Hubby went to Florida a couple weeks ago and he brought back some sugar but it wasn't the Barbados one, it is hard to find good stuff here, to get decent stuff we have to go all the way to Atlanta, I missed New York for that. 😞

I am planning on using your Xmas cake recipe this time. Fruits already set up (no nuts). Still haven’t mastered banana salt bread. Back in the days I made them very well now here just cannot.
Hi Darling, I went ahead and added the recipe in the description below. Before making this cake you need to grind your fruits and put to soak, some people soak the fruit for over a year. Another way if you don't want to wait that long after soaking your fruits, you can steam the fruits for about 15mins, then you will be ready to bake your cake. Every thing is based on a lb. 1 lb of sugar, 1 lb of butter, l lb of flour 1 lb of eggs 1 egg can weigh 50 0r 60 grms depending on the size 8 eggs will be fine, if there are small and weigh 40 grms you need 10. Do not use more fruit than necessary, this will cause you cake to sink in rather than being flat you don't want to see a ridge. It you were having it for a wedding cake, you would have to cut the ridge so as to decorate it which would be a great loss
It didn't accrued to me to look in Walgreens, I am so use to buying then from the dollar general, that's the only place I was looking for them. I will check it out, thank you.

I hope that sugar is sold overhere at Walmart , because I'll be looking for it when I go shopping on Friday . However ; I usually buy the organic cane sugar from the bulk store . Like you I never freeze my cakes . I have a little tip . I usually leave my cakes on top of the freezer and the coolness penetrates to the top which keeps them nice , moist and fresh in covered pans like the one you showed . First of it’s not called black cake, foreigners gave it that name, and why Jamaicans copy it is beyond me. Authentically it’s Jamaican fruit cake and secondly you decorated it with holly berries and leaves that does not grow in Jamaica but grows in foreign Countries. Let’s keep it all real or Authentic and stop putting foreign labels on Island stuff like pronouncing Jam-aica as Jamaica, instead of Ju-maica like foreigners do and Jamaican fruit cake, instead of black cake like foreigners do. Foreigners do not change the names of anything in their Country for anyone, you have to call it what it is.

That wasn't enough flour to carry the weight of the fruit. Those were too much eggs, and were over beaten, so the mixture broke* No baking powder in black cake....as y'all noticed the cakes didn't rise it actually fell. You started with the temperature to low ,another factor why it didn't rise. Should have started at 350° and then lower the temperature. Also no additional liquid. Mixture too wet

I saw those pans at the dollar store on Bloor and Mill Road.
The dollar store is where I brought them, but I understands there're not the best pans for baking.
