, no matter what type of nut you add! Highly recommend sneaking in a few mint leaves to bust the flavour! Also, I got used to this taste so much I sometimes even chop them into a salad and I love the herby vibe they add!

    I use cauliflower leaves and radish leaves chopped up in my minestrone soup! That's the beauty of it, you can add all chunky veggies you want and it turns out yumm!

    I am definitely mind blown with the last recipe. FANTASTIC! I love adding cauliflower leaves to curries and soups or roasting them but making a filling out of these has never come to my mind! Must have tasted absolutely delicious!

    I am so jealous if you got that Cauliflower plastic free. Never have I seen it around me. Idk if it’s cause it can’t grow in Oregon or something but it’s never at a farmers market (that is only during the summer) and my super markets always have it wrapped in plastic

    Broccoli stalks are my favourite part, I’m lucky to have a garden and the leaves of broccoli are lovely too, bit like kale 😊. Loved this video you’re on fire girl 😊

    These recipes are so clever! Would love for this to become a series. I usually cut the outer layer off the broccoli stem and cut it into slices and steam it along with the florets. Tastes just fine.

    I like to keep my veggie scraps and freeze them for soup stock. Makes really hearty flavorful soups during the colder months. 👍🏻 🥕🧅🧄

    I take the broccoli or cauliflower stems using my grader attachment in my food processor. Run it threw to make coleslaw. Thanks for showing me other things to do. I see a lot of people at the farmers market giving the stalks back to the farmer.

    I usually use fruit peels to make cake dough, and it turned to save a lot of food of being composted. I store all the peels of the week on the fridge (as pineapple, orange, mango, papaya and the list goes on), cook and slice them finely. Them I incorporate the cooked pieces into a basic vegan dough, with a bunch of spices and cacao. It's delicious, highly nutritious, and really helps in reducing food waste

    Curry from watermelon rind made with coconut milk, onion, tomatoes! Tastes like cabbage when cooked :)

    I halfway expected the cauliflower leaves to be breaded and fried/baked into chips. I'm not sure if the center of the leaf would be too tough that way or not, but now I want to try it and find out!

    This is an amazing video! In Sri Lanka, we consume almost all parts of edible vegetables and fruits. I live in the UAE and there is so much food waste. So sad! Keep showing us more recipes 😊❤

    Love your recipes!
    I've never tried carot tops or cauliflower leaves, but I'll defintely use them from now on.
    I've always used the broccoli stem though and just cooked and ate it together with the other parts. But making a sauce out of it sounds really good!
    Recently I tried something I've never knew I could eat: leaves of beet root. I first had to research in the internet if they were edible 😅 and I made a nice chutney with them :)

    Great video. I use orange peel and boil them in water and sugar to make candied orange peels. I then add them to make a cake. Delicious.

    Great video full of wonderful recipe ideas. I have never had an issue with broccoli as always eat all of it. I have recently started eating cauliflower leaves and roast the whole cauliflower with the leaves or chop off the leaves and use them in stir fry. Carrot top pesto I have yet to try but I have done celery leaves pesto and it was delicious.

    I have just made the carrot top pesto, it is delicious thank you. Did you know that beetroot leaves are just like a mild spinach and can be used as a spinach substitute in most recipes.

    I LIVE for this!!! I use a lot of food "waste" for my recipes too which is so easy and really all parts of the vegetable can be consumed in some way, even if it is just to make veggie stock! I saw a recent stat that said food waste is the fourth carbon emitter in the world!!! I completely agree, a big part of this is the farmer and the stores, but we can consumers can help SO much!

      Rhubarb leaves are incredibly poisonous, so I’d stay clear of those 😬

    Fairylandcottage has a great recipe for apple cider vinegar out of apple scraps!! It’s super useful and easy to do! Highly recommend

    You can dye fabric with carrot tops. I would assume you have to have a lot though. Love your videos!!🧡

    I love to make apple jam when I have some old apples stocking around! And I also love to make banana bread to use up spotted bananas. The recipe I use is from Blue Olis is really tasty though very easy and simple, so perfect for people, like me, that usually don't bake!

    Great Idea!! Could you tell me what to do with the leaves of radishes? I tried them in a salad, but they are bit like nettles, so not comfortable to eat raw.

    Does the cheese sauce taste like broccoli, or just cheese? I don't mind, but I'm trying to find ways of incorporating more vegetables (aka hiding) into my daughter's diet. She only eats nuggets, hotdogs, grilled cheese, Mac n cheese and occasionally chicken.
    Thanks! And love all of your videos, they have been super informative and helpful as I start my plant based and low waste transition. Maybe I'll inspire my family to switch too ❤️

    How long were you able to keep the pesto? I made some the other day and not wanting to make food waste out of my “food waste” I used what I had all in one go on my pasta (and yes, too much pesto was a thing! 😋)

    I follow you mosly for sustainability, zero waste and plastic free. But I like using up everything I buy that's food. Currently we have our garden produce. Could you however tell me in what you freeze food? I am thinking of buying stacher bags, as a non plastic alternative, but your video on silicones makes me hesitate.

      @@Gittemary I'll have to look it up. I froze broth once in glas jars and it went fine until my parents noticed it. Now not allowed to do that anymore as they say it will break. I live in their house so I have to follow their rules.

    It’s too bad that Bugs Bunny never knew about “Carrot-top Pesto”. Bugs would have been an amazing ambassador for plant-based eating... and so are you Gittemary!! These are great recipes and I love that they use common in-my-pantry-or-fridge ingredients. I’m also intrigued by the Mushroom Soy Sauce. It’s goofy to say this, but you’re heirloom food processor is really cute! Thanks for this great video. Have a fun time in Copenhagen. 🌿❤️
