    I use a 'breading' mix that I think came from Indigo Nili: pork panko, egg white powder and gelatin. It sticks to the chicken/pork MUCH better than panko alone

      I use Indigo’s recipe to coat anything and everything, just add different herbs and or spices to change it up a bit. Tried the plain pork panko, and I agree, it didn’t stick to meat anywhere near as well.

    Looks great! I had to laugh when you said "you don't even need the cauliflower rice, just the plate!" My story, My husband makese an amazing crab dip. They were using tortilla chips to scoop it. My son says to me, "Aw Mom, we don't have anything for you to use. Oh yes we do, I said and showed him a spoon! He laughed so hard. No when things like this get made, there is always a spoon for me! I love my family!!!

    I freaking love your channel...your humor is akin to mine (which means it can get even heavier without a public audience). I've used the "panko" before but never thought to add sesame seads!!!! I can 100% see myself with this and some keto "sushi rice" roll. I seriously JUST became a fan of sushi. Have always disliked the seasoned rice. Since trying it with cucumber and cauli-rice W/O seasoning it, I freakin LOVE IT! And now to enjoy with Katsu chicken?!?!!? You're amazing and you rock. Thank you for all your hard work!!

    Oh yum! We use crushed pork rinds in our Keto meatloaf recipe, but I have not used it as a replacement breading. I loved your commercial on LMNT! Sorry you weren't well, but what a great way to show a real life example of using the product. Well done! 😄- Michelle

    If you're trying to avoid seed oils, I'd stay away from the majority of pork rinds and pork panko, they're cooked in it at the factory. Just fyi for those interested.

    I just love your videos. So entertaining. Unfortunately, I’m allergic to pork. I know, I never heard of that until my doctor gave me the bad news. However, there is something made from Lupin beans to use.

      I used to make 90 second bread, cut it up and let it dry. Then I'd crumble it and use it for bread crumbs. I used chaffles for awhile, too and if you have a larger waffle maker, you could make several at the same time. If you use Victoria's recipe for bread loaves, you could use that to make crumbs. I've used combos of all kinds of things for breading - grated Parmesan, almond flour, unflavored protein powder (included egg white protein), crumbs from all kinds of homemade keto breads, etc. I actually prefer two or three things mixed together, one a powder consistency and one a crumb consistency.

So there is an expiration date for crushed pork skins, it's probably a good idea not to do too many at one time you think? I wonder if you can re-crisp them and an air fryer or oven😅 just a thought.

    Can't stand element...
    Way to much salt and not the good kind of salt. It took days to get it out of my system...

      Not the "good kind of salt"? What does that mean? They're using elemental sodium chloride - which is what ALL salt is. Sea salt, Himalayan salt, Redmond salt, Morton's - it's ALL sodium chloride. The differences between the various salts is where and how they're mined and the other minerals that would be found in that salt. LMNT uses NaCl rather than a processed salt because they add in potassium chloride and magnesium malate in balanced amounts. You could try only half a packet if you found a whole packet was more than you needed.

      Pork rinds and pork rind panko are processed in seed oils.

    I really do enjoy your videos and dishes. But can you PLEASE provide another option instead of porkrinds. Every time I see one of your videos with that ingredient, I immediately turn it off. Sure, I can eliminate that ingredient, but what's the point when the crunch is the desired result. Just hoping for a different keto friendly crunch producing option.

      I don't know about the crunch factor because I havent tried but you could try almond meal or lupin flour, or mix and match your own.
      Fry in oil-finish in the oven or cook in the air fryer.
      My favourite mixture is pork rinds with almond meal and garlic powder, cooked in oil and finished in the oven as the chicken keeps it's juiciness. Not always crispy but it tastes great!!
