Two tips- 1-wash your rice as it can contain arsenic along with other pesticides, and/or other impurites, while removing alot of unwanted starch, 2- use a fork to fluff or turn the rice so a mashed potato texture doesn't occur, I add tumeric, cumin, paprika, saffron, thai chili, as well as chili flakes to the spices and chicken broth. For a crunchier texture I chop sweet peppers, onion, celery, corn and red kidney beans! I sometimes brown mincemeat with spices, and add it to the cooked and finished Spanish/Mexican rice for variety! This is a rice recipe that has endless preferences to please many tastebuds, as it is very versatile! Good Cooking!

Thanks for the video. I will try this recipe in my dutch oven soon. At 15 minutes you checked the rice to make sure it wasn’t sticking to the bottom. How long after that did you add the veggies? How long did you cook the veggies with the rice?

The brown rice option is an easy switch but the cooking time will vary slightly. You will have to cook for a bit longer I would say 30mins more than you would when cooking with white rice. Going back to adding beans, I would suggest cooking the beans separately until almost done according to package direction or if it makes it easier fully cook them then mix in last minute. The reason why most people wash their rice is to get rid of the extra starch, not because it’s bad for you, but because that way it won’t get to mushy or make the broth starchy. But If you brown the rice in oil first you actually don’t have to worry about washing the rice.
What u just did is made ur own seasoning with that garlic and you just made ur own tomato sauce, my mom's been doing that too instead of adding that powder that you add for the noodles to give it flavor. This is the original seasoning to give flavor to your rice good job I see a lot of people trying to add some powder and letting it boil for flavor, witch is ok but I like the original and legendary Style

Good point and I've made this recipe for as long as I can remember I totally forgot. I will make sure to share more details and thank you for the pointers. As for frying the rice, its should be on medium heat for about 10 mins or until rice is a golden brown then add all the veggies and liquids. Then continue to cook for another 20-30 mins until rice fluffs and no liquid remains. All stove heating point varies so this is an estimate. I say this because my last stove medium heat was more of a high temp.

@@CookingwithLilia We use a steam pot. I think in US, it's similar to instant pot. We didn't cook rice with anything, just steam it until it's ready. The difference lies in it evaporate unnecessary water away which make rice less softer. We use rice as our primary supplement and dish(mean and vegetables) as mate (like coffee and coffee mate). Of course, we also have fried rice, I think much more like Mexican rice, but we fried steamed rice with some eggs and some vegetables. Kinda like yours from its appearance.
@panzhang totally understand now and yes actually I have seen that method which is also common in MiddleEastern cooking as well. Rice is delish so I am with you on that and have had it for breakfast at times with a fried egg and vegetables drizzled with seasame oil which was quiet tasty
