I was looking for a simple recipe for a quick cook and happened to find this recipe. Yes, you are right, it is our mum's simple and easy comfort dish. I decided to try your version and when I tasted the finished product, I did a jig and said out loud, "Mr Spice and Pans, your version is sooooh good!" I don't know why I did not say Mr Roland. I made this today and was fantastic. Really delicious. My variation was in the marinade, i used honey instead sugar, and used only watery kikoman soyasauce as i didnt have dark soya sauce . I also used chicken breast and some bones, not wings as well as rice wine from Borneo. Yumms

Hi, at 5:14 when you are reducing the liquid, roughly how long does that take? And do you need to constantly stir / shake it around during that process?
Hi Cheng Jun. Sorry for our late reply. You don’t have to constantly toss the chicken around when you’re reducing the liquid but do stir them every now and then so that the chicken doesn’t stick to the pan. When reducing liquid, don’t put the lid on as you want the liquid to evaporate. It would take about 10 mins or so. Yes please turn chicken around occasionally so that both sides of the chicken is equally covered by the sauce nicely. Hope this helps. Happy cooking!

Is the dark soy sauce the one you can buy at the local Asian market that has corn starch in it so that it is thicker? New at this type of cooking:)
