    I've been watching Reply 1988 on Netflix and the families eat the whole sweet potato as a snack on the show. I was so curious to learn more about it, and this video gave me exactly the insight I was looking for! Excited to try the roasted version with kimchi for breakfast.     I work with 45 Korean, and they have me hooked on kimchi, goguma, gaji namul (eggplant with garlic and sesame seeds), bulgogi, kimchi jjigae, and you name it. I am truly in love with Korean cuisine, and the good thing is that I am learning how to cook it myself. Yes, roasted sweet potato is one of my favorites and when you mentioned you had it with your coffee in the morning, that's how I was introduced to it too. But never thought you can eat it raw with hummus, which I like a lot. Thank you for sharing. PS, I just have to say your son is adorable.

    Thanks so much for making this video - I watch a lot of Korean variety shows and have often seen folks who are picnicking or camping and enjoying a steaming hot yam (what? no sauce? no butter?!). I rarely cook, but thanks to you, I'm enjoying these myself now for breakfast almost everyday and totally understand why they are called "comfort food".

They are also great in the morning with coffee. I roast a few at a time and store them in the refrigerator in an airtight container (after it cools down to room temperature). Cut into thick slice and reheat in the toaster oven. It comes out tasting so great!     I'll try these recipes!. I tried them baked on air fryer and they taste good! But my sweet potatoes are purple, I'll try to find the normal ones like the ones on your video!

      Hi Maria👋. Thank you 🙏. If u go to any Asian supermarket, usually u can find theses Korean sweet potatoes. If u go WholeFoods and other giant supermarkets, these are often labeled as Japanese sweet potatoes 🍠

    I would love to make a large batch roasted potatoes to eat on the go! :) how do you store them and how long are they good for after roasting in the oven?

      Hi Deanna! Thanks for your comment. In general, I try to consume the roasted sweet potatoes within a few days of roasting. Once the potatoes have come to room temperature, wrap it up securely using saran wrap, storage bag and/or an air-lock container, and place in the refrigerator. I like to heat up my cold potatoes in the toaster oven. I cut the potato in half and place it in the toaster oven on high setting for about 5 minutes. It leaves a nice golden crust on the flesh of the potato and sort of creates a natural sugary crust...SUPER YUM! This is my breakfast to have with coffee! If haven't seen it yet, I have a video on How To Make A Single Cup Of Coffee Using The Aeropress. Also, I just released a video recipe on Misugaru (Korean multigrain superfood protein powder shakes).     I love korean sweet potatoes. I had no idea that they can be eaten raw......why is that? I wish there where more dishes to be made besides desert, however love it with kimchi myself.

      Hi @AngelikaKing 👋 I know, I 😍LUV🥰 Korean sweet potatoes! Another way I also enjoy them is adding big chunks of sweet potatoes and regular potatoes when I make Korean rice. Once the rice and potatoes are cooked, you can drizzle some soy sauce, sesame oil, toasted seaweed, gochujang, kimchi, lettuce, and some soy-bean sprouts side dish. Mix it all up...and OMG....so yummy😋🤤😋 My grandmother used to make rice cooked with potatoes all the time for me.     Hello! The potatoes I bought are pretty large. Would it be the same if I cut it in half then put it in the oven?

      Hi @Paechio. Great question! If you split the potato, it will come out less moist and sugary/sweet. The skin of the potato acts as an insulation, keeping the moisture contained within, creating that moist taste and caramelizing its natural juices inside. BUT, if you cut it in half and bake it, I think you'll still enjoy it. For me, I usually bake 3 to 4 potatoes at a time. Once it cools down to room temperature, I store them in an air-tight container and store it in the refrigerator. I split it in half and heat it up in the toaster, and enjoy it with my coffee.     How were they placed in the oven? Covered? Bare? With anything moist or water etc?

      Hi 👋 @traderjoes. These 🍠 are roasted in the oven, uncovered, and placed on the middle shelf of the oven. These sweet potatoes do not need water or foil wrapping. The skin of the potato insulates the moisture within. Here is my written recipe blog which also includes the steaming method.
