Hello Gracious Treatz, I’m new to baking and Mocha is my all time favorite cake. I made the cake exactly like you did replacing only cream of Tartar with vinegar (couldn’t get it in Germany). I also couldn’t decorate the cake the way you did and my frosting was even melting at one point. I thought it too be strong when I immediately tasted it and perhaps I was also exhausted. Some 24 hours after it had been in the fridge, I tasted the cake, it tasted like the most beautiful angel had baked this cake and had herself/himself descended on the earth to give me a bite. It was so amazing. I don’t care how my cake looked I relished every bite. So thank you for this. And this will indeed be a regular.

@@juveriakhatri9233 when you mix the egg whites and egg yolk-flour mixture, u could probably over mix it which could cause the cake not rise enough. When you pour the batter in to the mould, it should not be too runny. That is just my experience. Also sorry I dont know if I get your comment right, but if you only baked it at 30 min, it will sink because it is not fully cooked. The cake will rise beautifully at 30min, the top could be brown and if you insert the tooth pick in, there would be no batter stick to it. But it is not a sign of a well baked cake and the cake will sink if you only baked for 30min.

For the first time when I tried the recipe ,well the cake cameout as same as you....later I knew I took the wrong baking tray...so I had to take same baking tray as seen in this...well the it came out perfect...and be so good at seperating the egg .

This is a great recipe. Do you need to chill the cake before applying the final ganache layer? I am concerned that spreading the ganache will spoil the mocha frosting layer.

Hi Fiona, this Mocha Cake is the third cake I've made following your recipes. Previously I'd made the Pandan Cake and the Carrot Cake. I cannot decide which one I like the most as they all taste absolutely yummy, especially the sugar level is just right. For this particular cake, I've added a little Cointreau to the chocolate ganache and it turned out heavenly. I have received great compliments from my family members every time I tried out your recipes. So thank you VERY MUCH. But now I do have a question. For some of your recipes when you use cream cheese for frosting, such as the Pumpkin Cake, instead of cream cheese what else I can use ?
Hi Yu. I'm so glad that the recipes worked well for you. I'm sure you turned the cake divine with some added value like Cointreau 👍🏼 As for the cream cheese, if you don't desire that frosting, you can always go for regular whipped cream; or even Swiss Meringue Buttercream which is my favourite, only thing it needs more effort. And it's not too sweet compared to American buttercream with lots of sugar ☺️

Yes it will be recommended to chill it for at least 30 min to 1 hour before pouring the ganache over. I apologize if I didn't mention it

I'm sure you turned the cake divine with some added value like Cointreau 👍🏼 As for the cream cheese, if you don't desire that frosting, you can always go for regular whipped cream; or even Swiss Meringue Buttercream which is my favourite, only thing it needs more effort. And it's not too sweet compared to American buttercream with lots of sugar ☺️
@@gracioustreatz7231 Thanks. Would definitely go for whipped cream. I do not eat diary normally. But with whipped cream, I can always add some other ingredients to make it taste less diary :)

Hi Fiona.... may I know the “Chocolate Ganache part”... do I need to heat the whipping cream at low heat or I just need to put the whipping cream on top of the hot bowl and make it hot? Coz as you say the whipping cream is hot so just want to know you used which method to make the whipping cream hot??
