    Ingredients
    Salt Roasted Pecans
    - 1 Tbsp (15 g) unsalted butter
    - 1 cup (100 g) pecan halves
    - ½ tsp (3 g) sea salt
    Brownies
    - 4 oz (115 g) unsweetened chocolate, chopped
    - 1 ¼ cup (285 g) unsalted butter, cut into pieces
    - 1 cup (200 g) granulated sugar
    - ¾ cup (150 g) packed light brown sugar
    - 3 large eggs, room temperature
    - 2 tsp (10 ml) vanilla extract
    - 1 cup (150 g) all-purpose flour
    - ¼ cup (30 g) Dutch process cocoa powder
    Directions
    Salt Roasted Pecans
    1. Preheat the oven to 350ºF (180ºC) and grease a 12-square brownie pan or 8-inch square pan.
    2. For the salt roasted pecans, melt the butter in a sauté pan over medium heat and add the pecans and salt. Stir and toast the pecans for about 8 minutes, until the pecans have a pleasant nutty aroma (the salt will not dissolve, but adds a nice crunch). Remove the pan from the heat and cool while preparing the brownies.
    Brownies
    1. Melt the chocolate and butter in a medium sauce pot over medium-low heat, stirring until melted. Remove the pan from the heat and whisk in the sugar and brown sugar right into the pot. Whisk in the eggs one at a time, then whisk in the vanilla. Stir in the flour and cocoa powder until evenly combined.
    2. Count out 12 pecan halves and set aside. Roughly chop the remaining pecans and stir them into the brownie batter. Divide the batter into the bar pan, or spread into the 8-inch pan and arrange the reserved pecan halves on top. Bake for about 20 minutes, until the tops of the brownies lose their shine. If baking in an 8- inch pan, bake an additional 5 minutes. Cool the brownies for an hour before removing from the tin (and slicing, if baking in a larger pan).
    3. The brownies will keep in an airtight container for up to 5 days, and the brownies actually improve after a day.

    I have one of her recipe books, and the metric measurements are listed as
    Fudge Brownies
    Salt roasted Pecans
    15g unsalted butter
    100g pecan halves
    2g sea salt
    Brownies
    120g Unsweetened choc
    285g Unsalted butter
    200g Sugar
    150g Light brown sugar
    3 Eggs large
    150g Flour
    30g Dutch process Cocoa
    10ml Vanilla extract
    Pre-heat oven to 180c

      jimbo mc. Yes u can use a cupcake tin for this recipe but the time to bake will be longer than this one.

    I followed this recipe from start to finish, even weighing everything precisely and these have to be the BEST BROWNIES I've ever had! Note: I used an 8x8 baking pan and these took just under 40 min to bake (toothpick in the center of brownies came out clean) ♥

      Hello! i had a question...can i leave the brown sugar out and only add the 200g granulated sugar? I don't like overly sweet brownies....i like mildly sweet desserts...So would that work out? Or do you think the recipe wouldn't turn out right if i exclude the brown sugar?

      @@mariamtariq4347 I haven't tried this specific recipe out, but when i bake cookies and other stuff i also lower the proportion of all sugars and they turn out just fine! I'll give it a try and come back to tell you how they ended up

      ​@@mariamtariq4347itz the sugar that makes it rather then maybe just try a little less sugar. But it not actually very sweet. The chocolate is bitter and the cocoa is also not sweet so that takes up the sweetness of the sugar😉

      Hooson Liao I tried it already it's not so sweet because you have a salt in the pecan and the chocolate is not sweetened so it's not so sweet yet not so bland but balanced chocolate flavour

    These are super delicious!!! Made exactly to the tee!! The salted pecans added another layer of flavor to these yummy brownies! 👍made these twice already tonight... wrapping them individually and giving to my mom for her birthday... and sharing with coworkers and of course my hubby!

      @@mariamtariq4347 Most likely, you would butcher your brownies by removing the sugar. This will surely affect the structure and the 'fudginess' of the confection. I've tried the recipe and it's perfect as is and not overly sweet at all. The sweetness is balanced by bitter chocolate (mine was over 80%) and the cocoa powder.
      A tip that works with this recipe: after cooling, place the brownies in a freezer for at least overnight (they can be kept there in a freezer bag for many days)

    If you want to get basically the same effect as the pan she used without buying one you can just use a cupcake/muffin pan instead. The only difference is that they come out as circles instead of squares.

