I don’t think the maesters in the show forge their own chains, nor do the chains in the show appear to be of different types of metals. He’s definitely a book reader, he just didn’t pay close attention.

If anything, Samwell will relearn the secrets to forge it from scratch and him and Gendry will make new "valyrian steel" weapons. Dragon glass, the fire from a dragon, magic, all of these things are needed to make the valyrian steel. It'll come to a head at some point and they'll start making it again.
