Thank you for the recipes. I used your rotti recipe as inspiration to make a low carb version of the same! Used almond pulp(left over from straining almond milk), almond flour, flaxmeal and cooked chickpeas along with the veggies and spices, some crushed peanuts for crunch. Turned out very soft and tasty!
Good idea, but don't use baking paper, as it is made of chemicals and is very dangerous while it comes in contact with heated tawa while transferring onto the pan. This offsets the goodness of the recipe. Instead banana leaf or wet cotton cloth can be used..
I am fascinated by the roti (thann dosa, as I don;t want to add more fat to my diet); God bless you. You are a creative genius. Please try and create muffins using jowar and ragi, I really want to go in that direction too. Meanwhile, here: did you rest the dough for the roti, or made it within an hour? What I also mean is, can you make the dough and keep it for a day or half a day?

You can make soft or crispy depends on how long you cook. For soft cook 1 minute. For Crispy cook 2-3 minutes long😊
