    Indigo (love your name), you are such a wonderful presenter and teacher--your talents far exceed just being able to whip up so many meals with Instant Pots! You remind me of my college professors (the good ones) whose teaching styles I admired. I'm 57, by the way, so thank you for teaching an "old dog new tricks." Your teaching videos brighten my day and encourage me to try this newer way of cooking. I bought the 3qt for our tiny RV, but I now use it at home year-round and am thinking of adding a 6 qt. Best always and keep doing what you do, "Chef!" 🙂

    I love my mini IP which I've had for several years. Just a note. The instructions that came with the mini call for 1 cup minimum just like the 6 qt. 1.5 cups is called for the 8 qt. As I mostly make soups, I have never had the problem with not enough liquid.

      Henry Ortega that’s what I make in my Mini! Then I put the finished yogurt after it’s been chilled in the fridge into a Greek yogurt strainer. I make it with whole milk and it’s so thick it really doesn’t need to be strained. It makes just the right amount!

    This could explain why it took longer for my navy beans for Boston Baked Beans to get to the proper texture (softness) when I made it in my mini. I was not aware that the recipe is designed for a bigger pot with higher pressure. According to the recipe book that came with the mini the navy beans from dry to finished softness should have taken no more than 25 minutes, and I thought that was really fast even for pressure cooking as it can take hours in the oven. Needless to say, when I opened the I.P. the beans were still fairly hard. Ultimately it took about one hour and ten minutes total for the beans to be the right softness.
    Still, even at one hour, that's far faster than the traditional way of baking them.
    You would think that the company would have a different version of the cook chart and amounts for the recipes in the book specifically for the mini rather than the default 6qt size recipes and times. :-/
    I just recently got a 6qt I.P., I hope the cooking charts in the recipe book work out better. Though, my pasta dish came out perfect in the mini using the book that came with it.
    I did find I had to remove half the beans from the mini because they were getting too close to the max line as they swelled up and I didn't want to risk starch and other stuff getting in the valve. So I had to cook the Boston "Baked" Beans in 2 batches.
    OH! And I bought the same steamer pot that you did for my new 6qt. I also want to get the silicone trivet with handles on it (no foil slings for me) and I want to get a spring form pan eventually to make cheese cakes in. I have never made a cheese cake before in any fashion.
    I have also had great success making hard boiled eggs in the mini using your tutorial! I made 8 eggs and they ALL peeled just fine! I have never had that many eggs peel nicely in a batch. Some will peel fine, some get mangled and everything in between. Pressure cooking eggs is the way to go. Though I did get a few yolks with some green on them, but nothing horrible.
    They were farm fresh eggs too, from a friend's farm.

    Lots of information. Thank you! I have very limited countertop space and would like to get a 3 quart instant pot. How much dried beans or rice do you put in the pot for two people? 8 ounces of dried beans? I think that would require 3 cups of water which might be too much water. One cup of rice? That would probably work with one and a half cups of liquid right? I’ll help is gratefully appreciate it.

    • @IndigoNili
      @IndigoNili  3 года назад +2

      I have done as much as 3 cups of rice in my mini. I do a 1 to 1 ratio of rice to water so 3 cups of water. For beans, 8 ounces is no problem. :)

    I’m new to instant pot cooking! My son let me borrow his 6 qt pot & accessories to try it out before buying one. I’m a single retiree and I’m on keto & IF woe so looking for easy ways to cook real food!
    I just got my 3 qt IP yesterday.
    The instructions say to use only accessories that were made for the IP.
    Question.... Can I use my existing metal & glass cake pans, ramekins, steam basket, etc? Or do I need to purchase their products?
    I do have a glass lid and the steamer basket on order, but don’t see a reason to buy anything else.
    Thoughts?
    Experiences?

    It's very helpful info, thanks, I'm looking into these pots and the mini sounds reasonably sized. However I could give out large forced labour sentences to whoever invented measurement units like cup, or quart. The wikipedia definition that explains traditional cup, metric cup, legal cup and the conversion tables (like 1 gallon equals 15.772549 legal cups) is just comical and really sad at the same time.

    • @IndigoNili

      The multi-grain button cooks just the same as the pressure cook button so no worries there! I usually do a 22 minute cook time for brown rice with at least a 10 minute natural pressure release

    • @r.severn7479

      It's determined by the food. Meats, generally NPR at least 10 minutes then QR the remainder. It is supposed to retain moistness in the meat. Some other foods, they QR immediately to stop the cooking process, since the food is still cooking while NPR, until the pin drops. Meat, always NPR. Poultry, I usually NPR. Pick reputable recipes and follow the directions is your best bet. Probably some blogger has written some guidelines for which release to use.

    I recently purchased my Instant Pot, it’s a 3 qt mini. But my pressure pot takes up to 25 min, to get to pressure, I actually just bought it to cook beans, I put 2 cups w/ the max line of water only because I don’t like my beans dry. But my question is It’s there a possibility my Pot my be defective because many other videos I’ve seen talk about it should only take a maximum of 15 min, to hit pressure, specially a small Pot like mines should be faster. Thank You in advance.

    • @IndigoNili
      @IndigoNili  3 года назад

      It does take a lot longer to come to pressure if you have it filled to the max line. As a test try bringing it up to pressure with just one cup of water in the liner. If it takes more than 5 or 6 minutes then you might suspect a defective pot.

      "mini" is just another name for 3qt so the Duo Nova 3qt could also be called Duo Nova Mini. They have changed what extras they include and now just add the extra sealing ring as the bonus.
