The Science Behind the Perfect Brownie - Kitchen Conundrums with Thomas Joseph

- There are those that would describe the perfect brownie as cakey with an airier interior, and then there are those who prefer them on the fudgier side. And while the ingredients in both recipes aren’t that different, it’s the ratios that vary just enough to totally change the texture of the final product.

The Difference Between Fudgy and Cakey Brownie Mix - Kitchen Conundrums with Thomas Joseph
/ everydayfoodvideos - Хобби
For English people (I mean the rest of the world, sorry!)
170g of dark chocolate 🍫 (113g for Cakey)
113g of butter (56g for Cakey)
200g of sugar (people said 200g tastes good but apparently I messed up it’s more like 300g)
3 eggs 🥚
32g of cocoa powder
A pinch of salt
80g of flour (198g for Cakey)
Put oven to 180C
👍🏻
Thanks 😊
I have never met you and probably never will meet you, but I love you
Valeu bixo
Wow thank you so much. This is for people everywhere in the world except murrica
This is exactly what I was looking for in the comments. Thanks!
The part I like the most is where he actually scraped all the brownie batter out of the bowl. I hate when chefs just pour and leave half the batter in the damn bowl.
they just living it for the camera )) we don't know may be they licking the bowl later on with vengeance ))
Omg, so true.

I love how this video goes straight to the point.
I wanted to write out the fudgey brownie recipe for myself so I figured I'd share!
6 oz/170 grams bittersweet chocolate
1 stick unsalted butter (1/2 cup)
Melted together
1.5 cups sugar slowly added to the chocolate mix
3 eggs, one at a time
1/4 cup cocoa powder
little bit of salt
1/2 cup + 2 tbsp all purpose flour
8x8 inch brownie tin
Cook at 350 degrees F (175 C) and bake 35-40 mins
Your face looks fudgey... I'd eat it.
You know if you'd have suggested eating something else I might have been intrigued but suggesting to eat my face just doesn't sound as appetizing.
do you know the weight of chocolate in grams
170 grams of seductive flavour, love.
I don't have anything to measure cups, does anybody know what this recipe would be in grams?
There are people who prefer cakey brownies? I always thought those were made by accident.
We don't talk of such people.
My grandmother made cake brownies. They were a bit like German chocolate cake. She used cocoa powder & Wesson oil + peacans. I loved them because they are not too sweet. I have never been able to duplicate them.
had to giggle at this comment, spot on !
Lmao! Me too. ;;;_;;; I mean....I want to bite into a soft, gooey, chocolate....just...give me a fudge brownie.
Me too, lol.
I love how detailed his recipes are. You can never go wrong with such meticulous description. He is always my first go-to when I am looking for a recipe.
Thomas Jones this is by far the best chocolate fudge brownies recipe I have ever watched and felt confident enough to replicate. So simple and yet so exquisite. Thank you from the bottom of my heart
FUDGY BROWNIE:
95g flour
170g chocolate
3 eggs
113g butter
25g cocoa powder
300g sugar :)
Thank you!
Jade Shinymist
no problem! :)
Is that for the fuggy one?
1029wan
yes its for the fudgy one :)
Thanks!!!
If I'm in the mood for a brownie, I fully expect it to be fudgy. If I wanted chocolate cake, I'd just get chocolate cake. But that's not what a brownie is supposed to be.
+I'M A KIWI If it's fudgy then it's not a brownie - it's fudge....
+Ry TRUEEEEEEEEEEEEEEEEEEEEEEEEE
+Ry Yeah, and not only that, but even chocolate cakes are supposed to be nice & fudgy.
After many failed attempts at BOXED brownie recipes, I stumbled upon your video and I have to thank you so much for this recipe and break down! They came out perfectly last night!
Such a good presenter. Your story telling on how to bake is one of the best.

