I’m an English woman married to my Jamaican guy for almost 40 years….We married young then had our beautiful children….I’ve never made a Jamaican cake for him, but now after watching this, I’m definitely going to give it a try. Thank you so much 🌸
Your narration of the process , history and options was on point . You are a great teacher. All the ingredients are also easily accessible here in Jamaica . Just earned more respect .
This is a very detailed video I lost my mom and she was the one that would make this cake. I believe after watching your video I will be trying my hands at it. Thank you for sharing your recipe ❤
Nick. Merry Christmas, you are a great teacher baking was not my thing, cooking is , but after watching a few of your. Cooking videos, I started my baking journey. And thank u for all those great videos and your tips and tricks
Raisins, sultanas, currants, citrus peel, sometimes dates in the soak. Cover well with brandy (my mother & grandmother used port) and keep for years if I don’t get around to making the fruitcake. Lots of walnuts, pecans, some mixed fruit and more peel in the batter. More brandy poured on, the cake wrapped in brandy soaked cloth, stored in tight tins and basted with brandy. Hard sauce and lemon sauce on the slices. We took to having it hot, very fitting as I suspect this evolved from an ancestral plum pudding.
As a cake baker You did fabulously ❤ I will be baking the night before I go to Jamaica and then the day I go to Jamaica I will be baking again😂 And by the way..thanks for calling the cake fruit cake (the proper name) and not BLACK CAKE 😂😂😂😂😂
Thanks, Muffy! Some Caribbean countries do call it black cake, so I won’t knock the name-it’s all love for the culture! Have fun baking before and after your trip to Jamaica-that’s dedication! Safe travels and happy baking!
It can work, but the baking powder in self-rising flour might be too much for this recipe. If you’re not up for testing a batch, I’d recommend sticking with all-purpose flour and adding the baking powder yourself for better control over the texture. Bless up!
Good morning, Nick. Thank you for another fantastic vlog. I leave my fruits soaking for ages. I do my cakes exactly the same as you, but I have never used molasses. I'm going to try using some this time. Happy holidays to you and your lovely family, Nick. Nuff love and blessings 🙏🏾✨️. Peace. ❤️💙🇯🇲💯
Good morning, Noreen! Thank you for the kind words and support. Leaving your fruits to soak for ages is the secret to all that rich flavor! Molasses adds a nice depth, so I hope you love the twist when you try it. Happy holidays to you and your family as well-nuff love and blessings right back to you! 🇯🇲
I appreciate how u teach and everything u said was very informative along with your pleasant personality. I will try making my own this yr instead of purchasing. Happy holidays to u and ur family.
No need to soak the fruits for months.... cover them with your wine and rum add some spices, cover pot tightly and bring to a boil lower the heat and let simmer for about 20 mins. Let it sit for at least a day then its good to go. Taste just like it was soaking for months
No you don't have to soak fruits for months you can even steam it just before baking just let it cool. To get it moist mix bread crumbs with flour don't love it too tough and you can put wine over it after baking.
I soak fruits for years . I like my texture in-between, somewhat dense but not too dense . And I soak my cakes a lot , like I’m trying to drunk people with a slice of. Hope you have a great Christmas season .
Those are candied or glacéd cherries not maraschino cherries, Maraschino cherries and candied cherries differ in appearance, taste, and how they are made. They are very different cherries. You cake looked very tasty nonetheless. My family makes the original pound fruit cake iykyk a lot of people don’t know that recipe but most of the variations are delicious.
@Elle9228000 You're absolutely right! It’s always good to get the ingredients correct. While it won’t make a huge difference in the final cake’s taste, attention to detail like this is important!
A fruit cake without any visible fruits in it🤔 Fruits mashed out into liquid after all that soaking and expensive rum is a colossal waste of money! You have a soggy alcoholic black pudding masquerading as a fruit cake in the end.
Yes. You must not be a Jamaican. You'd probably freak out hearing Jamaican kids drink guiness. We take guiness, 1 egg, condensed milk, vanilla, cinnamon, nutmeg and blend it all together. (guiness= grains, eggs=protein, cinnamon/nutmeg= antioxidants, milk = proteins and healthy fats) I see many more young alcoholics in America than I've ever seen in Jamaica. Alcohol isn't taboo in Jamaica.
@@DeaDGirlSanyaI mean I get it. That's three and a half cups mixed with the dried fruits. Alcohol doesn't entirely leave the product during cooking, so there will still be a lot in the final product. It's nowhere near enough to be cautious around children though. A slice or two would be fine.

Sure! But I doubt it will be done before the holidays!
@@feedandteach ok I understand
I have fruits soaked from last year

Definitely
You should add the rum after the mixture is cooled, never put rum on open flame!!
Some call it rum cake :P
Yes u can self rise flour.nobaking power and no salt.
🥰🥰🥰
Estou a assistir com grande curiosidade
Have fruits soak for months
Yes!
That's the real deal!
Making another wine. Very concentrated.
The fruits doesn't have to soaked for months.
Trust me I so know.

Just browsing through RUclips and saw ur escovitch sauce and then ur fruit cake recipe. Why do you use molasses in the cake what it do for the cake.
it makes it dense and adds a lot of depth to the flavour!
❤❤❤❤❤❤❤❤❤❤❤
HI,, SUPPOSE I DONT USE ALCOHOLS? WHAT OTHER METHOD CAN I USE PLEASE AND THANKS
U can use prune wine
I like mine dense.
That is it!
Sir, right now mi cyaan find the cherries. Should have bought them from August but back to school was going on 😢
Don't worry, you can still make a great fruit cake even without the cherries!
I soak my fruits for one year
Brandy and pimento wine to soak fruits
Yes! That sounds extra nice!
I soak fruits for years . I like my texture in-between, somewhat dense but not too dense . And I soak my cakes a lot , like I’m trying to drunk people with a slice of. Hope you have a great Christmas season .
Mine has been soaking for two years now
I steam them and get the same results
Yup! Thats another great way to handle fruits!
Is the same as JAMAICAN Black cake
Its the same. "Black Cake" as a name for this cake is more popular in other Carribbean countries though.

Your hardcore!
I wash the raisins and currants. Based on where they are dries, can be very dirty
True. That's a good piece of advice!
That the measurement i use. Can go wrong
once i made a mistake n put molasses instead of burnt sugar, i thought it would taste horrible n threw out the cake
Always says this is a pudding not a cake

Why don't you change the label on the bottle for the cherries? This is what it is called in our neck of the wood.

Remember that the L in almond is silent, thus ammond...
Teaching Jamaicans to say words properly is like pushing water up a “ill”😂
@Miriam-hs7lb 🤣🤣🤣🤣

Fruits mashed out into liquid after all that soaking and expensive rum is a colossal waste of money! You have a soggy alcoholic black pudding masquerading as a fruit cake in the end.
That's too much alcohol it's a fruit cake not a alcohol cake would you give your child that cake to eat

Please do not tell Jamaicans how to make their cake. Make your version and do not police how we do things.
