First of all, he seems to be having a lot more fun than you, that is great...cooking should be fun...next, bajan coconut bread does not use eggs....never saw my parents use eggs in sweet bread...never...but them look realllll good.....Oh, cherries is a late thing....nuff raisins was my father style with some mix peel.....cherries was used in puddings....wouder if you can find someone to show you how old bajans made a pudding...today, people call it cake....but cake and pudding is not really the same....look alike, but don't have the same texture nor taste
