Excellent recipe. I am from India and we use cottage cheese a lot in our cuisine, specially in North India. Although I did not put parmesan cheese. But it was very tasty, I put lot of chilly flakes and capsicum instead of peas. It was melting in the mouth. Thanks for the wonderful recipe.
My Italian grandmother used cottage cheese in her amazing lasagna also hardboiled eggs slices with italian sausages cut in small slices and layerd them. It was the best.
Southern Italians have been doing this recipe with Ricotta Cheese, without the peas, for forever! It’s called Pasta Ricotta, and it pairs beautifully with whole wheat pasta and a nice salad! By the way, so much salt!
If you decide to try this dish just remember to spoon some ricotta cheese into a saucepan and heat very slowly by diluting with some milk… Do not bring this mixture to a boil because you curdle the ricotta cheese! Also, when you drain the pasta, put a little pasta water aside in case you have to moisten things a bit more. I prefer to garnish with Romano cheese, but either Romano or Parmesan is OK, according to your preference.

My dad made this similar while I was growing up but he caramelized diced onion in butter and added the cottage cheese as is to the cooked spaghetti with it.
I never thought to blend cottage cheese but that sounds amazing, I can think of a few things to use it in, it would probably be really good in tuna or chicken salad or as a substitute for cream cheese. I’m actually lactose intolerant and I found lactose free cottage cheese but not cream cheese, it could work.

As a self-certified cottage cheese lover, I immediately rushed to the kitchen after watching this video 😂 I went a bit overboard with the garlic (today was the day I found out that there is, indeed, such a thing as too much garlic), but it was delicious nonetheless! No, salt is good. We've been lied to, so go low carb and blood pressure will go down by half. You will have to add a lot of salt once you go low carb/keto, especially if you fast. The carbs turn into plaque. Also calcium supplements harden in the arteries. I've been keto for 10 years. Reversed diabetes. Your doctor knows nothing of this because if they don't follow the pharmaceutical industry's protocols, they can lose their license. Start doing your own homework. Read medical journal's and pubmed studies. Good luck.

Looked so delicious, that I just made this for dinner! Did anyone else have an issue with the sauce seizing up? I used regular (4%) cottage cheese, blended smooth, for the sauce. It sort of “curdled”, and never became creamy. Perhaps the pasta was too hot?? I added it just as soon as it was drained; as in the video.

I think roasted garlic in this would be delicious. I suggest adding just a clove or two, processing them into the sauce, then giving it a taste. If you think it needs more, trust your palate and go for it! I hope you enjoy!

Hi there! Since this sauce is pureed and isn't cooked (it is warmed simply by the heat of the cooked pasta), the cottage cheese stays creamy, not stringy at all. I do recommend using a regular curd (not small curd, which sometimes has less liquid). I hope this helps, and please keep me posted!

I only had small curd which was why I was looking to make a recipe, so even that worked out well. Only used about 1/4 cup pasta water. However, do not do as I did...4 fat cloves of garlic in 10oz of cottage cheese turned out to be a bit much and I love garlic. Overall, this is a great recipe and highly recommended!!

I make it with zoodles - spiralised zucchini or courgette noodles. Just add them into the sauce to warm through. No need to cook it first.
