This recipe popped up at a very opportune time. I am NOT a fan of fruitcake, but my partner is and this cake looked so easy. Yesterday, he was bitterly disappointed that he let a home grown pineapple overripen and was going to turf it when I said to keep it for this cake. I pureed it to crush and made the cake today. I didn't make the syrup, but my partner really likes the cake and it IS SO FREAKING EASY!!!! I like how the bicarb softens the fruit. The texture is great. A real winner here and a great way for us to now use our leftover pineapple, of which we have a lot living in FNQ.

I've been making this cake regularly for well over 30 years though with more dried fruit and without the nuts. Always keep a can of crushed pineapple in the cupboard for this very purpose. I shall try your version next time. Never heard of claims of its Australian origins before!
Yeah it's an oldie, I've been making it for years as well, I started to put the syrup on it only a few years back, because it just adds that little something to it. As far as I know it's an Aussie thing, originally a British cake but we threw a can of pineapple in it and called it Australian.😉
That's a great idea, also make sure you have enough syrup, the orange I used at my mum's was big and juicy, you should have about 1/2 cup of syrup to pour over in total.

I still have the original recipe which is from the book that came with my Sunbeam electric frying pan. The 500gm of fruit can be any combination of dried fruit. Dates, figs, chopped dried apricots are great in this. I like your take on it, especially the citrus sauce!

@leescooking many years ago I had a market stall in Wollombi in the Hunter Valley. I used to sell slices of this cake (and many other types of cake) with freshly brewed coffee. Now I'm resisting the urge to pop up to Coles to get a tin of crushed pineapple! Although I may have one in the back of the cupboard...
No benefit to be honest, just this is an old recipe and back in the day there were no fans in ovens. If you want to use the fan, just lower the temperature by about 20 degrees C. i.e. 160 no fan equivalent to 140 with fan, 150 no fan equivalent to 130 with fan. I hope that makes sense.
Lee, I absolutely loved this fruit cake! I had it Gluten Free, using half buckwheat flour and half gluten free self-raising flour. I also used Rapadura sugar instead of refined sugar. It was honestly the best fruit cake I have EVER had!!! There was a good splash of Sherry too, YUM!! Also, highly recommend frying a slice in butter, mmmmm!
Hi from Melbourne, my only criticism is Why didn't you use Australian Crushed Pineapple - Golden Circle. I can't abide buying foreign produce and products when there is a perfectly good Aussie one to support and keep jobs and money in our economy. I haven't tried. But I think sugar is sweeter, so you could just add 1/2 cup molasses and 3/4 cup sugar. Or just add a few drops of Parisian essence which darkens instantly (just for colour there's no flavour). This recipe is pretty forgiving though, I made one yesterday using honey instead of sugar and added a few more spices. Turned out great.

It really doesn't matter; you could use either the pumpkin pie or apple pie spice or substitute with allspice or more cinnamon. Yesterday I made one at work and I added 1 teaspoon of ground ginger along with the other spices. The ingredients in mixed spice typically are cinnamon, allspice and nutmeg.
@@leescookingwhy mixed spice remains an Australian-UK thing that’s not taken hold in the states is a mystery. I just make up a 250ml jar of it in the spice grinder and one or two of those carry us through the season. Same with caster sugar- far superior to granulated in most bakes. And a ⭐️to you for adding that lovely ginger. Tx for the recipe/technique. ❤🎄🫶🏻
@@reneelascala5050 Oh you're most welcome. Yeah, mixed spice is so good, I've read that pumpkin pie spice is close to it. You're right with caster sugar, definitely better for loads of bakes, I always use it for pavs, sponges and anything I need to be super light.
MIxed Spice is a blend that you can buy in Australia, and I believe the UK, but you could substitute with any other spice you like, I've heard that pumpkin pie spice is similar, I also sometimes add more spice to this fruit cake, including a teaspoon of ground ginger which is lovely.

