    ¼ cup warm water
    2 tsps active dry yeast
    1 tsp sugar
    Pinch of ginger
    2 cups warm buttermilk
    ½ cup honey
    1 tsp salt
    ¾ tsp baking soda
    6 cups bread flour
    ¼ cup butter
    1. Combine ¼ cup warm water, 2 tsps yeast, 1 tsp sugar and pinch of ginger in mixer bowl, stir. Let sit for 5 minutes.
    2. Warm buttermilk slightly. Add buttermilk, honey, salt and baking soda to yeast mixture, stir.
    3. Add 3 cups of flour to mixture, stir. Warm butter slightly. and add to mixer bowl. Stir.
    4. Add remaining 3 cups of flour, 1 cup at a time. You’ll know you’ve added enough when the mixture pulls away from the bowl.
Notes: Dough will be very soft and sticky, unlike normal bread dough. This dough can be kneaded in the mixer bowl, if desired.
    5. Turn out on generously floured bread board, flour hands and knead.
    6. Form into a ball, and place in oiled bowl, making sure all surfaces are oiled.
    7. Cover and let rise in a warm place for 90 minutes, or until doubled. Gently deflate dough and press out flat to remove all air bubbles. Divide in half. (This dough rises slowly.)
    8. Shape halves to fit in 2 greased or oiled loaf pans. Press dough into pans to shape. Oil tops of loaves. Let rise again for 45 minutes. Bake at 400 degrees for 30 minutes or until golden.

Hi honey just a fyi tip if you want to try it! Don’t need any flour to knead use your flour scraper to flip keep kneading a bit then flip dough 10 times start kneading again it won’t be so sticky! It works for me! Will try it thank you!😊😊

Hi and thanks for the yummy recipe ! You mentioned in your video that this bread doesn't rise as much as other recipes. Adding salt right in with the yeast mixture will do this. The salt retards the action of the yeast. I whisk my salt into the 1st 3c of flour that will be added in the beginning.

After watching this complete video I decided to give it a try. Haven't got the pull & tuck method down yet, but work in progress. Everything else, worked out great and I want to THANK YOU for making such a great video & for sharing the recipe with us. I love this bread. Don't know if you already know this tip but maybe someone else doesn't...I make bread for my family every week and I hate trying to get saran wrap to stick the bowl and I too like to keep the moisture in even tho I cover it it with a towel to keep it warm I buy the cheap plastic shower caps at the dollar store and cover the bowl with one of those and when it is don't rising I take the cap off and put in a drawer to use next time...another tip I use is this my laundry is on the same floor as my kitchen so I usually fill the dryer with a load and put my bread dough on top to make it nice and warm and it rises so beautifully...my mother always rises hers in the oven that is not on but with the light on ...Thanks for the great video I am gonna try this one!!

I also put my bread in the dryer. I put towels in there for about 20 min. then I put the bread dough in the dough bowl right on top of them and it rises so beautifully. I didn't think anyone else did that. We keep our home at 69 degrees in these hot Texas summers and it is NOT very conducive to helping bread dough rise. So, we do what we gotta do. My eldest daughter teased me one time and told me her bread tasted like Bounce!😂😂😂

I made this bread yesterday, had a bit of trouble with getting it flattened after the first rise. I use an old cotton tablecloth to roll out pastry or bread, and it was very hard to push out with just my hands. Would I be able to use a rolling pin to roll it out?
Then after 25 minutes , in the oven, my bread was burnt, the oven was too high at 400F, next time I will try at 375.
I love watching your videos, they are like being in a cooking class.
I am still eating it, it is a bit dense, but good. God Bless you and your Family.

I never take dough out of the stand mixer until it passes the window pane test and then I let it rise in the same mixing bowl, covered, for the first rise. Then, after first rise, I knock it down with the dough hook, shape and form, let rise again, the form to fit bread pan for final rise, bake and eat.

Put a light coating of oil in your measuring cup before you pour the honey in. Then, it will pour out of your measuring cup a lot easier. I always measure the oil, first, and then put the honey in the measuring cup. That way the honey will pour of of the measuring cup without having to get a spoon to get it all out.

I am going to try this recipe next. It looked absolutely delicious. I have too much bread flour in the house as I tend to use APF more as of late. Do you have to start by feeding the yeast? I use instant (as you do I am sure) and I have read it is not necessary to feed it to start.
Do you always form your loaves that way (the the roll up) or was that part of the original KAF recipe too? I am learning and I am not confident with my bread shaping yet. I tend to do the letter fold thing but I am never sure of myself. Rolling looks simpler. My loaves are usually okay except for the occasional hole which someone at the KAF hotline told me even happens in their professional bakery. Anyway, thank you for the video and the recipe. :)

Loved the video 👍👍 might I suggest you pop a damp towel under your board to stop it sliding around.
