Pro tip: if you temper the sour cream by stirring in a spoonful of the soup before adding the sour cream it won’t break up in the soup.

I did the same, mainly because I was using up things I had on hand. Turkey bacon worked (there was not really any fat left in the pan, but the recipe came out great anyway), I only had half a cup of heavy cream, and my sour cream was made from cashew milk. Delicious!

I make this soup, often, during colder weather. I just wanted to share, that since I don't have an immersion or ordinary blender, I grate half the potatoes, at the beginning. By the time the soup is ready to serve, they've broken down all the way 💝💖
Thanks for the tried-and-true recipes, Sam! It's nice to know I can ALWAYS count on you, when I need a last-minute recipe. There's NEVER any need to "Test" yours. They're always fantastic!!

Instead of pureeing half of the soup...all I do is add a handful or two of dry potato flakes to the soup at the end. It really adds a nice body/thickness to the soup without losing half your solid taters. Also, if you need some extra flavor in your soup just keep some Better Than Bouillon on hand & add a spoonful or two. That stuff is amazing.

    • @nuzzlepuff9162
      @nuzzlepuff9162 7 месяцев назад +2

Substitues: You can replace half the potatoes for mashed potato mix- it doesn't taste as good but it definitely still works. You can also use dried minced onion that's in the spice isle if you're broke like me. You also don't have to use a whole onion, I personally only use 1/4 onion. You can also use curry powder instead of the chili powder to get a similar affect. (I use chili powder on half the things I cook now it's so good lol)

Good Job. The good thing about that recipe is you can make it into any kind of chowder in a pinch just by adding ingredients like fresh corn for corn chowder, clams for clam chowder, fish for fish chowder, shredded carrot and cabbage for cabbage chowder. What ever you want, use your imagination. At a friends house, I once had it with hard boiled eggs, fresh diced onion and cheese grated on the top. It was delicious. One of my moms secrets was adding Rontini pasta in it if there wasn't enough potatoes left in the pot after she just took a potato masher to it instead of using a blender. Yes great job.

Hello Sugar, The eggs are interesting as someone wouldn't expect it. The folks that served it to me were full blooded Lithuanian and they told me it was very common to be served that way. I do the same thing and put crumbled bacon on top. Who can resist that.
It may sound strange, but I like to put a few poached eggs on top of my potato soup sometimes along with crumbled bacon, or a few slices of deli boiled or smoked ham chopped up to go on top too. I suppose potato soup gets served a million different ways depending on where your from.
I don't know if it's a Italian thing or not. My mom was from Italy and would put a few poached eggs on top when serving a bowl of homemade chicken noodle soup along with some real grated Parmesan, Romano, or Asiago cheese. Oh, don't forget the chili pepper flakes too, you know, the kind that goes on pizza. Now that's strange but delicious. Once someone tries it, their hooked, especially using fresh eggs and 10 minute homemade egg noodles. I just thought of something funny. My moms family raised chickens, maybe that was a way to use up some of the eggs LOL. The funny part is my moms story when she was a little girl, a big old mean rooster chased her and had her trapped in wooden rain barrel for a few hours.
Other than that, much appreciation for sharing your recipes and all you do. I think sharing food idea's with one another is a celebration so thanks again.

Made this tonight and it was a success!!! Few things I did differently: 1)didn’t use ancho chili, just regular chili powder 2)didn’t use any sour cream 3)used russet potatoes 4)instead of using the heavy cream in the beginning, I saved it for later whenever I blended some potatoes to thicken the soup. Just to cool down the mix so my blender wouldn’t explode 😂 I didn’t use a whole lot of the potatoes, maybe like a cup and a half. Blended it with some of the cooked bacon & some green onions for added flavor. It was perfect!

This is a very good recipe! I did make a few changes.
    1. On top of the bacon I cooked up 1 lbs. of Kielbasa to add to the soup.
    2. I caramelized my onions, low/medium low heat for about 30 minutes.
    3. I finely minced 1 carrot and 2 celery, added them in with the garlic.
    4. I used 4 large garlic cloves.
    5. used a potato masher and mashed about 80% of the potatoes.
    6. I had no ancho chili powder, so I used cayenne pepper powder instead.
In the end this soup was a HUGE HIT! (I did add the extra cheddar cheese, bacon, sour cream and chives on top for presentation) But both my brother and Sister-in-law said THIS recipe is a keeper!

I love this soup. It always tastes good. I add a little smoked paprika and use a potato masher to get the consistency I like. I found this recipe like 2 years ago, and I still come back to it.
Edit in case anyone sees this: I do not have ancho chili powder. I use regular chili powder. The smoked paprika might not be great with ancho chili powder, I'm not sure

You don't need an immersion blender. Just remove however many potatoes you want, and mash with a fork, or a manual potato masher. Also, hold off on the salt, and adjust at the end. P.S. add a stalk of diced celery, and a diced carrot when you add the onions for more flavor.

I have been cooking potato soup for about 6 yrs and thought I might give this a try. I find that the garlic is a little over the top. I like garlic but this recipe has way too much. Seems like the more it simmered the stronger the garlic smelled . I might recommend not using it , perhaps adding as it's served. The texture is great but I'm going to dispose of this batch and try again without.