    I have been making my own recipe brownies for years...my family loves them without nuts and with heavy buttercream frosting...my boys enjoy, m&ms on top...yes decadent, rich, and so yummy! I had to write the recipe done after having cancer and now heart disease so they want it for my legacy! I like ur brown sugar touch! Might try that!

    I’ve found that baking in an 8“ pan takes at least 35-40 minutes! Mind you, the end result is delicious. Having read the other comments I think that using 2 x 8” pans would probably turn out the best. Then 20-25 minutes would probably work. I’ll have to try that next time. I’m not really keen on buying the individual squares baking pan.

      @@mariamtariq4347 it wouldn’t turn out right if you don’t use the brown sugar. You’d need to substitute something for it although I’m not sure what. I’ve found that sugar supplements are less sweet than sugar so maybe try that.

Love the kitchen and this looks like the perfect brownie after searching at many other videos for an awesome fudgie brownie. And I cannot eat a brownie without nuts in them!     Thank you!!! This recipe is absolutely delicious!!! I also love pecans so I was in love with the idea plus the thick salt gives it an extra crunch.

    I tried making this today, using the measurements in the description and it tastes great. Though i forgot to put vanilla in the batter :(

    I absolutely LOVE the small tips here and there. The added information regarding the action you take (like "why not mixing with a mixer", or "why not sifting the flour") throughout the recipe make it stand out from the rest and make really understand what's going on :).

    Whenever I whisk in the sugar, I don't get it to dissolve in the mix. Am I doing it wrong, or the sugar was never meant to be dissolved?

    Hello Anna! I tried making these today, and the batter tasted delicious! However, when I went to check on them at 45 minutes (I used a 9x9 pan, since I thought the 8x8 seemed very deep and small) they were still soaking wet in the middle. Like the toothpick came out super wet. So I left them in for an extra 20 minutes and by then the toothpick was cleaner, but I'm worried about how underbaked they're going to be in the middle.
    I followed the recipe exactly, I'm not sure if they're supposed to be so wet in the middle or not but. I suppose I'll see how they come out! Hope I didn't burn them keeping them in so long!

      That’s right, she was saying it LOOKS like a chocolate sauce but has no sugar in it. So she adds in the sugar necessary for brownies.

      Americans add an insane amount of sugar to their dishes. I generally find the recommended amounts disgustingly sickly and that you can actually reduce the amount of sugar they recommend by 50-75% and then you'll get the rich, deep flavours you really want.

      @@insertclevernamehere2506 Overly reducing sugar in cakes and bar cookies will make them drier and more crumbly and also shortens their shelf life. They’ll also be blander because sugar is a flavor enhancer like salt and in chocolate desserts like brownies, the natural bitterness of chocolate will be more pronounced if there isn’t enough sugar to balance it out. Lastly, baked goods won’t brown as easily or nicely. So it isn’t a good idea to drastically reduce sugar across the board when baking.

    Hi if I have semi sweet chocolate how much sugar would I need to use?

      I would say check the package to see how much sugar per 100 grams. For example, if it has 10 grams of sugar per 100 grams and you are using 150 grams, that will be 15 grams of sugar in total. If the recipe calls for 50 grams of added sugar, you should use only 35 grams (50-15 grams from the chocolate). This is just an example meant to help you out

    I baked this yesterday, but so much Excess Butter leaked out after I took the brownie out of the oven. It was practically dripping and a pile of butter was left in the pan. Is it normal? Or is it b/c there’s too much butter in the recipe?

      what kind of chocolate are you using? it could be the oils from the chocolate you’re using - that happened to me the first time i made this recipe using a cadbury bar. after i switched to a dark chocolate that’s meant for baking it was fine. but i also altered my recipe. instead of 285g of butter i used 240g (butter is expensive!!), and i used 160g of chocolate instead of 115g. since chocolate consists of fat like butter, this alteration doesn’t affect the recipe, and it even makes the brownies fudgier.

      I just baked these today. I'm almost positive the butter is in the wrong amount. It should probably be 1 1/4 sticks of butter, or 10 tablespoons, instead of 1 1/4 cups. Two and a half sticks of butter is too much!

    i dont knw wht mistake i did.. but it took alot of time to get it baked.. after 1.5 hrs it was still undone.. and i used an 8 inch sqaure pan .. and for me it was too buttery.. 😣