How much water to add for melting the chocolate and butter stick?
Nimish Dahake just make sure it isn't touching the bottom of the bowl, the steam heats the chocolate and butter and melts it :)
* 6 oz Chocolate
* 1 stick butter
* 1 1/2 cup sugar
* 3 eggs
* 1/4 cup cacao powder
* salt
* 1/2 cup & 2 tbsp flour
--> 35/40 min, 350
I love, love, love brownies, thank you, Joseph for the recipe and the tips for making perfect brownies. Wishing everyone a happy, healthy, and prosperous New Year!
hands down the best brownie i have ever made in my whole entire life and i recommend adding white chocolate chunks makes it sooo goooddddd
Let the brownie cool before cutting? While you can already smell the chocolaty, yummy brownie? No way! Just impossible!
Good luck with the painkillers then
+ysa h Use the Force... Resistance is *not* futile.
Try beating the eggs and sugar into a frothy mix before adding to the chocolate, this yields a fudgy decadent brownie that still has some air and volume.
I tried your method, my cake is chocolaty but still has volume in it. Thanks!
Great to hear :)
Love your recipes, you are very clear and precise when it comes to explaining the recipes. The great of all is that you keep your recipes very short, keep it up . Thumbs up for that.
Thomas is the cutest thing on the planet. Love him. Very sweet and charismatic. So handsome and looks like he really loves what he's doing. 🍰🍫❤

I'm always fascinated with Americans unit measurement system, counting with sticks and cups and fingers and feet :)
Are we supposed to all have the same foot and cup size !?
well i mean as weird as the units themselves are, measuring tools are generally produced to a standard... while the same unit can vary across countries.
We feel the same with you...
my thougts man
Each unit are standardized. e.g. 1 cup = 250ml. Metric systems ftw though
1 cup is actually 237ml
I made the fudgy version today and it turned out really well! Thanks for the recipe and the explanation. My siblings only comment is to reduce the sugar as it is sweeter than their preference so I will do that next time. Thanks!
Just wanted to take a second and say thank you Thomas, I love the show and learn so much... plus I enjoy just watching you teach lol

Huge fan of fudgy brownies and literally make your recipe all the time! Thank you for this, it's so easy and tastes so damn good💕
Thank you so much for this amazing recipe. This really helped me understand the basics of a cake and brownie. I tried it and it came out perfect. 😊
Yo guys DO NOT forget to consider the size of the tin you're using. I used a bigger one (approx. 8x15 in) but the same ratios and amounts as in the video cause I like brownies thinner, so it definitely does not take 35-40 minutes (for fudgy one.) But the recipe is amazing! although if you use larger tin, you might also consider baking on lower temperature (maybe 335'F / 165'C) so that the corners don't get burnt until the center is baked. Thanks for the recipe!
Marek Tóth or you can reduce the baking time
Anyone have cakey brownie video or Thomas plz share thanxx
hello;thanks for sharing
Omg this is exactly what I forgot to do so I completely lost the full fudgeness but they still tastes pretty good tho

If flour is pronounced as flower, why is tour not pronounced as tower?
hilal hk What's bothering you? and why all caps?
because English.
+Northwest521 They have different linguistic roots. Tour is greek/latin/french; Flour is middle English. The plural of tooth and foot is teeth and feet because of the words' germanic roots whereas the plural form of moose is NOT meese because it derives from eastern Abnaki ( Quebec).
TJ Reighn Thanks.. that was very informative.

I tried this recipe ( for fudgey brownies ) and they turned out soo good. I'm eating brownies for the rest of my life (:

