Homemade Corn Meal Bread Rolls~The Kneady Homesteader

    Recipe (my tweaked version)
    1 c. yellow corn meal
    2 c. water
    1/2 c. lard
    1 1/2 tsp. salt
    1/3 c. sugar
    2 tbls. honey
    2 tbls. instant yeast - SAF brand
    1/2 tsp. suga
    1/2 c. warm water (105F to 115F)
    5-5 1/2 c. all purpose or bread flour
    2 eggs
    1 egg + 1 tsp water beaten to brush on top of rolls and seed topping, if desired
    bake at 375 15-20 min.

    I have made these rolls for 40 years. Only difference - I cook the cornmeal in milk (or half evaporated milk/ half water). Always a winner!

    In the beginning before you added the lard, my grandma Alice called that corn meal mush. She would add brown sugar and maple syrup to it and make it a little thinner and would give it to me in the morning for breakfast with bacon before school. I miss that ❤ you are doing a great thing showing us how to cook totally homemade . Having a stock pile doesn't work if I dont know how to use it 😁 thank you so much for sharing.

      I remember my grandma used to make “mush” too! Seems like it came in a square shape and she would slice it and top it with butter and sugar like you stated. I once found it in Southern Indiana to make it for my girls. Never considered making my own. Love this channel! God bless Heather and her family!

      We had cornmeal mush too & I had forgotten about it until I saw heather's video. Planning on baking these rolls for Easter along with my cottage cheese rolls. Praying for heather & family daily~

      @@terriewatson4615 She probably made the mush and put in loaf pan and left over night then sliced and maybe pan fried. I use to eat it that way and also as grits like Heather made. Yummy. For me the quality coarser grain is so so good!!!!

    These may just be the best yeast thing I have ever made! When you said you use lard instead of shortening, I knew I had to make them with some good rendered chicken fat my mom in law had given me years ago, but I'm not pie crust confident. Just came out of the oven, omgoodness. First rise was triple. I usually don't have good luck with egg wash, but they look beautiful, can't wait for supper!       I’ve had corn meal on the bottom of my pizza. I’m so glad she showed that Everything Bagel Seasoning. I look for stuff to put that on so I don’t eat it with a spoon.

    Hi Heather just wanted to stop by and say that you’re amazing I love all your recipes I love your channel it got me through a rough time I found you after my back surgery And I have to say I have learned a lot from you I have a tip about the cornmeal recipe I can’t wait to try it but when you start off your recipes to avoid getting lumps with cornmeal you start with cold water and then you add the corn meal and start stirring just a tip and I also heard that you don’t do much with your cornmeal I am from Puerto Rico and I was raised by my great grandparents and grandparents and my grandma would always make a cornmeal porridge consisting of milk sugar to taste a pinch of salt butter some people put vanilla and cinnamon I don’t you start with a cold pot of milk And one egg yolk not the egg white and you add your butter your sugar an a pinch of salt like I said cinnamon and vanilla if you like with a constant stir on medium low heat you continue to stir and continue to stir until it thickens up and your ratio to milk and corn meal is really Trial and error I don’t cook with measurements sorry for that but as the milk warms up and you’re stirring it you bring up your spoon with some milk and the cornmeal and you’re going to see the cornmeal in the milk on the spoon and you don’t want to much cornmeal because it will get thick too quick and if you have too much milk it won’t Thicken up enough but as you stir and it becomes warm you get to see like a velvety affect in the milk and the cornmeal and you continue stirring until it becomes like a porridge consistency and you’re all set to eat Buen provecho Happy baking

    Thank you for this great recipe!! I doubled it, subbed butter for the lard and molasses for the honey and used raw sugar instead of white. Made four huge beautiful loaves of bread!! Family approves! I have always saved any leftover oatmeal to put into bread, now I will save polenta too. I grind my own flours and grains. This would be great as a "soaked" recipe. Thanks again.

    Heather, I am commenting before I even watch this delicious recipe! I am too excited and have to tell you that I have missed you and you were the one to get me over a hump when I was learning to bake homemade bread. I will always be so appreciate for that help. Also, you are just the sweetest kindest person and always so helpful when you post recipes or anything for that matter. I am going to watch your other video next. Still not pressure canning because I really don't have the storage but I need to get busy water bath canning my tomatoes from last year! Lol Sorry such a long comment but had to say hi and now I will be trying this recipe for myself. Thank you so so so much for just being you!     When I was growing up my mom always got up early in the morning, showered, dressed for the day while we were all still in bed sleeping. I’d start to wake up often when she went in to shower, but I stayed in bed still a little drowsy, snuggled warm in the covers. She’d go into the kitchen, slide the pocket sliding door to the kitchen shut, turn on the radio to catch news and weather as she began to cook breakfast. She’d get the coffee perking, and start whatever she was fixing for breakfast. The smells were wonderful! Between the news and weather the station would play some easy listening music she loved, and the house began to wake up. My sister and I would get up to get ready for school. She went first as she caught the high school bus, and I had the later bus, so I got to often snuggle in bed longer, but I’d always slip out to sneak into the kitchen to see what mom was doing, and I’d help her before I went in for my shower. When done with my shower and dressed dad was up, washed and ready to go, we all sat down for a nice breakfast. I always had the seat by the heat register, which on wintery cold days always felt so good as we had our breakfast at the kitchen table. I remember those times and the smells so fondly. Good memories were made, which you are making for your children. My mom is gone now and I’m older. I just wish now that I’d shown her more appreciation for all that she did for us throughout the years. A hug and a thank you with a kiss on the cheek would have been wonderful for her. That came when I was older, though, but so many years missed! When I see her in Heaven again I’ll be sure to give her loads of love and kisses with hugs to make up for all those times, and then some. Thank you for your videos, and the wonderful memories of family you share with all of us. You have a kind and giving heart. God bless!

    These rolls are delicious. I relate to them as my Pennsylvania Dutch rolls. They, along with the honey buttermilk bread, and Christmas bread are our favorites. I just made all of them and plan to share with those stuck at home. Nice to share the love during tough times. Wish I could upload a picture. Stay safe!

    Your comment that these are probably your favorite rolls considering all the bread that you have baked says a lot. They look really good. I have the book. I'm gonna have to give them a try once I get over this nasty respiratory infection. BTW you don't have to shorten your videos on my account.     I just got done making these while watching your video! My husband never comments on bread, but gave an audible “Wow!” When he bit into the everything bagel seasoned one at dinner! Definitely writing this one down as a keeper! Amazing how there wasn’t a gritty texture from the corn meal. I had my doubts, but what a nice soft bun! Thank you for this video!!!

    Hi Heather. So nice you thought of us this morning making rolls. I’m excited. I make your dinner rolls all the time. But corn meal sounds good. Looks like this is a winner. My husband loves cornbread. Good idea having your personal fan. What a beautiful dough Heather. Perfect round hamburger, I’m will have to watch this again to copy the details. I make bread like you and Noreen all the time, rolls and pizza like we did before on your vids and it is a good feeling that makes you happy. I do agree. They came out so beautiful.
