What’s great about baking is sharing it with everyone. After I got married and we moved away I slowly stopped baking bc it would just take us forever to finish desserts. I mainly made things I can freeze like cookies and just pop a couple dough balls in the oven when we craved. Now that we have 3 kids my husband and I hopping back into the baking train and I’m so excited. So on Christmas my mom sent me a baking set for my present and I became sort of a little chief in our household. I have been making a lot of deserts that turned out to be amazing. john, i know you like tips so here’s mine! i’ve perfected a cheesecake recipe over 8 years (i like to make them into little cupcakes). it’s very similar to yours, however, i do add about 1/3 cup of sour cream OR plain greek yogurt with a tbs of lemon juice. it gives the cheesecake a nice tangy flavor i know you’ll love!
@@staceymaepearlnolan2089 my measurements are not quite the same. i like to watch my sugar intake so, for instance, for 16 oz of cream cheese i would add 1/3 cup of sugar, not 1/2 (especially since the brownie is already very sweet). also, i do fold in whipped heavy cream to my batter as well! gives it a very light and fluffy texture

They look beautiful and they have a nice rich chocolate taste but they need several modifications to improve the taste and texture and the blog recipe does not match exactly the directions on the video. I found them too sweet, gooey (that's because the written recipe reduces the temp to 325F...) greasy, and I could taste the salt. I did use scales to measure the flour and sugars. I understand he is not a chef, so I appreciate the idea and his effort to make all those fun videos though. I will definitely make them again with adjustments.
I tried this recipe in 8” square tin. I don’t know what I did but i think I needed a bigger tin it grew like a cake but it did not fail on looks nor taste!!! Absolutely gorgeous!
I made these and they are really good! I reduced loads of sugar (130g each instead). After baking, the brownie just seemed so wet and the oil and batter seemed to be separated. But id already baked for the initiate +45 mins. So I just took it out (almost threw it out) and put in the fridge. Overnight, it firmed up & became a fudgy brownie

Note, for anyone, like me, who is going to make these after printing the recipe there are some differences. First - The printed recipe says to use a 8x8 pan but he used a 9x9 in the video. I don't have an 8x8 pan and I jury-rigged my 9x9. Luckily I watched the video before I spread the cheesecake layer, so I scraped the batter into a 9x9 pan. Also, the printed recipe doesn't say to reserve 1/2 cup of the batter so I reserved that when I put the batter into a 9x9 pan. It also says; "Add chocolate-cheesecake spread with skewer." I found that wording really confusing, especially since I didn't know I was supposed to reserve 1/2 cup of batter. Anyhow. It's in the oven and I think it will turn out. What I learned is I should watch the video, print the recipe, and make sure everything is the same.

Yes, I *love* this channel, but that's my only complaint: the procedures sometimes don't match the video and details and ingredients are quite often left out of the written recipe. I think he needs to hire a proof reader!
Having to go to 3 different places just to make sure you've got the recipe right is probably why I haven't made these yet. I'm not down with running around the net, just to make sure I'm not double and triple checking myself to make sure the dessert comes out correctly. & Watching the video at 1.25 speed to follow along isn't ideal either.

Hi there. Hoping you can help. What was the consistency of your brownie? Mine is pretty much how is tasted when it was raw. And I cooked it 40min total. I'm putting it back in the oven now but it's been in the fridge for 2hrs. I made two batches. The one that I took a piece out of, I noticed the brownie batter started melting pretty much. Ugh I'm so sad idk what to do
@@lns4life the consistency was very smooth, like solid fudge. It is similar to the batter but it is cooked, smooth and warm. If you were waiting for it to be spongy, you will not get that. He said in the video it won’t come out as a cake.

Its AMAZING!😍😍😍 I made it 3 times in a week now due to high demand of this cheesecake brownies from my families n friends. I did reduced both sugar by half (100g each) n im using bittersweet+dark choc (For those who's asking) *16oz creamcheese = 454 g According to the recipe in his web, the bake time is 350°F / 177°c for 10 minutes then 325°F / 163°c for another 35 min (or until less 'jiggly') Total bake time - 45minutes Then i let it cool down to room temp for a while before chilling it in the fridge to set Thank you john for this amazing recipe!
Been making this many times, and was a successfull since the first time. It is the best brownies I've ever had, I couldn't eat other brownies anymore now lol. But I reduce half of the sugar in the recipe because it's too sweet for me as an asian. So grateful for finding this recipe, will try his other recipe as well.
The difference between your trivet and a kitchen towel is that the kitchen towel doesn't let the bowl dance - whereas the trivet sways it everywhere and you may actually lose control of the bowl and watch is slide onto the floor. That's the true function of the towel - no sliding, full friction.

