    What fish to use? Normally served with monkfish ('lotte' in French), as it's a firm fish that doesn't flake. Although less authentic, can be made with other firm fish (e.g. mahi-mahi or cod).

      Thanks Christina - och, bad news is constant just now but no, nothing serious thankfully. Glad you like the story - as for the dish, I forgot to mention my daughter doesn't even like white fish but loves this somehow!

    Just cooked this for me and 'er indoors. Didn't do the rice but added new spuds, plus a few mussels and king prawns in with the cooking process. Monkfish is the nuts and thankfully I've a mate who works at Billingsgate, who supplies it on demand. Or as Kenny Ames once said about it in Auf Pet...'it's an ugly bleeder that tastes nice.'

      Hi Donald, I would consider it - lovely addition, why not? Although personally, as it's so expensive, it could get a bit lost with the tomatoes, garlic and cayenne.
