I added a block of philadelphia cream cheese to my batch tonight and it really added to the flavor. You're the man T-Roy!

(That’s a southern metaphor for something that is over the top) I just thought I could make good potato soup until I made your recipe and all I can say is you’ve got it down to a science. Have made it 5 times in the past 2 months; I'm 70, live alone, and haven't wasted a spoonful because unlike most crockpot stuff, I can happily eat it for 4 days in a row. Just now I had to visit 2 supermarkets and a drugstore to assemble the ingredients, but it's worth it to be rewarded by the smell, taste and comfort.😛👍👏😻
Made it yesterday for the Fam. I added a 16oz bag of small scallops that I purchased from Aldi. I put them in right at the end with the cheese n sour cream. Oh My!! It was devoured! Thanks, Bro!!
Made for a vegetarian dinner: used vegetable broth (from Forks Over Knives Noodle Soup recipe), unsweetened almond milk, no sour cream or bacon, added in 1/3 c potato flakes (to make it even thicker), had cheese on the table for those that wanted it, and it was fantastic and definitely was not lacking in flavor or texture!!! Would be good this way for someone that needs to eat lower fat meals too. The crockpot made it super simple. Thank you for the recipe :)
Dude!! Made this tonight. Made it plant-based. 10/10. Delivered. The onion was concerning at first but after adding the bachemel it was all right. I’ll easily make 3-4 more times this year.
Made a double batch of the soup tonight and it was superb. The only things I did differently was sauteed the onions and garlic in bacon fat before putting it in with the potatoes and added the bacon after melting the cheese. Excellent recipe my friend. That cutting board brings back some memories. My grandma had one like that when I was growing up, it came from the Rath Packing Co. in Waterloo, IA (anyone old enough to remember Rath Bacon, canned hams??).

I just did this but used my leftover Christmas ham instead of bacon. I did fry up some bacon and used as a garnish, cannot have a potato soup without bacon, that would be against all things good and natural. Turned out amazing, thanks for the step by step.

I made this and it's wonderful! Husband is asking again for it and it's only a week later. Using fresh garden potato harvest!