Last weekend my sisters and I had a Sister slumber party, our last get together at our moms house. She passed at the beginning of the year. I made the one dessert that she loved... a Pavlova filled with lemon curd whipping cream and homemade blueberry and strawberry jam dollop on top (I couldn't find fresh berries so I improvised). You and I are kindred souls when it comes to brownies. If I want cake, I'll make a cake. Brownies are meant to be fudgy and chewy and you can't change my mind because I've had cake brownies and they're ALWAYS too dry and bland. Where my fudgy brownie gang at?
I do the same thing with my cheesecakes ... once they are finished baking, I turn the oven off and just crack the door and leave them in the oven for about an hour or so. NO CRACKS!! Love your recipes, John!! They are works of art.

I heard what you said about using the trivet under your bowl. I like it because it cuts the noise. However, the trick about rolling a towel into a snake and wrapping it around the bottom of the bowl is to keep the bowl in place whilst beating or folding. I use a small mat that I cut from some of that rubberized kitchen shelving liner. It's definitely non skid (my husband uses it whilst using his router and it holds his work quite well). But I bet, this rubberized mat would be insulating as well. Would be worth a try to find something non skid as well. ❤🌅🌵😷

I make this recipe allll the time, it is amazing! usually, instead of swirling on brownie batter i melt peanut butter and swirl it on. It tastes AMAZING!! Highly recommend this recipeee

This was so good! I put too much cocoa powder by mistake and added more butter to fix my mistake and it still came out good, it’s like a chocolate bar with yummy cheesecake on top, delish!
Hi there. Hoping you can help. What was the consistency of your brownie? Mine is pretty much how is tasted when it was raw. And I cooked it 40min total. I'm putting it back in the oven now but it's been in the fridge for 2hrs. I made two batches. The one that I took a piece out of, I noticed the brownie batter started melting pretty much. Ugh I'm so sad idk what to do
@@lns4life the consistency was very smooth, like solid fudge. It is similar to the batter but it is cooked, smooth and warm. If you were waiting for it to be spongy, you will not get that. He said in the video it won’t come out as a cake.

Hey, do you know why he melted the chocolate chips with the butter in this recipe unlike in the original chocolate brownie recipe? In that one he added the chips into the batter and stirred. Thank you if you can answer my question.

I did reduced both sugar by half (100g each) n im using bittersweet+dark choc

*16oz creamcheese = 454 g
According to the recipe in his web, the bake time is
350°F / 177°c for 10 minutes then
325°F / 163°c for another 35 min (or until less 'jiggly')
Total bake time - 45minutes
Then i let it cool down to room temp for a while before chilling it in the fridge to set

Been making this many times, and was a successfull since the first time. It is the best brownies I've ever had, I couldn't eat other brownies anymore now lol. But I reduce half of the sugar in the recipe because it's too sweet for me as an asian. So grateful for finding this recipe, will try his other recipe as well.

The difference between your trivet and a kitchen towel is that the kitchen towel doesn't let the bowl dance - whereas the trivet sways it everywhere and you may actually lose control of the bowl and watch is slide onto the floor. That's the true function of the towel - no sliding, full friction.

John, John, John.... where was this recipe last week?? I could have used it then although I'm still happy to have it now, lol. Last weekend my sisters and I had a Sister slumber party, our last get together at our moms house. She passed at the beginning of the year. I made the one dessert that she loved... a Pavlova filled with lemon curd whipping cream and homemade blueberry and strawberry jam dollop on top (I couldn't find fresh berries so I improvised). I do the same thing with my cheesecakes ... once they are finished baking, I turn the oven off and just crack the door and leave them in the oven for about an hour or so. NO CRACKS!! Love your recipes, John!! They are works of art.

I heard what you said about using the trivet under your bowl. I like it because it cuts the noise. However, the trick about rolling a towel into a snake and wrapping it around the bottom of the bowl is to keep the bowl in place whilst beating or folding. I use a small mat that I cut from some of that rubberized kitchen shelving liner. It's definitely non skid (my husband uses it whilst using his router and it holds his work quite well). But I bet, this rubberized mat would be insulating as well. Would be worth a try to find something non skid as well. ❤🌅🌵😷
