      Hello Henrietta, how lovely to hear from you all the way over in there :) For the cake tin you would use a 9 inch round or square or even a large loaf tin would also work :) Happy cooking Annette

    I must try this cake. I love boiled fruit cake and the recipe I have is delicious but it has butter and sugar. This would have a lot less calories and fat. #symply2good

    The dry fruit and pineapple are “Loaded “ with sugar ! So still not safe for diabetics,it dangerous to recommend it’s a perfect cake for diabetics,the flour has carbs which will raise insulin levels too

      Yes, you are correct but a traditional fruit cake has double the carbs so as I was advised by Diabetes Australias Dietitian a small slice is okay for people with diabetes.