Thank you for explaining the science of fudgy and cakey brownies so clearly
Thanks ..Really I watch you guys for everything ..it really helps to understand how the science works in each recipe when your looking to change a recipe to get a different result
I tried the fudgy brownies and they turned out awesome! 😀I suggest placing in the fridge overnight before eating; it becomes moister.
Hello I am from the UK and find it inconceivable that in 2015, a "stick" and a "cup" is a recognised unit of measurement. Have you Americans lost your minds? Sir Issac Newton would turn in his grave.....other than that, this was an excellent video.
It's not "us Americans", it's this video. You can't possibly believe we all use the term, "one stick of butter"; that's ridiculous.
Sticks of butter come with measurements on the packaging, and every recipe I've come across asks for specific amounts like 1/2 cup or so, and I just cut the stick where the marking is for 1/2 cup. I've never been prompted to just use, "one stick", whatever that means.
I don't understand why people always look at stuff like this and assume aaaall Americans do this or are like this but it's really annoying.
And even if we DID, it's just butter :l not that serious.
Oh, and yes, a "cup" is a unit of measurement. Not like a coffee cup, or something. I BELIEVE (not entirely sure) that a cup is equal to 8 oz or so. We have actual measuring cups, we don't just grab a drinking cup and use that to measure lol
+Jay Wilkinson das ist 100g
+Jay Wilkinson im from the uk but i prefer their measuring
I'm from Germany and I find the measurement of cups way easier than grams😄😄
I tried this just earlier and definitely the most real video i've ever seen. Everything was perfect and yummy. Will bake again 🖤❤
I tried this recipe ( both for fudgy as well as chewy brownies) & it turned out mouth-wateringly delicious....#AMAZING
Person who doesn't know me well: Do you like fudgy brownies or Cakey brownies? Me: Yes.
Kelsey Gertje lol you are funny :D
I made a double batch of the fudgy recipe in this video in a metal 9x13 pan (with square edges, not sloped) at 325⁰F for 48 min and it was perfection. Just in case anyone else is wondering about the time and temp like I was ;)
Hey does your oven heat up really quickly? Cuz mine gets really hot, and I lower the setting by almost 30 to 40 degrees while baking so idk how long to do it for fudgy brownies
@@zahraali2858 i would do 300⁰F then... I have a stacked double oven and my top smaller oven bakes these a tad too hot/fast and the middle kinda collapses. I also found that if I cooled them by placing them on the stove/near the oven, the ambient lingering temp helped prevent that caving while I was finding my perfect temp and time.
Easiest brownie recipe ever! And less messy! I reduced the sugar to 1 cup (200g) bc i thought that 1 1/2cup (300g) gonna be too sweet for me, and it turned out great. Thank you!
You're such a good teacher!
Perfect brownies. My family loved them. Took me forever to find the perfect recipe and with a crisp crust and fudgy on the inside. thank you!
Do you have the crisp crust with this recipe??
This is why I love baking so much, it really is just applied chemistry at its best!

just a question who the hell prefers a cake brownie. like really
I didn't even know they were a thing, I thought brownies by nature were fudgey.
i do, i make my brownies cakey since day 1. Tho i didnt know anything about this science behind brownies, i just bake them without a recipe and they all came out cakey
I hate fudgy brownies... Sometimes it takes forever to chew and almost chokes me
I love both! fudgy and cakey!
i like fudge brwnies
I like the way you put all this together, it reminds me of how we explain things in pharmacy school hahaha.. i'll be trying the fudgy brownies recipe. Thanks
Bravo! I loved the recipe!
I used 50-60% cocoa bittersweet chocolate and decreased the sugar amount into 1 cup and 1-2 table spoons. Also instead of using 8x8 inch tray i used 2 trays, each one 20x15 cm and baked them on 160 celsius temperature for 20 mintues.
This way i got thinner pieces and more of them :)
It came out delicious and fudgy!!
Thank you kind lady for the recipe
God bless
I tried this recipe and the brownies came out really chewy, love it
I don't have any money for ingredients or a job or a decent life but watching this kind of makes me happy while imagining how delicious it might be

