    A huge part of reducing food waste is making a weekly meal plan! My partner and I look through our fridge every week and our freezer every couple weeks and write down everything in it besides condiments and staples like butter. Then we look at what's on sale at the grocery store. We try to plan meals so we use everything in our fridge that might spoil in the next week and supplement with sale items. Then we go shopping and buy exactly what we need! It takes 1-2 hours upfront a week to plan, but it saves money at the store, prevents waste, and saves time and mental effort when it comes to preparing and eating the meals

    An idea I found is banana/plantain peels. If you boil them until they are tender and sautée them they have a nice texture. I would reccomend taking a look around the internet for some recipes

    Thanks for this series. Some of the things I do is take cauliflower stems and put them in a food processor with the cheese grader attachment and make coleslaw. If I can't use up the celery, you can chop them up how ever you like and freeze them. Yes you can freeze them. Later you can put them in soups, stews or anything cooked. If I peel a carrot, I take the peels and mix slice very thin onion, flour, a little bit flax seed egg, spices and make a fried patty for snack. Keep it going girl I love the use of the akafaba.

    We're a family of 4, we make veggie broth with veg scraps, we use a lot of stems in soups and stir fry dishes but I started a worm bin at the beginning of the Covid pandemic and I'm super happy with how much food waste we've been able to divert. It's super easy and not as gross as it sounds, we used some tote bins we no longer needed. The compost tea and castings are amazing for plants, I'm sure your plant collection would be super happy about it if you ever want to give it a try. :)

    Candied peel is a good one. You can add it to chocolate, make syrup out of the candying liquid and add them to cakes or cover them in chocolate. Those last two were my Christian present this year and people loved them. They asked for the recipe and suggested I sell them

    love this series so much!!!!!!!!!! i actually have an idea for part 3: i was making apple pie recently and the recipe told me to peel all the apples.. instead of throwing the peels away though, why not dehydrate them in the oven and make them into crispy apple peel chips? they taste super good and nothing has to go to waste!!

      I did this when I was making apple sauce. Put a bit sugar and cinnamon on the peels before they go into the oven, tastes great!

      I make apple wine( not cider) buy collecting all my apple core and skin and bits throughout the fall season

    I just made some candied citrus peel a couple days ago, I sliced the peels off keeping the white parts on, I squeezed the lemon and lime juice and strained and bottled it then, boiled the peels in water to reduce the bitterness of the white pithy parts. Then I drained and rinsed and made a simple syrup of 2:1 sugar and water. Threw the peels in and leftover pulp in the pot and cooked them down. Then you are left with a super good citrus simple syrup for drinks. I also made lemon extract with a few extra peel strips.
    I love the meringue idea. I'm going to have to try that!
    I also made baked oatmeal with an apple that was getting soft and used the core after taking the seeds out.
    And veggies that go floppy are great for soup, or you can put them in ice water to perk them up. I've been trying to regrow the tops of carrots for the greens.

    I love this so much! Thank you for the tips, i will try out all of this. My heart aches everytime i need to throw away something.
    A little tip for you (or any other who reads this) is to scrape off the food with the upperside/backside of knife (the not-sharp place) to save the knife edge to get damaged, it is very fragile because its so tiny. (Thats why the knife should never go in dishwasher, the sink, the drawer or anything like this.just handwash, dry and put in cover)

    I actually do eat the spinach roots after washing them well and cooking thoroughly because; they are so sweet and add such a great texture to most stir-fry.

    I always trie to use up cauliflower leaves (finely chopped) in my curries. I feel like everyone else is just throwing them away.
    Very nice video 👍 Although the saddest part of food waste is that most of it happens before the food comes in contact with the consumer, we should do something about that!

    Im very much a "horder" of food scraps, if i finish some thing that same has been in a jar, in brine, oil or something, i cant bring myself to through it away, i love that youve created these videos as definitely adding to my inspiration!

    I recommend using the back of the knife when u scrape your veg into a container. It stops the knife going blunt and u can use it longer (also the sound of the sharp edge of a knife scraping along the wood makes me want to scream!)

    I’ve also found you can make oat milk without pulp by using less oats and pulverizing them in a high speed blender. You just have to make sure the water is very cold (I add ice) so it doesn’t heat up, and get gloppy. For extra richness you can add cashews or pumpkin seeds (the kind without the shell bits) and they blend into creaminess too.

    Those very bottom ends of the stems can be eaten. Just pare off the very bottom brown part and sautee' them with some vegan button and soy sauce. they are awesome as a side dish. Japanese cooks do this all the time and it was in watching a bento making video that I learned that technique.

    You should try something with cauliflower leaves, I heard that they are very tasty. And have you tried something with carrot and potato peels? I personally never peel them but I know many people do. I really like this series, I always compost the spinach stems but now I will be eating them too 🤗

    I've always wondered if there was something that can be done with banana peels. 🍌 or as a Hispanic: green bananas or plantains peels as well

      Apparently you can actually eat banana peels as long as you give them a good scrub to remove any pesticides. I've never tasted a banana peel but I imagine it's astringent and not especially sweet. So I'd try deep frying them:
      Cut them into bite-sized pieces and salt generously. Leave them for a half hour, then pat dry any moisture that's come out of them. Dredge them in some sort of cultured non-dairy product (in a non-vegan recipe, I'd go for buttermilk, but something like plain soy yogurt thinned with water might be an easier find than vegan buttermilk) then in seasoned flour, then in your liquid, then in fine breadcrumbs. Preheat 1/4" of a neutral oil in a wide frying pan. Test if it's hot enough by using tongs to dip a corner of peel into the oil - if it instantly makes a happy sizzle without popping violently or burning, it's the right temperature. You may need to adjust the heat up or down during the frying process. Add the pieces of peel one by one, making sure they don't touch. Do it in multiple batches if need be! Flip as needed to make sure both sides are golden brown. Remove and drain on towels that you don't mind getting oil stained, or skip the towels and drain a cooling rack over a baking sheet. You can strain and save the oil for later frying and cooking once it has cooled completely as long as you don't mind having a bit of the flavor of the thing you cooked in it!

      I have made compost "juice" with them for my plants (and they love it!) just by putting in a large mason jar with hot water and letting steep for a few weeks, then you can strain and pour the juice into your plant soil. OR - Max Lamanna made a reel on instagram about how to use the peels as a vegan pulled pork option.

    I started buying bulk chickpeas so I cook them myself.. I have used it like the water from the bin but it's somehow brownnish and turns bad pretty quickly.. Anyone any ideas/suggestions? :)

      The liquid from most canned chickpeas contains ascorbic acid most of the time, which functions as an antioxidant and conservative :) Interestingly, ascorbic acid is simply the chemical term for vitamin c. Maybe just try adding some lemon juice instead?

    I find my broth from food scraps bitter. I tried to boil the scraps seperatly to find out which one was bringing the bitter taste and almost all of them are bitter...

      I recommend adding spices to the boiling pot - I always do this and it never turns bitter on me. Probably best to use filtered water as well.
