I am blessed to live in the Berry Capital of Canada, in the Fraser Valley, B.C.... so in the summer, I go from farm to farm and purchase blueberries, strawberries, and raspberries... such a great time to make these types of cakes during berry season! I have picked way back in the day, to earn money,...but now at 58, I get to purchase from those that did the picking!
Save those strawberry tops!! Put them in a jar and add vinegar to cover. Put it in the refrigerator for a week or so!! Strain the tops out and use to make a fabulous vinaigrette!!

I don't consider a biscuit shortcake. I love a white cake mix. Jiffy cakes work for a smaller cake. I'm an iowa farm girl and this is how my mother did sjortcake. Love the strawberry juice to soak into the cake. And I don't need whipped cream or ice cream.. You are 1 if very few people who make shortcake RIGHT. Thank you

It really depends on your oven and what heat you are trying to reach. I typically try to leave 15-20 minutes at least to make sure my oven has reached the proper temperature. :)
I doubled the recipe. I really outdid myself, but I made your maple cream cake and it was a winner so when a coworker said he wanted a strawberry cake and I saw this recipe I was like oh….fudge…instead of the cream cheese frosting I plan on make your chantilly lace frosting but protecting the jam with the cream cheese dam. I’m also doing a skittle surprise cut out core and stupid crystallized candied strawberries skewered down through the 3 layers. I know… stupid. I haven’t slept. No hubs on dish detail and studio apt here I might as well be baking in a galley of a cruise ship. I love doing it though! I followed your measurements to a T and still I came up with 3; 8” rounds. I tasted the batter I wish it were sweeter and more buttery but this is new to me so it’s going to be iced and nice. About to pull out of oven center almost done nice and puffy but oven is smelling like I’m in trouble.Exterior will need a trim. This was not a win and a lot of quality ingredients purchased to make

I think 2.5 days will be just fine. Just make sure it's in an air tight container so it doesn't dry out. :)