+rusmas rudsteru haha i like you

Just made this fudgy brownie and swear it turns out OMG thanks Thomas ❤
I did this five times and I'll do it again and again it's literally delicious
Ok so I made this, and this was hands down the BEST BROWNIE I've EVER taste. It was fudgy af at top (so much that it was like biting the sugar that a candy cotton leaves on your mouth) and the other part was so soft that it melted on my mouth.
I had to leave on the on the oven for more than an hour (cause mines is one of those that is electric 😂) and it wasn't as fudge as I wanted it when it came out. But I left it on the refrigerator through the night and oh my. Next morning I felt like in heaven. So yummy.
Isn't a cakey brownie just.. a chocolate cake?
nah you usually don't use chocolate in chocolate cake sponge, it goes against proper raising.
Cypeq So... its chocolate cake, without chocolate?
You would use chocolate for filling, glaze, genache layer... etc.
Cypeq okay. thanks
I guess Cakey-er would be a more accurate description.
I just made your brownies and its sooooooooo goooood.best brownies i made..crunchy and chewy inside..thanks for the recipe..
Bravissimo, Thomas!
This is such a fantastic recipe. In addition, you should try a bit of espresso in the dough, and/or adding cacao nibs, for extra crunch. Love it!
Espresso powder?
OMG someone finally gave me the chewy brownie secret!!! Thank you! Does the amount change?
Used this recipe and the brownies taste amazing!! Thank you :)
It's the most delicious fudgy brownies I've ever made. Thanks for the recipe
I made the fudgy ones a few days ago, and I really liked them! My dad said they (the brownies) were a bit dense, but they got better once I started to experiment with lowering the temperature.
i wonder why are they called cakey, cuz cakey brownies are basically cake, is it possible for a brownie to be a cake if we put cream or any topping on it? im confused
I added chocolate, candied orange peel and roasted almonds😁 always coat your add-on ingredients in a layer of flour before putting them in batter so that they don't sink to the bottom❤️
I made and it came out very chewy and sweet but surprisingly I loved it!
Thank you!! My friend and I had no clue how to make brownies but ours came out very good! 💖
I like the knife in hot water, very clever.
Fudgy Brownies all the way!
I just made the fudgy brownies and they turned out like the ones in the video, but they were really sweet. For anyone about to make this, I suggest using bittersweet chocolate as it will balance the flavour without upsetting the ratio of sugar to the other ingredients. Oh and the full recipe makes a lot of brownies so you might want to halve it. Overall, a great recipe that I'll make again!
I uses 60 percent dark chocolate and used cup and quarter cup of sugar.. well it came out very balanced and with a rich taste
Thank you so much. I tried it today and it turned so much yummy. 🎉🎉
You gave out best tups ever for my choklit chip recipe.. No fail with you. Now brownies. Thank you so much. Ur a doll. Im gonna sell these
as a brazilian some measures sound alien to me. how much is a "stick of butter"?
113g 😊
Gastronomic Disaster A stick of butter is a 1/2 cup
it's literally a stick of butter less of a measurement and more of how it's packaged in the us
Gastronomic Disaster Acho que se você comprar aquela manteiga em pedaço, é só corta-la ao meio.
Like people said, it's around half a cup of butter. But a "stick" isn't a unit of measurement. Butter in the US is usually packaged in a solid block, or a stick of butter. img-aws.ehowcdn.com/615x200/cme/cme_public_images/www_ehow_com/i.ehow.com/images/a08/2g/en/convert-grams-butter-sticks-800x800.jpg
I made this yesterday and it's the bomb. I have an issue with the sweetness tho it's a bit too sweet to my liking (but I'm the type of person who doesn't like super sweet stuff) but apart from that it's super yummy. I even managed to get that crinkly top layer which got me excited hihi. I'm a novice baker and this is only my second time to bake brownies my first attempt was a disaster it was burnt and doesn't taste nice at all. This time it's 90% perfect (and I'm quite sure I'll be at 100% once I adjusted the sugar next time)
*In case you're wondering, I used 1 cup of sugar (3/4 white 1/4 brown). Next time I plan to halve it and do a 3/8 white 1/8 brown ratio. But I'm also keen on doing 3/4 cup instead (1/2 white 1/4 brown) I'll figure it out when I make this again
Do we use top and bottom heat? Or top only? And how to know between 30-40 mins tht its perfectly cooked?
I tried this recipe yesterday and the best brownie I've ever made so far. Yey!
Our absolute fave go to recipe for fudgy brownies!
