You are so compassionate and understanding.I have all the appliances a lady could want to bake bread: treated myself to a Kitchen Aid food processor, a Kitchen Aid mixer, and two lovely loaf pans, for my birthday last month, yet I am paralyzed by fear. Everything is still in their boxes. I can’t explain it. My flour, yeast, and baking powder are all in the freezer. HELP. Thank you for sharing. I appreciate you more than you know. Blessed be!💚 P. S. The same fear when it comes to canning. I found a canner after MONTHS of searching, overrun with canning jars (by my beginner standards), found lids and...nothing.

I made my bread! A day later than planned, but that is for a GOOD reason. I came across some clearance organic vegetables for 19 cents a pound, and since they were slightly past the optimum quality, I canned them the same day. Almost 15 pounds!
So Saturday I made the bread. It looks beautiful but took about 6-1/2 cups of flour to get to the right dough consistency. I think that is why instead of chewy Italian bread I got a bread that is like a heavy white bread. Excellent for toast. Good hearty white bread. But not the chewy, crusty bread I had hoped for.

Great video as always! I put my bread in the oven with the door cracked and the light on or on the stove top with the overhead light on. Just enough warmth. It rises beautifully like that.

If you have a flat, “stocky” water heater, that also is a good place to proof dough. That dough looks just great.

Made this tonight as a loaf and it got a thumbs up by the hubby! I don't have a hand mixer and I have an autoimmune that affects my hands, so I needed hubby's help with the mixing though I was able to knead. He was my "helper" for the rest of the process. Note to self: make next loaf when he's busy even if it means no help mixing. LOL I ran into a few issues but only because of my helper who can't follow directions. Tried mixing with his hands though I told him dough would be too sticky, used too much olive oil, and dropped our last egg on the floor so I had to use the sugar water to make my topping stick, which was just a garlic salt. Despite the goofs (or my hubby the goof) the bread turned out amazing. I'm looking forward to a solo loaf to eliminate some of the deviations but its nice to know that it didn't have to be so exact for it to turn out edible. Super excited! If we wanted to flavor it with rosemary or thyme, how much would I add?

    • @TheKneadyHomesteader

anywhere from a tsp to a table depending on how much you want

@@TheKneadyHomesteader Thank you so much!!! I had added 1/2 tsp, not wanting to ruin the first loaf but we couldn't taste it in the final product. The kitchen smelled amazing though! 😊

@@TheKneadyHomesteader I never have kept the salt separate. Haven't baked bread for a while but I'm 83 and did a lot of baking in my time. One time when I was working nights I was going to bake bread before I had to go to work. I figured wrong and needed a second rise so stuffed the dough in the freezer of our fridge. Those days the freezer was in the top of the fridge with a door that was not tight. When I got home from work I opened the fridge and the dough came out all risen pushing the door open. Reminded me of the "I love Lucy" TV show where Lucy put too much dough in the oven and it came piling out.
