I could be wrong, but the problem with cooking and baking with extra virgin olive oil is that is has a low smoke point and is easily denatured. Canola oil and hydrogenated vegetable oils have high smoke points and are stable (and of course, very cheap). There are not many healthy high smoke point (and affordable) fats, not to mention they usually have a distinctive flavour: Mac-nut oil, Avocado oil, and ghee, are the only ones I can think that are high smoke point and good for you. Lmk if you have some others.

Speaking of mayo, have you ever made your own using an immersion blender? Literally takes 20 seconds of blending. Just need to make sure the jar is just large enough for the blade to fit. Use avocado oil and one egg. If using olive oil, want to use a light tasting oil apparently. Here's a basic recipe for some great tasting mayo I love (tastes like better body foods mayo).
    3/4 to 1 cup oil
    1 egg
    tsp apple cider vinegar
    tsp lemon juice
    some salt to taste
    tsp yellow mustard
some onion powder and garlic powder
I didn't measure anything so don't have the exact measurements
blend it from the bottom the pull it up slowly. Tastes great, ill eat some by itself if I need some extra fat in my meal.

Nothings better than your own homemade mayo! It’s super easy & can be made at the ready! One egg, salt, Dijon mustard, Apple cider vinegar with the mother or you can substitute with lemon juice, one cup of avocado oil or olive oil or any kind of natural fat you choose. One hand emulsifier and a mason jar or something no wider than the base of your hand blender. That’s all you need for mayonnaise! Really good with bacon fat! Sometimes I add turmeric just depends on what we’re in the mood for. It makes about a cup of mayo and it’s the best tasting stuff ever!

It’s fascinating that cod liver oil is mentioned as a good oil! In the past when the American settlers setup trade, one the main exports was cod liver oil. A new world product, it was extensively used in England for its medicinal properties including but not limited to as an effective nutritional supplement and laxative. Which why is that so important? Their diet at the time was very limited in vegetables especially the aristocracy which lacked many nutrients that laymen had. This product was revolutionary at its time and made colonies an integral element in the trade before tobacco became more popular.

Excellent presentation, Dr. Berg. Quite comprehensive cover of oils. May I ask, though, about these 2 below you didn't mention?
    1. Rice bran oil. The larger fraction of fat in this oil is monounsaturated although it has a significant amount of polyunsaturated fat, too. But the main attraction of rice bran oil is its antioxidants. It is rich in gamma oryzanol, a potent phytosterol antioxidant that can lower cholesterol. Perhaps even more importantly, this oil - like red palm oil - is very rich in vitamin E, particularly the tocotrienols. And it has appreciable amounts of vitamin K1.
    2. Mustard oil. This oil has a very high smoke point, making it suitable for deep frying. It has high levels of monounsaturated fats (about 60%) similar to those found in olive and macadamia nut oils. Furthermore, mustard oil has significant amounts of omega 3 oils, resulting in a good omega 6 to omega 3 ratio (roughly 3:1).
I'd really love to hear what you think of these 2 oils. By the way, sesame seed oil, though an omega 6 oil, is NOT inflammatory because of its very potent antioxidants - sesamin and sesamolin. In fact, it is considered anti inflammatory. It, too, has a high smoke point. Like the other 2 oils, it has a very long shelf life. In fact, sesame oil doesn't go rancid and doesn't need refrigeration - thanks to its antioxidants.

      Q. How to select a good olive oil? Some mention they are good for Indian cooking and deep frying. Some are reasonably priced, and some are highly. Etc. 🤔

Kirkland brand EVOO the Italian version has consistently been rated as a pure unadulterated olive oil. Here's a tip: put your olive oil in the refrigerator for a couple days. If it gels up that is a sign that it is low in omega 6 fat. If it remains liquid, that means it is low quality and high in omega 6 fats. The more liquid it remains the higher levels of omega 6 fats.

Hi Dr. Berg- I recently read that a lot of companies who a promoting that they no longer use trans fats have moved onto using interesterified fats instead. Could you do an episode on that and explain where its found and how it interacts in the body? From what I read is that there is little known about the safety/ health effects of this new fat being put into our foods and seem to affect cholesterol just as bad as well as increase blood sugar levels....

Tree nut oil vs peanut oil. We use cold pressed Pecan and Walnut oils. Both have some choline, vit E and phytosteriols. Walnut oil also has ALA. Pecan is higher in vit E than olive oil and peanut oil. Peanut oil is my last choice since it is a legume like soy. I use pecan for mayo. Beef tallow and/or coconut oil instead of shortening.

I recall reading a short book written by a cardiologist about 1980 who started practice about 1920 and heart attacks were so rare he did not get to treat a patient with that until 1924, next 1928. He explained there was no shortage of work for heart problems but negligible for heart attacks. As he progressed in his profession heart attack patients became common and by 1950 until he retired about 1970 it was mostly what he and his fellow cardiologists did.
Other health researchers have raised that seed oils were only introduced into the human diet from 1870 when cotton seed oil was first processed as a lubricant and re-purposed as a replacement for the expensive whale oil in lamps. By 1912 Crisco had been introduced specifically for human consumption, obviously people didn't die or have a heart attack the next day but took about 30 years.
I recall my mother would roast meat and the fat would be left in the tray overnight and used to cook the breakfast and only then poured into a covered pot with a built in strainer for later use, never refrigerated, we only had an ice box then, (and before that an ant safe), before our first ever refrigerator in the 1950's. How times change.
In any event I won't touch seed oils or any form of processed foods and believe that is the only sensible thing to do.