Oh, how wonderful, I would love to spend a Christmas in London one day. 2 cups of flour is equal to 250grams. Also, a cup of nuts is about 150 grams. Have a lovely Christmas.
Lee ask your mum about the christmas cake and putting the pineapple rings on the bottom of the pan (and inserting a whole glace cherry in the pineapple circle).. it has a really syrupy look when finished and i think it might even be called a turnover one? anyway.. to die for.
@@leescooking yes i think that is the one and as you are doing blasts from our past.. there is another one.. not a recipe so much because no cooking involved. Do you remember whenever you went to visit someone the whole pineapple (fresh) was pulled out on display.. cut in half, and then served almost intact except the pineapple was segmented, with a little frilly toothpick a glace cherry, so you could just pull out the pineapple segment, and of course the whole lot was covered with freshly chopped mint to add flavour.. one of my favourites LOL.. OH and there is another one my mother can't remember how to cook but it was a banana pudding, that was basically just mash bananas, i think it had a condensed milk tin to it and then banana slices layered over the base of the flan/pie crust .. and the filling on top.. then of course lashings of cream on top. I'd love to try and make that again!

I have fond memories when we were little, our one big trip a year was to visit Queensland, 7 of us packed in an old station wagon, and visit the Big Pineapple and have 1/2 pineapple, segmented, and topped with ice-cream. It was so exotic to us back then. Food is so powerful like that, most of my memories involve food of some sort. I have many old cookbooks, I think I remember seeing one for a banana cream pie, that had a tin of condensed milk and bananas in a pie crust, I'll have a look this week and get back to you. 😄

Are you based in Australia too or just your parents? I'm an Australian, originally from Canberra. If you are interested in a different recipe for the same cake, even more simple than this one. I could get my grand mothers for you. She uses either pineapple or pumpkin interchangeably. Super moist too.....

I made one just a week ago with a good splash of rum, and the mixture was runnier, but it turned out beautiful. Just leave it in the tin until it is completely cool - I like to leave it overnight, in the tin, wrapped in a clean towel.
Generally cinnamon, nutmeg, cloves and sometimes coriander. I think if you are in the US, then pumpkin pie spice is a great substitute. I would just use what spices you like.
yeah, that would be delicious. I made another one a couple of days ago, and I bought the good fruit mix from our local health food store, the difference was amazing, big brazil nuts, cranberries, almonds etc. it was so good.
Shame that your calling it an "Australian" fruit cake but using Dole tinned pineapple in it.....last I checked Dole was an American brand with pineapple coming from either Philippines or Thailand. The recipe is one the Golden Circle put out over 30yrs ago, I have been making this cake in this time but ONLY using golden circle tinned pineapple!

No benefit to be honest, just this is an old recipe and back in the day there were no fans in ovens. If you want to use the fan, just lower the temperature by about 20 degrees C. i.e. 160 no fan equivalent to 140 with fan, 150 no fan equivalent to 130 with fan. I hope that makes sense.

Lee, I absolutely loved this fruit cake! I had it Gluten Free, using half buckwheat flour and half gluten free self-raising flour. I also used Rapadura sugar instead of refined sugar. It was honestly the best fruit cake I have EVER had!!! There was a good splash of Sherry too, YUM!! Also, highly recommend frying a slice in butter, mmmmm!

I can't abide buying foreign produce and products when there is a perfectly good Aussie one to support and keep jobs and money in our economy. I haven't tried. But I think sugar is sweeter, so you could just add 1/2 cup molasses and 3/4 cup sugar. Or just add a few drops of Parisian essence which darkens instantly (just for colour there's no flavour). This recipe is pretty forgiving though, I made one yesterday using honey instead of sugar and added a few more spices. Turned out great.

