This a delicious recipe with the classic Italian flavor of traditional alfredo but with half the calories and double the nutrition. It's made with greek yogurt, parmesan cheese, fresh garlic, and Italian herbs to be anti-inflammatory and easily digestible. This sauce only takes about 10 minutes to make and will become a staple in your healthy kitchen as it is in mine!

Thanks Nicole , Just what I was looking for .I went to Aldi’s today to get some Alfredo sauce small jar and 390 mg Sodium . I start every morning with bowl of non fat plain Greek yogurt and blueberries So I have plenty of Greek yogurt on hand .
Fantastic! Just be careful not to overheat the greek yogurt while warming up the sauce. If it comes to a boil, it can coddle and change it's texture. Just warm it on low until the cheese melts :)

I don’t like Greek yogurt, I find it tastes doughy, but I’ll try this with regular plain yogurt. Cheers!
I haven't tried this with regular yogurt. Your sauce may be thinner. But I'm sure it will still taste delicious :) Let me know how it turns out!
How many servings? Have all the ingredients and winging the herbs + salt, kept it at a cup of parm and greek yogurt. Gonna give it a go now!😊

I have safely stored mine for a week in the fridge in an air-tight container :)
Idk why but my sauce turned chunky. I didn't add butter to it, is that why it turned chunky?
The Greek yogurt most likely became overheated, and it curdled. The heat needs to remain on low just until all the ingredients are melted :)

Garlic really bothers my tummy. Would this be good without it? Any other alternative flavors that you think would work with this recipe? I need a white sauce with no garlic or onion, (or tomato’s - hence a “white” sauce), but I can use garlic infused oil. Thank you!
I'm sorry you are sensitive to fresh garlic. Can you tolerate garlic powder? You could add a little of that. I think it will still taste delicious without the garlic. Maybe increase the Italian seasoning slightly. You can always taste and adjust it as needed. Just be sure to not bring it to a boil after adding the greek yogurt or the sauce could curdle on you. It only has to be warm enough to melt the added cheese :)
Why did mine become curds?
It's most likely because you allowed it to come to a boil :) It's important to keep the heat on low and warm it just until the cheese melts.

I know...right?! I hope you enjoy it! Be sure you don't let the sauce come to a boil once you add the greek yogurt or the sauce could curdle. It only needs to heat on low to melt the cheese :) Let me know how it turns out.
So I tried this and I did not like the tangy taste of the greek yogurt... I like regular alfredo too much I guess :( I just wanted to be healthier
I'm sorry you didn't care for the tangy taste of the greek yogurt. I know regular alfredo is super yummy! You could try substituting half of the yogurt for heavy cream, which would still give you some health benefits. You could also replace the yogurt with cottage cheese. It has less tang and more of a cheese flavor. You would want to blend the cottage first to remove the curdled texture. And you might need to add more milk to thin it out a little.
@@gentletummy Yes just needs to add a little more fat to the sauce. Either an extra knob of butter or cream will do
Tried this recipe twice and both times the sauce clumped up when I added it to the pasta even with the milk. I’m hopeless
Hi Jason, I'm so sorry that happened. The Greek yogurt can curdle if the heat is too high in the saucepan. You only need to warm the sauce enough to melt the cheese. I appreciate you bringing this up. I just read through my recipe and I don't think I made this clear. I will revise it :)

Oh, no! It's likely the greek yogurt became overheated and curdled. Once the Greek yogurt is added, keep the heat on low/medium just until the cheese melts. Then, you can remove it from the heat. I appreciate you trying the recipe and sharing your feedback :) Another viewer recently had the same outcome. They tried again with this tip, and it turned out great.
The introduction info, while useful, is not necessary. The people who come to your channel already kinda know how damage a real Alfredo sauce can be 😂. That is why they look for a "healthy" version.
