Whipped cream cannot be over whipped. If you're make the filling, it's ok to whip until stiff. If you're covering the cake, the cream is best to whip slowly, from runny to thickened, and just as it's going to be stiff but not there. Need some practice as whipped cream frosting is not easy if that was your first time
It took me 4 eggs to realize that low speed would not get me ribbon eggs. It needs to be on high speed, and it takes 10 minutes ish. Love ur videos xoxo :)
Thank you for sharing this beautiful recipe. When I make fresh cream frosting, as soon as I apply it to the cake and start spreading with offset spatula or use a bench scraper, it starts losing its smoothness and is covered in air pockets. What am I doing wrong? Please help 😩

I use a brand that has 36% fat and I also add 1 tbsp of skim milk to every 1 cup of cream to help stabilize it but mine never looks like hers or other RUclips bakers outside of the United States. Either they're using one with a very high fat % or their using one of those non dairy whipped cream products. Either way. As you stated, it would be very helpful...

Hi. I apologize for the late reply. For 8 inch pan, you'll probably need 1½ of this recipe. (I let know if you need calculation help) Temperature will be the same, maybe baking time might be around 30-35 min or until the inserted skewer comes out clean

Whipped cream is very tricky, when if firm or stiff peaks, it might be too tight to cover the cake. If you're not particular with presentation of the cake, you still can cover the cake but the cake frosting may not look smooth on the surface

HI Preethi Nair, I have had that happen also. I usually use Gelatin when I'm needing it to stay firmer longer. Couldn't find my recipe but found one that is basically the same, I think the only difference is that he uses powdered gelatin and I use granular. You can look for it on YT with this title *How to Prevent Whipped Cream from Deflating- Kitchen Conundrums with Thomas Joseph* . Hope this helps. This Strawberry cake recipe looks so yummy, I may make it with mixed berries, no strawberries on hand, lol. And, as always the videos are so very relaxing and enjoyable. very aesthetic video with clear directions shown but i just have some constructive feedback! although i followed the exact measurements in the description, my batter was somehow a lot lesser and the cake that came out could only be sliced into 2 layers 😕 it might’ve been that i used 2 medium sized eggs instead of large eggs but somehow my portions compared to yours seemed to have a lot of difference. anyways, good video! just speaking about my experience.
For cake cover and piping I use the soft peaks. It's best to use a whisk towards the end so that the consistency is well controlled, not too soft though, lift the cream with your whisk, you're see a small tail and falling backward
You don't actually have to add anything to the cream to be stabilized it. Choose a dairy whipped cream that says 35% fat or above. Those will give you a very stable cream. Alternatively you can also try non dairy whipped cream which is very stable too, but just be careful not to be over whipped, it will become tight easily
Hi sis, I see you only use whipping cream for your frosting of cakes. Is this whipping cream less sweet than American buttercrem? I never see you using American butter cream in ur recipe. What frosting will you recommend if I don't want sweet frosting? Thank you.

Yes it's a lot less sweet and much lighter than buttercream. This will be an ideal cream for you
