Janice, feel free to brown sugar if that's what you prefer. We've been using gravymaster in our black cake for years and we don't taste any difference, so don't worry about us.

I’m from Guyana we also make fruit and sponge cake for Christmas for the black cake is one pound cake to three pound fruits and we use our local fruit (star fruit )made in Guyana know as carambola also we burn our own sugar for the colour and yes we do eye ball measuring too thanks mam for sharing your Recipe with us enjoy

Black cake is black cake and every island makes it similar...same process. Some add glazed pineapple or pineapple juice. I am jamaican and I make my cake just like this one. I never over load the baking tin or the cake may not bake evenly or just too thick .
That whole lime Peel, our customary, as I was growing up that's how it's being done... I still do it... It's nice seeing my own peeps doing our do.. I thought I was the only one that added nuts to my black cake... Kool.

Yes! It's so much simpler without having to grease & flour the pans. Also, the gold pans are Mainstays brand, and the one with red on the handles is by Rachael Ray.
I like how you take out the white thing out of the egg, my mother always used to do that, she used to call it the (eyes), therefore, you can bake and I would eat your cake anytime. Majority of people don't do this. Big up yourself....

I made the plain cake today. Not sure what I did wrong even though I followed to a T but it came out dry to me. I'm not a baker and even though I probably messed it up, my whole family loved it. I'm proud of it regardless lol I'm 🇹🇹🇯🇲 and never learned to bake and have been on a mission to learn this year. I guess next time I try it, I'll add more rum 😉 lol
Lol! More rum will fix anything!👌🏾😂 Kudos to you for teaching yourself how to bake! I'm sure you did a great job on the cake & didn't mess anything up.. especially since your family still enjoyed it so much. Sometimes it helps to use more butter or less flour so that the batter stays a little more moist during baking. Also, cakes that are made with oil instead of butter tend to be more moist as well. Gravy Master is used for meats, fish and poultry . I have never seen it used for baking based on all the ingredients…maybe they have a baking one on your end?
Interesting 🤔. We find that our cakes crack when we set the oven temperature too high... because it makes the top layer of the cake set before the middle has a chance to finish rising. So then as the cake continues to rise, it starts to break through the top layer and creates cracks on the surface. These days, we try to bake our cakes at a slightly lower temperature for a longer time, so that the inside of the cake can bake & rise evenly before the top layer has a chance to completely set. And if all else fails, we just flip that sucker over & serve the cake upside down 🤷🏽♀️😂. Thanks for watching!
