just to make life easier for everyone here is the recipe:
    Ingredients
    - 1 cup butter
    - 1 cup brown suger
    - ½ cup granulated sugar/ white sugar
    - 2 eggs
    - 2 teaspoons vanilla extract
    - 2 and a ¼ cups of all purpose flour
    - ½ teaspoon baking soda
    - 1 teaspoon coarse salt
    - 2 cups chocolate chips
    Method
    1. Preheat oven to 160 degrees (fan forced) or 180 degrees (conventional oven) (THIS IS IN CELCIUS)
    2. Put butter, brown sugar and white sugar in electric mixer and cream them together.
    3. After they have creamed put eggs in one at a time, then put the vanilla extract.
    4. After it is all mixed stop the mixer. In a separate bowl put the flour in it and add in the baking soda and salt, whisk them very well.
    5. Add the dry ingredients into the mixer and mix them on slow speed until just combined, then add the chocolate chips and mix until just combined (don’t go any further or it’ll toughen the cookie
    6. Baking tray with baking paper and get about a tablespoon of cookie dough and put on the tray and have each two inches apart.
    7. Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely. Store cookies in an airtight container at room temperature up to 1 week.
    ur welcome :)

I never knew that baking soda "spreads" and baking powder "puffs" (neeewb!). I just thought that both makes baked goods puff up. Interesting and good to know! No wonder my cookies are always puffy and not spreading much. I use baking powder predominantly. GREAT GREAT INFORMATION!!

I tried the thin and crisp one and it WORKS. The dough is pretty strange and sticky I was scared at first (and its also my first time baking) I put it into the fridge to make it not that stick (it still sticks a lot tho) but after I baked it, it came out great! Remember to cool it after you baked it, because the cooling helps alot. So if youre scared its not going to work, your wrong just try it. It really works :)

My cookies don’t always turn out the same. Sometimes they are perfect- crispy outside, soft and chewy inside, and sometimes they aren’t as good, not spreading as they should.
Now, I always chill the dough, but not always for the same amount of time. Sometimes I freeze the dough balls, too.

This is one of the best chefs out there. He is concise and precise. And he occasionally comes up with fun statements like "Soda Spreads; Powder Puffs." :)
I think the main reason is that baking soda does not leaven aggressively like powder. So it tends to spread out more during baking.

Hey, guys. I made the soft and chewy ones with a little bit more dark brown sugar and less white sugar, it almost looks double chocolate cookies. I only used half of the materials, but actually made 60 cookies. I don’t think mine is tiny, but most cookies are too big in America, too much calories for one cookie. And the time is very important, 8 mins actually makes my cookies crispy, like 5 to 8 mins makes it chewier.

Stick with the chewy cookie recipe, increase the size of the cookie and adjust the baking temperature and time accordingly. The outside will brown first and the center would be less "cooked", thus leaving crispy edge and chewy center.

The best chocolate chip cookie recipe I found is as follows:
1 cup of melted butter (preferably browned for deeper flavor)
1 1/2 cups dark brown sugar
    1/2 cup white sugar
    1 egg plus 1 yolk
    2 teaspoons vanilla
    1 teaspoon espresso powder
    1 cup bread flour
    1 1/2 cups all-purpose flour
    1 teaspoon baking soda
    1/4 teaspoon baking powder
    1 teaspoon salt
    1/2 cup chocolate chips
4 ounces fine chopped dark or bittersweet chocolate
    *or*
2 cups of chocolate chips, if not using chopped chocolate
I would suggest using an electric hand mixer or stand mixer, but this can be done by hand. Beat the butter and sugar together until the butter has cooled to be about room temperature. Add in eggs, vanilla, and espresso powder and beat vigorously until the mixture is thick and almost fluffy in texture. In a separate bowl, sift together the flours, baking soda, baking powder, and salt. Fold dry ingredients, chocolate chips, and chopped chocolate in until fully combined. Use a small scoop or a table spoon to form equal sized balls of dough, place on a baking sheet with space between once they spread, and bake at 350 F (180 C) in conventional or 325 F (160 C) convection oven for 12-14 minutes.
I find that this recipe produces a cookie that is soft and chewy but crispy on the edges with added depth and warmth from the brown butter and espresso powder. The combination of bread flour and all purpose flour makes them chewier than most. The baking powder adds lift and cakiness that many cookies lack.

You can use other alterations to achieve these differences, as in substitute margarine or shortening for some of the butter, or use cake flour instead of all-purpose flour, or chill the dough more or flatten them with your hand before baking.

This recipe really works in chewy chocolate chip cookies!!! Here is a tip from me, just scoop the cookie dough out and fridge until set, about an hour and bake until their middle slightly bouncy and after cool down the chewiness of the cookies will be spot on and the cookies will not too flat to eat. Everyone got to try this!!!

If you're out of brown sugar (or if you're like me and your brown sugar always goes stale before you can use it all), simply use entirely white sugar and add one tablespoon of molasses per cup of sugar used while creaming the butter and sugar. Brown sugar is just sugar with molasses either retained or added back in after refining, after all.

  • @KenzLovesMovies
    @KenzLovesMovies 8 лет назад +2

Butter and sugar affect spread, yes, but you can also try using flours with different protein levels--It may sound weird, but my favorite chocolate chip cookie is a bread flour one--they are a little dense, and they spread very little. I'd encourage people to play around with it.

After that i made a second batch it was cakey again i think the temperature and timings effects but no one talks about it like preheating oven and how to adjust oven heat it shouldn’t be too hot and not too cold either
