Hi Tracey. It was so good. Sure you can put the carrots under. I wold put it on the 8 hour slow cook to be super tender, but the 4 - 5 hour would be fine as well. Hope you try it and enjoy.
If I were you I'd buy one, you can get them really cheap, and they cost less to run than an oven. Try in the oven for four hours on a low heat to let all the fat render and the meat to gently cook. Big cuts like this need low and slow cooking, so it could be more than four hours. You'll just have to keep checking and pull it out when you feel it's done. You can always stick it back in if you want it done more. Seriously, get a slow cooker, they're so good.

This guy has an MC's voice. The kind of voice you dont want to buy a car from, or that Popeil pocket fisherman from decades ago. The Roast however, is very very good. This is even with a no fat marbling rouind roast. I had had a major failure with one of those in a slow cooker before, so I was skeptical. Be warned, I guess all slow cookers are not created equal. Mine was on the edge of being well done when I took it out. I will go 5 hours, next time rather than 6. The sauce was out of this world. Needed very little. I just added a couple of small butter slices, and a drop of honey after the corn starch. He says teaspoon on the rosemary and mustard, but the video show at least a tablespoon and a half, so I went with that. The Thyme looks 1 tablespoon, so I also went with that. I will be looking for some of his other stuff.

It's that very reason that has stopped me doing things like this (and just sticking to stews instead) but now I see from your recipe that it's perfectly safe I'll give it a go :-)
Jason Lightoller Yeah, Jason. I seldom ever put water in mine, and I leave them on for 8 hours. I find as long as you have a bit, the juices that come from the meat will usually suffice. Just make sure the meat is not too lean. I'll often, as you can see in my latest slow cooker video, put a bed of celery or onions (something that releases water) under the meat. That works just fine too, and you get some nice flavors. I think the 2 inch rule is a little overrated. Take a look at all our slow cooker videos. Just type slow cooker into the search box on the right hand side. Hope this helps.
It was "eye of round", an American cut. If you want details, see Wikipedia entry on "Round steak". British equivalent is topside or silverside. Wikipedia also has an article "Cut of beef" which has diagrams for American, Brazilian, Turkish, British and Dutch cuts.
Hi Marc. The great thing about a slow cooker is you can use just about any cut and it will produce a tender roast. Of course, a sirloin cut is always about the best. That's what I use.
