🇻🇨St Vincent Doughboy/Coconut Bake

  • Growing up with my grandmother she always used to make this delicious doughboy on the coal pot outside in the yard and she sometimes wrap with banana leaves. We eat it with salt fish, stew and curry meat, corn beef and much more.
    Remember foods containing fats such as breads, doughboy, become rancid quickly if they are not stored properly.
    Recipe
    2 cups of all purpose flour and 1 extra cup to help knead it in.
    1 cup of grated coconut
    1 teaspoon yeast plus 2 teaspoon of brown sugar in 1/2 cup of warm water. Leave to activate for 5 minutes or until it activate.
    3 tablespoons butter
    1 teaspoon nutmeg
    1/2 teaspoon salt
    After you pour in yeast mixture, don't add too much water. the coconut is moist and I add 1/2 cup of water to the yeast and sugar mixture.
    Add more sugar to the flour if your prefer it sweet about 1-2 tablespoon.
    Bake on greased baking pan at 350 degrees for 40 minutes
    *If you don't want to activate the yeast pour all dry ingredients together with water and knead.

    My grandma used to make this out the outside oven, it tasted soooo good, we really don’t appreciate things until we can no longer get them.

    Thankyou for this Sam. I had never tried this bread before but my Vincencian mother in law spoke of it. I made her some using your recipe and she said it taste as she remember it 20 years ago so thankyou!

      Awww, thank you! We eat a lot with stew meats and fish, salted fish, corn beef, and so forth. I am so happy to hear she enjoyed it.

    Listen I love dough boy but for the likes of me I could never make it. Anytime visitors come thru I would have them make this for me... that’s until I tried your version and a few other stuff my grannie use to add and ello the thing went down good with my stew chicken wings. I sent pics letting ppl know they are no longer have to make this when they visit. Thank you thank you I share your channel with my folks and they can’t wait to make your dishes. I’m so please to see us being represented every time I search always JA or Trini pop up which I use and I appreciate as they are great reference but I knew the Vince home taste was missing so you are a welcome site. Gonna make fudge today very 1st I used to beg folks to bring this for me. You truly have gifted hands..

    Watching from Canada I from st Vincent I love Doboy I used to make it home and I do make it here some time ,lovely enjoy baking. I sure it will be delicious. 😐

    I did this a lot in Barbados 🇧🇧. Bajans loved it sooooo much. I from South Rivers Village in St.Vincent and the grenadines🇻🇨🇻🇨🇻🇨🇻🇨🇻🇨, but lived in Barbados. So you know?!!! I'm very, very good at making delicious Doughboy.

    I use to make this as a teenager Outside at the fire side I still make it ,the only difference now is that I make it in the oven inside

    The best doughman is from the ganja farmers up in the mountains....made tight, plenty coconut and pumpkin or carrot in it and they make them very big too !!!

      Great minds think alike. Just this morning I was takimg my friend I miss my uncle's doughboy, but I never see they put carrots or pumpkin in it. That must be a good combination.

      Nice! My grandmother used to bake hers on the coal pot with fire underneath and on top and sometimes in her drum oven. Those were the best days.

      You can bake them for about 30-40 minutes but don't let them burn.

    Good Day, I have a question. I live in Holland where it is not so easy to find fresh Coconut. Can you use frozen grated coconut or the dry grated coconut???

      Yes, you can use the frozen coconut if you do not have the dry coconut available at hand.

      I put mine in the fridge and heat it up in the microwave or heater. If you not going to immediately use it put it in the freezer.

      Put it straight into your flour. You do not have to activate it.
