We started gardening when Covid came. Chinese eggplant was one of the first things we planted. We had a bumper crop! They were delicious. Creamy, peppery, just so yummy. We had SO many we had to get creative. Our favorites were Torta Talong, a Filipino dish where we roasted the eggplant then peeled the skin, dipped it into eggs and pan fried it. You can make the dish heartier by pressing seasoned proteins onto the top of the eggplant while pan frying. The other dish is Sichuan Pork with Braised Eggplant. Just so good. Creamy eggplant meets spicy pork with garlic, ginger, chilies. I’m so glad I stumbled onto “Hunger Pangs.” Watching you cook together is so much fun. More, please!
This is a great recipe, please keep this father/son team on the network, 1 thing I learned yrs ago from an experienced/seasoned italian chef In regards to eggplant, the top 3 are # 1 Sicilian which are the smallest but have less seeds & are the least bitter# 2 Italian which are a little more bitter with a little more seeds, # 3 Californian which are real close to the Italian eggplant, just a tip for folks, btw, try the Asian eggplant if you can find it, I have never had one & is not in stock in our grocers in my region of the U.S.

I love this series of hunger pangs. It brought back memories of my Po-Po cooking this for me. I love the relationship dad and son have cooking together. I hope they can make a cooking series for 2022 Chinese New Year Moon cake

More of the Pangs please. They have great chemistry and their banter makes the videos much more fun to watch. I mix equal parts olive oil and shrimp paste and dip eggplant slices or strips in it then roast them.
Just made this dish, the first one of the Chinese book, it’s delicious! Eggplant comes out velvety and the sauce is beautifully caramelized. Will def make again and again!

I viewed the video a few times and guesstimated the ingredients and I found the Holy Grail of eggplant dishes. I love that you don't need to salt and soak the eggplant, you go right at it and it is perfection of texture and flavor. It's in my regular rotation. Thanks guys!

While I love ATK, I always wished that they had more diversity. (No, Lan Lam can't be a stand-in for all of Asia). I'm glad that they've addressed that a bit with this series.
This was great! I love it when the Chinese say 'a little bit of sugar' and then proceed to add quite a little bit. I can't imagine what 'add a lot of sugar' might mean.
It would be really cool to watch more members of the ATK team cook with their parents, even if the parents aren`t professional or career cooks/chefs. People enjoy the interaction between the parent and son or daughter.
My favorite eggplant dish is eggplant Mandar-Inn from an old Frugal Gourmet cookbook. It has many regular Chinese flavorings, with the addition of celery to the aromatics and a splash of red vinegar at the end with the sesame oil. It also calls for deep frying the eggplant, which makes it greasy, as you noted...so I'll try adapting this braising method to the Mandar-Inn recipe. Thanks!
Fantastic! This is a dish I have been chasing for decades. Every time my wife and I return home to Honolulu we have this dish at Eastern Paradise. We have been going there since the early 80’s. I cooked this recipe once so far and it was a little sweet. I think my mistake was using dark soy. Round two tonight.
