I always wonder what the dried thing from the package goes into the broth. Look like dried mushrooms. What surprised me is the knife when cutting the dough. With a western touch. I think the stones under the machine are Shaptons.What do they do with the egg whites if they only need the yolk?
That is Katsuobushi utilized to produce soup broth. It is made from pieces of Skipjack Tuna that have been cured, smoked, and dried. Afterwards, it is shaved or shredded into flakes. It has a smokey and savory taste that is similar to cured ham.