It really doesn't matter; you could use either the pumpkin pie or apple pie spice or substitute with allspice or more cinnamon. Yesterday I made one at work and I added 1 teaspoon of ground ginger along with the other spices. The ingredients in mixed spice typically are cinnamon, allspice and nutmeg.
@@leescookingwhy mixed spice remains an Australian-UK thing that’s not taken hold in the states is a mystery. I just make up a 250ml jar of it in the spice grinder and one or two of those carry us through the season. Same with caster sugar- far superior to granulated in most bakes. And a ⭐️to you for adding that lovely ginger. Tx for the recipe/technique. ❤🎄🫶🏻

MIxed Spice is a blend that you can buy in Australia, and I believe the UK, but you could substitute with any other spice you like, I've heard that pumpkin pie spice is similar, I also sometimes add more spice to this fruit cake, including a teaspoon of ground ginger which is lovely.
I'm doing this one for Xmas the fruit cakes in the shops today are dreadful dry no fruit 😊😊😊

Lee ask your mum about the christmas cake and putting the pineapple rings on the bottom of the pan (and inserting a whole glace cherry in the pineapple circle).. it has a really syrupy look when finished and i think it might even be called a turnover one? anyway.. to die for.

@@leescooking yes i think that is the one and as you are doing blasts from our past.. there is another one.. not a recipe so much because no cooking involved. Do you remember whenever you went to visit someone the whole pineapple (fresh) was pulled out on display.. cut in half, and then served almost intact except the pineapple was segmented, with a little frilly toothpick a glace cherry, so you could just pull out the pineapple segment, and of course the whole lot was covered with freshly chopped mint to add flavour.. one of my favourites LOL.. OH and there is another one my mother can't remember how to cook but it was a banana pudding, that was basically just mash bananas, i think it had a condensed milk tin to it and then banana slices layered over the base of the flan/pie crust .. and the filling on top.. then of course lashings of cream on top. I'd love to try and make that again!
@@thevocalcrone Yes I think I remember that, and the pineapple was chilled. I have fond memories when we were little, our one big trip a year was to visit Queensland, 7 of us packed in an old station wagon, and visit the Big Pineapple and have 1/2 pineapple, segmented, and topped with ice-cream. It was so exotic to us back then. Food is so powerful like that, most of my memories involve food of some sort. I have many old cookbooks, I think I remember seeing one for a banana cream pie, that had a tin of condensed milk and bananas in a pie crust, I'll have a look this week and get back to you. 😄

Are you based in Australia too or just your parents? I'm an Australian, originally from Canberra. If you are interested in a different recipe for the same cake, even more simple than this one. I could get my grand mothers for you. She uses either pineapple or pumpkin interchangeably. Super moist too.....

@@lynnvosey5311 If you added a splash of alcohol that's why. My dad doesn't like alcohol in cakes so that's why the mixture in the video looks less runny. I made one just a week ago with a good splash of rum, and the mixture was runnier, but it turned out beautiful. Just leave it in the tin until it is completely cool - I like to leave it overnight, in the tin, wrapped in a clean towel.

What is in mixed spice
Generally cinnamon, nutmeg, cloves and sometimes coriander. I think if you are in the US, then pumpkin pie spice is a great substitute. I would just use what spices you like.

How much pineapple if i have to crush it myself
Oh fresh pineapple would be wonderful, I would aim for about 1 1/2 cups
I made it today with an overripe home grown pineapple. Used 860g or thereabouts that I pureed in food processor. Worked a treat.

I admit I don't like fruit cake at all. The candied colored dyed cherries are awful. But this looks good. I'm thinking dried cranberries.
yeah, that would be delicious. I made another one a couple of days ago, and I bought the good fruit mix from our local health food store, the difference was amazing, big brazil nuts, cranberries, almonds etc. it was so good.
I have made this recipe for years but avoid Dolce brand pineapple as family don't like it

Shame that your calling it an "Australian" fruit cake but using Dole tinned pineapple in it.....last I checked Dole was an American brand with pineapple coming from either Philippines or Thailand. The recipe is one the Golden Circle put out over 30yrs ago, I have been making this cake in this time but ONLY using golden circle tinned pineapple!
Yeah, I understand, and agree about the pineapple. Another person commented on this, I was at my parents' house, they live a flight away from me, this is what they had in their pantry.
