My trick is to use a very thin long deli meat/bread cutting knife. Then make thin slices. Keep an eye on the internal temp. This will give you tender bites.

I find that the fastest and easiest way to peel garlic is to put the cloves in a quart mason jar. Put on the lid and shake the jar vigorously. It takes about 30secs of shaking and it separates the peel from the clove. The fresher the garlic, the earlier it is. Older garlic tends to take more shaking. Anyway, just wanted to pass on that tip. The roast looks delicious! We will have to try this method! Thank you! God bless!

I love roast of all types. This is what we would call medium to medium well and somewhat dry roast, that is what the gravy is for to moisten it up. Looks great! I also love rare roast also. But this is well done Natasha
