Ingredients for Red Velvet Cake
⅔ cup (140 g) unsalted butter, at room temperature
2 cup (400 g) sugar
2 large large eggs, at room temperature
2 tsp (10 ml) vanilla extract
2 ½ cup (375 g) all-purpose flour
¼ cup (32 g) regular cocoa powder (not Dutch process)
1 tsp (3 g) baking soda
½ tsp (2 g) baking powder
¼ tsp (1 g) salt
1 ½ cup (375 g) buttermilk, at room temperature
1 ½ (22 ml) Tbsp white vinegar
1 tsp red food colouring paste (preferred over liquid colour)*
Ingredients for Frosting
1 cup (225 g) unsalted butter, at room temperature
1 ½ pkg (12-oz or 340 g)) cream cheese, at room temperature
4 cup (520 g) icing sugar, sifted
1 ½ tsp (7 ml) vanilla extract
Directions - Cake
1. Preheat the oven to 350ºF (175 C). Grease two 8-inch square pans and line the pans with parchment so that it comes up the sides as well.
2. Using electric beaters or in a stand mixer fitted with the paddle attachment, beat the butter until smooth, then add the sugar and beat until light and fluffy. Add the eggs one at a time and beating well after each addition, beat in the vanilla.
3. In a separate bowl, sift the flour, cocoa powder, baking soda, baking powder and salt. Add this alternately with the buttermilk, starting and ending with the flour. Stir the white vinegar and food colour together and add this to the cake batter on low speed, but mixing until blended in. Scrape the batter into the prepared pans and spread to level.
4. Bake the cakes for about 35 minutes, or until a tester inserted in the centre of the cake comes out clean. Cool the cakes in their pans for 20 minutes, then turn them out to cool completely.
Frosting
1. For the frosting, beat the butter until fluffy, then beat in the cream cheese until well blended and smooth. Add the icing sugar in 2 additions, beating first on low speed and then increasing. Beat in the vanilla.
2. To assemble the cake, place the first layer of cake on your platter or plate and spread a generous amount of frosting on the top. Top this with the second cake layer and frost the top and then the sides. Use your spatula to create any swirls or patterns you wish, then chill for at least 2 hours before slicing to serve.

But where I’m from aka South Carolina real red velvet cake doesn’t have a chocolatey flavor and the red is a darker but not too dark I would suggest using a bottle of red liquid dye and about a tea spoon of unsweetened cocoa powder and also one and a half cups of vegetable or canola oil and you’re gonna have a real authentic southern red velvet taste😊

For one cake can i just halve all the ingredients?how do you make the buttermilk?
@@riamadhuri6587 I'm sure you can halve the ingredient, if you only want have. I've done that with carrot cake (not her recipe, but CupcakeJemma's recipe), and it turned out just fine. Otherwise the cake is too big for a small family. As for the buttermilk, there are easy recipes online. I think you'll need to add fresh lemon juice or something like that, wait a few minutes, and the buttermilk is ready.

This recipe is soooo good! I never bake and I made this following instructions and my husband kept asking if I made it myself from scratch? The frosting alone is absolutely delicious. I did end up using one less cup of sugar because I don’t like super sweet frosting and it turned out really well. This is a great recipe! I recommend you try it!

@Moon Star : very true. Chocolate cake has always been my favorite but Red Velvet cake is a different level. Maybe the unique taste comes from the combination of the cocoa, buttermilk, vinegar and the cream cheese frosting. I think if we use a different kind of frosting, it won't be Red Velvet anymore. It's not the color. I don't even care abt the color. It's the taste.
Maybe those who couldn't taste the difference were the unfortunate ones who have tasted a badly made Red Velvet 😉😅.
@@rachelvillanueva2620 this is really late but location can affect how a buttercream forms. So don't use the entire amount of sugar as stated in the recipe when you're making the frosting. Add about 85% of the sugar and then taste your buttercream and add only as necessary!

2 1/2 cup of All purpose Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1/4 cup Cocoa Powder
1/4 tsp of Salt
1 1/2 Buttermilk
Some drops of Red Food Coloring
1 tbsp of White Vinegar
For Frosting:
1 cup Unsalted Butter
12 oz Cream cheese
1 1/2 tsp Vanilla extract
4 cups of Icing Sugar

I baked this today for my cousin's birthday tomorrow. The cake smelled so great! And the frosting is so heaven but it kind of melted because it's hot here in the Philippines so I put it in the fridge right away.

I made this recipe but separated the egg whites and beat them until it had a soft peak n gently fold it into the combined cake batter... Used the cake for my girl's Unicorn birthday cake... Turned out lovely n sponge. For the frosting I made Italian Buttercream.

I just made this red velvet cake for my grandson Birthday. He wanted a red velvet cake. He loved it, and so did everyone! Moist and delicious. Iʻm gonna make a strawberry shortcake cheese cake next. Using your cheesecake receipe and then your strawberry shortcake receipe. Then Iʻm gonna stack it on each other. I tried ordering from Juniors in New York, cake was $42.00, shipping was over a $100.00 to Maui. What a ripe off. Iʻm so glad I have Oh Yum for all her recipes. Better to make then buy anyway!! Nobody knows that original colour of this cake was made from reaction of soda butter Milk ang natural(unnalcalyzed) cocoa.... Its not so red.... Somenthing between red and brown

400g sugar +520g icing sugar..OMG
U need that amount of sugar because sugar lends structure to the cake, u can reduce it but its going to be a bit dry. With that amount of buttermilk i’d say it’s just enough. For the icing, you can just cut the recipe by half

@@unHingedOYT What is with all the hype around red velvet cake?! It's chocolate cake that has been colored red. The red does not affect flavor. originally it turned red because of a reaction between buttermilk and the coca powder they had at the time.

Absolute MAGNIFICENCE!
If you are making a sponge cake of ANY description, you use CASTOR sugar. The difference being that the sharpness of the granulated sugar will break air bubbles in the eggs when beaten together. The sponge will not rise as well.

That’s a pretty much standard practice in any cooking show. It’s not practical to let the production crew wait around for hours to film the final result of a recipe that takes hours from start to finish.

This cake is addicting!!!
I tried it for Mothers Day. The cake itself was a little dry and dense but it was delicious. I used a cream cheese with whipped cream frosting and it was absolutely delicious. This combination was PERFECT!!! I would definitely use this recipe again because it has an addicting taste making you go back for more. I would highly recommend eating it after a few hours in the fridge.
