Khoresh Bademjan/ Persian eggplant stew

- HI EVERYONE. IN THIS VIDEO, I WILL BE SHOWING YOU STEP BY STEP IN MAKING THIS DELICIOUS PERSIAN DISH CALLED KHORESH BADEMJAN OR EGGPLANT STEW IN ENGLISH.
INGREDIENTS:
1/2 KL LAMB LEG (YOU CAN USE BEEF)
4-6 TBSP VEGETABLE OIL
1 BIG ONION (CHOPPED)
1 TSP SALT
1/4 TSP BLACK PEPPER
1/8 TSP CHILLI POWDER
1/8 TSP CINNAMON POWDER
3 TBSP TOMATO PASTE
1 TBSP TURMERIC
3 DRIED LIMES
2 BIG TOMATOES
1 GARLIC HEAD (OPTIONAL)
3 1/2 CUPS BOILED WATER
FOR EGGPLANTS:
4 THICK EGGPLANTS
3 TBSP SALT TO SPRINKLE
1 CUP VEGETABLE OIL FOR FRYING
YOU CAN SERVED THIS WITH WHITE RICE OR SAFFRON RICE, SALADS AND SABZI (PERSIAN HERBS)
NOTES:
. I PUT THE WHOLE GARLIC LIKE THIS BECAUSE MY HUSBAND DONT LIKE THE TASTE OF THE GARLIC, BUT PUTTING THIS WAY MAKES YOUR STEW DELICIOUS WITHOUT THE PUNGENT TASTE OF THE GARLIC.
. YOU CAN USE ORDINARY BIG PAN FOR STEW IF YOU DON'T HAVE PRESSURE COOKER. IT WILL TAKE TO 2 1/2 TO 3 HRS TO COOK UNTIL THE MEAT BECOMES TENDER.
.BE GENTLE WITH SALT TO PUT IN YOUR STEW. THE FRIED EGGPLANTS ARE SALTED AND IT WILL GOES TO THE STEW AS WELL.
.PLEASE USE BOILED WATER. SUDDEN DROP OF THE TEMPERATURE WILL MAKE YOUR MEAT HARD.

0:15 FIRST, WASH AND PEEL THE EGGPLANTS. DO NOT REMOVE THE HEAD. THIS WILL KEEP THE EGGPLANTS FROM FALLING APART
1:35 AFTER 30 MINUTES, PAT DRY WITH A KITCHEN PAPER
2:55 PLACE THE FRIED EGGPLANTS ON A PLATE WITH KITCHEN PAPER TO ABSORB EXCESS OIL SET ASIDE
6:02 ADD SALT, BLACK PEPPER, CHILLI POWDER, CINNAMON POWDER
6:33 GIVE IT A GOOD MIX. EACH PIECE OF MEAT MUST BE COATED WITH ALL THE SPICES
7:08 ADD TOMATO PASTE AND TURMERIC. TURMERIC PLAYS AN IMPORTANT ROLE IN PERSIAN CUISINE
7:34 GIVE IT A GOOD STIR. ALL THE INGREDIENTS MUST BE WELL INCORPORATED
8:18 ADD THE DRIED LIMES AND BOILED WATER (IT IS IMPORTANT TO USE BOILED WATER)
9:03 WHEN THE MEAT IS ALREDY TENDER, TRANSFER THE STEW IN A BIGGER PAN
9:53 SPECIAL GREETINGS TO TRES MARIAS FINEST & HAPPINESS

RED MEAT is NOT good for me much, so i eat it every few weeks, well i am in my mid 50s now, have to watch ..I made it with Chicken , added chopped Garlic to onions , Zafran & some Goorah sour grapes, had some in my Freezer , came out really good Thanks
You are welcome. Yes, you can definitely use chicken. When i was in Iran, the family would use chicken coz they can't have much red meat and i really love it with chicken as well.
There is no limou amani in khoresht bademjan in gheimeh bademjan there is.

Looks yummy but I want it make this strictly vegetarian.
Can I just sauté the onions with all the other ingredients, allow the mixture to simmer and thicken, then add the fried eggplants and tomatoes? Thinking it will be the same ends product except no meat 😀
Thank you. I never tried it this way but I am sure that it will comes out delicious. Sometimes, i would just fry and eat eggplants, and it's delicious how much more if it have this sauce.

You can find online at Amazon, any Middle Eastern stores that sells one or you can just use fresh squeeze lime juice

Hi, Safieh. I did washed first the eggplants before putting salt.
Poor eggplant looks so naked without their skin. I've made a lot of eggplant dishes and have never peeled their skin. You're missing out.
I also leave the skin on most of the time when i cook eggplants. We do as well in the Philippines. But in this Persian stew, skin is peeled
